Steps:
- Preheat the oven to 425 degrees F (220 degrees C).
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower; cover, and steam until tender, 8 to 10 minutes. Drain and let cool 10 minutes.
- Combine mozzarella cheese, sour cream, mayonnaise, 1/2 the bacon bits, and chives in a large bowl. Add cauliflower; mix well. Pour mixture into a baking dish. Sprinkle remaining bacon bits and Cheddar cheese on top.
- Bake in the preheated oven until cheese is melted and golden brown, 15 to 20 minutes.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with cooking spray.
- Place cauliflower in a microwave-safe bowl with 1/2 cup water. Microwave until tender-crisp, about 5 minutes. Drain and transfer to the prepared baking dish.
- Whisk egg and flour together in a bowl. Add milk, salt, and pepper. Pour over cauliflower florets. Sprinkle Cheddar cheese and paprika on top.
- Bake in the preheated oven until cheese is melted and cauliflower is soft, 30 to 40 minutes.

CAULIFLOWER CHEESE PIE
Steps:
- Preheat the oven to 400 degrees F. Generously oil a 9-inch pie pan.
- Potato Crust: Place 2 firmly packed cups grated raw potatoes in a colander placed over a bowl; toss the potatoes with 1/2 teaspoon salt and set aside for 10 minutes. Squeeze out the excess water. Combine the drained potatoes, 1 large egg, beaten, and 1/4 cup grated onion in a medium bowl. Pat the potato mixture into the oiled pie pan, building up the sides of the crust with lightly floured fingers. Bake for 35 to 40 minutes, until golden brown, brushing the crust with oil after the first 20 minutes to crisp it.
- Remove crust from the oven and reduce the temperature to 350 degrees F.
- Meanwhile, beat together the eggs, milk, 1/2 teaspoon of the salt, and the pepper in a small bowl; set aside.
- Blanch cauliflower. Melt the butter in a large skillet over medium heat. Add the cauliflower, onions, garlic, and 1/4 to 1/2 teaspoon of the remaining salt; cook, stirring frequently, until lightly browned, about 5 minutes. Add the parsley, basil, and thyme; cook, covered, for 10 minutes, stirring occasionally. Remove from the heat.
- Layer the baked potato crust with 1/2 of the cheese, then the cauliflower mixture, then the remaining cheese. Pour the milk mixture over the top and lightly dust with paprika. Bake for 35 to 40 minutes, until set. Remove from the oven and serve.
ZIPPY CHEESE CAULIFLOWER
My university roommate thought I was insane when I told her this was my favourite way to eat cauliflower, but she tried it and started making it this way herself, too. Quantities of everything (including the cauliflower itself) are all sort of approximate, and can be varied to suit your taste/appetite.

- Steam the cauliflower until just slightly underdone.
- While the cauliflower is cooking, mix the mayonnaise and mustard together.
- When the cauliflower is done, transfer it to a microwave-safe dish and spread the mustard-mayonnaise over it.
- Cover with cheese.
- Microwave for 2-3 minutes, until the cheese melts.
- Or, if whatever else you're cooking isn't done yet, you can just cover the cauliflower and lets its heat melt the cheese until you're ready to serve.
CAULIFLOWER WITH CHEESE SAUCE
This is an easy recipe for cauliflower cheese but it's pretty versatile. You can use the cheese sauce with any vegetables you have handy. I often put a layer of cooked kale or broccoli on the bottom, then arrange the cooked cauliflower florets on top. You can change the flavor of the sauce by adding different cheeses you might have in your fridge. It takes a bit of elbow work to make the sauce but it's worth it. This is delicious served with roast beef or lamb.

- Preheat oven to 425 degrees F (220 degrees C).
- Place cauliflower in a large pot and pour in enough water to cover; bring to a boil and cook until tender yet firm to the bite, 8 to 10 minutes. Drain and transfer to a baking dish.
- Melt butter in a small saucepan over low heat. Add flour and mix using a whisk or wooden spoon until smooth and mixture pulls away from the side of the saucepan, 2 to 3 minutes. Pour in milk, a little at a time, and whisk continuously until sauce is thickened but still pourable, 3 to 4 minutes.
- Stir Parmesan cheese into sauce until melted; season with salt and pepper. Pour sauce over all of the cauliflower. Sprinkle Cheddar cheese over the top.
- Bake in the preheated oven until cheese is golden brown, 20 to 25 minutes.

- Preheat oven to 350F.
- Steam cauliflower just until tender; drain.
- Melt margarine in a medium size saucepan over medium heat.
- In a jar with a lid combine flour, red pepper, salt, pepper, and milk; shake until blended.
- Slowly add to margarine in saucepan, stirring constantly until smooth.
- Add cheese and continue stirring until smooth and slightly thickened.
- Stir in chilies.

- Spray cookie sheet with olive oil.

This is a delightful way to eat cauliflower. I got this recipe at a Farmer's Market, too many years to say. I make it for a good vegetarian meal.

- Crust:.
- Set the freshly-grated potatoes in a colander over a bowl. Salt it and leave it for 10 minutes. Then squeeze out the excess water, and add to the remaining ingredients.
- Pat it into a well-oiled 9-inch pie pan, building up the sides of the crust with lightly floured fingers.
- Bake at 400 degrees for 40-50 minutes, until browned.
- After the first 30 minutes, brush the crust with a little oil to crispen it.
- Turn oven down to 375 degrees.
- Filling:.
- Saute onions and garlic in butter for 5 minutes; add the basil and cauliflower and cook, covered, 10 minutes, stirring occasionaly.
- Spread 1/2 the cheese into the baked crust, then the saute, then the rest of the cheese.
- Beat the eggs and the milk together and pour over the vegetables.
- Bake at 375 degrees for 35-40 minutes until set.

- Pre-heat oven to 375F. Grease a 24 cup mini muffin tin with oil and set aside (you can also use a 12 cup standard muffin tin).
- Place cauliflower florets in a microwave safe bowl and cover with plastic wrap. microwave for 7-8 minutes or until cauliflower is tender. This step can also be achieved on the stove top by blanching cauliflower in hot water for 5 minutes. Be sure to drain well.
- Place steamed cauliflower in a food processor and plus for just a few seconds or until the cauliflower resembles rice. Remove from food processor, place in a clean dishcloth and squeeze to drain as much water as you can out of the cauliflower.
- Place cauliflower in a large bowl, add egg, cheddar cheese, herbs, and salt & pepper. Mix with a spoon until fully combined. Scoop a tablespoon of the mixture into each muffin tin using a cook scoop or by hand.
