BEEF STIR-FRY

Steps:
- Season the steak with salt and pepper. In a medium bowl, whisk together the soy sauce, chile pepper, sugar and lime juice until the sugar is dissolved. Add the beef, toss to coat and set aside.
- In a large skillet over medium-high heat, heat the oil until shimmering, about 1 minute. Add the beef and cook, stirring, until cooked through, 3 to 5 minutes.
- Remove the beef from the skillet and set aside. Allow the liquid in the pan to reduce until thickened, about 4 minutes. Add the garlic and scallions and cook 1 minute more. Add the mushrooms and cook for 2 to 3 minutes more. Add the snow peas, baby corn and bell pepper and continue cooking until all the vegetables are crisp-tender, about 2 minutes. Return the beef to the skillet and toss to combine.

- In a large skillet over medium-high heat, heat the oil until shimmering, about 1 minute. Then add the beef and cook, stirring, until cooked through, 3 to 5 minutes.
- Remove the beef from the skillet and set aside. Allow the liquid in the skillet to reduce until thickened, about 4 minutes. Add the mushrooms, spring onions and asparagus and cook until all the vegetables are tender-crisp, 5 to 7 minutes. Return the beef to the skillet and toss to combine.

- Heat vegetable oil in a large wok or skillet over medium-high heat; cook and stir beef until browned, 3 to 4 minutes. Move beef to the side of the wok and add broccoli, bell pepper, carrots, green onion, and garlic to the center of the wok. Cook and stir vegetables for 2 minutes.
- Stir beef into vegetables and season with soy sauce and sesame seeds. Continue to cook and stir until vegetables are tender, about 2 more minutes.

- In a large bowl, combine cornstarch and 2 tablespoons soy sauce until smooth. Add beef; stir to coat. , In a large skillet or wok, stir-fry the green peppers and onions in oil for 3 minutes; add beef. Cook and stir for 3 minutes. Add mushrooms. - SLICE meat thinly across the grain. Heat 1 tablespoons oil in large nonstick skillet or wok over high heat. Stir-fry beef in batches until browned, about 10 minute Remove from skillet.
- STIR-FRY vegetables, ginger and garlic in remaining 1 tablespoons oil for 3 to 5 minute until vegetables are crisp-tender. Return beef to skillet.
- STIR in gravy and Worcestershire. Cook until sauce thickens slightly and flavors are blended. Serve over cooked rice, if desired.

- 1) Combine vegetables and water in large nonstick skillet; cover and cook over medium-high heat 4 minutes or until crisp-tender. Remove and drain vegetables. Set aside. 2) Meanwhile cut beef steaks into 1/4-inch thick strips. 3) Heat same skillet over medium-high heat until hot. Add 1/2 of beef and 1/2 of garlic; stir-fry 1 to 2 minutes or until outside surface of beef is no longer pink. Remove from skillet; keep warm. Repeat with remaining beef and garlic. 4) Return all beef and vegetables to skillet. Add stir-fry sauce and red pepper; cook and stir 1 to 2 minutes or until heated through. Spoon over rice. Sprinkle with peanuts.
ZESTY STIR-FRIED BEEF STRIPS
This recipe, served with peaches, is a little bit different. It is one of my husband's favourites. You can add red pepper flakes to taste, according to how spicy you like your food.

- Slice beef into thin strips (this is easiest if the beef is partly frozen).
- Sprinkle the beef with the sugar and let sit for at least 30 minutes.
- Combine the rest of the ingredients, except for the peaches and add to beef.
- Mix well.
- Heat a wok or fry pan and add a small amount of oil, unless using a no-stick pan, in which case you can fry without oil.
- Make sure your pan (and oil, if using) are very hot.
- Stir fry in small batches so that it browns and the meat retains the juices.
- Serve the peaches cold alongside or add them briefly at the end to heat them up.
