ZUCCHINI FRITTERS
One day I wanted to serve zucchini as a side dish-but I didn't have the time to slice and deep-fry it. So I came up with these fritters instead! They go especially well with barbecued ribs or pork chops and corn on the cob. I'm an avid recipe clipper. - In a deep cast-iron skillet or deep-fat fryer, heat oil to 375°. , Meanwhile, combine milk and egg in a bowl. Stir together dry ingredients and add to egg mixture; blend well. Fold in zucchini. Drop batter by rounded teaspoonfuls into hot oil. Fry until deep golden brown, turning once. Drain thoroughly on paper towels. If desired, serve with ranch dressing.

- Season the shrimp lightly with the Essence and set aside.
- In a medium skillet, melt the butter over medium-high heat.
- Add the onions and cook, stirring, until soft, 2-3 minutes.
- Add the shrimp and pinch of salt and cook, stirring, until the shrimp turn pink, 2-3 minutes.
- Set aside to cool.
- In a large pot or deep-fryer, heat the oil to 360°F.
- In a large bowl, make the batter by whisking the eggs, milk, baking powder, salt and cayenne.
- Add the flour 1/4 of a cup at a time, beating and incorporating until all is used and the batter is smooth.
- Stir in the parsley.
- Add the shrimp mixture and grated zucchini to the batter and fold to mix.
- Using a small ice cream scoop or a tablespoon measuring 1-1/2 tablespoons, drop the batter into the hot oil.
- When the fritters pop to the surface, roll them around with a slotted spoon in the oil to brown them on all side, about 3 minutes.
- Drain on paper towels and season with additional Essence.
- Serve hot.
ZUCCHINI FRITTERS
Salting the grated zucchini helps draw out the excess moisture before squeezing it dry - this step is the trick that keeps these golden brown fritters from becoming soggy.

- Grate the zucchini into a colander in the sink; toss with 2 teaspoons salt. Let sit for 10 minutes, then squeeze out the liquid.
- In a bowl, stir to combine the zucchini, scallions, parsley, dill, egg, Parmesan and flour.
- Heat a thin layer of olive oil in a pan over medium to medium-high heat. Drop spoonfuls of the zucchini batter into the skillet and pan-fry, flattening with a spatula, until golden-brown in spots, 3 to 4 minutes per side. Drain on paper towels and season with salt.

CRUNCHY SHRIMP FRITTERS
To make these super-tasty and summer-y fritters, juicy shrimp are poached in lemon water and then coated in a batter made with rice flour before being deep fried to golden brown perfection. The rice flour ensures an ultra-crisp coating with a side benefit of making this dish naturally gluten-free!

- Grate 1 teaspoon zest from lemon, then cut in half. Place both halves and 4 cups water in a saucepan; bring to a boil and add 1 tablespoon salt. Add shrimp; return to a boil, then reduce heat and simmer until just cooked through, about 1 minute. Drain; let cool 15 minutes. Peel and cut into a 1/4-inch dice (about 1 1/2 cups).
- Heat 1 1/2 inches oil in a medium heavy-bottomed pot over medium until a deep-fry thermometer reads 350°F. Whisk together flour, baking powder, sugar, 1 teaspoon salt, and lemon zest. Whisk seltzer and egg into dry ingredients. (Batter should have the consistency of thick honey. If too thick, add more seltzer; if too thin, add 1 tablespoon rice flour.) Stir in shrimp.
- Working in batches, and using two tablespoons (one to scoop, one to scrape), drop batter in oil. Fry, turning occasionally, until cooked through and golden brown, 3 to 4 minutes, adjusting heat as needed to keep oil between 340° and 350°. Transfer to a paper-towel-lined baking sheet; sprinkle with salt. Serve immediately with tartar sauce and lemon wedges and zest.
ZUCCHINI PARMESAN FRITTERS RECIPE BY TASTY

- In a saucepan over medium high heat add zucchini and water. Let steam for 5 minutes, or until slightly tender.
- Drain the zucchini and let cool in a medium mixing bowl.
- Once cool add Parmesan cheese, egg, flour, minced garlic, salt, and lemon to a bowl and mix until the mixture has a semi-creamy texture.
- Place a large pan over medium-high heat and add vegetable oil.
- Use a spoon to scoop out medium dollops of mixture and place it in the pan. Let cook on each side for about 3 minutes, or until golden brown.
- Remove from pan and place on paper towel to absorb excess oil.

- Start by squeezing as much water as you can out of the zucchinis. The easiest way to do this is to place the grated zucchinis in the middle of a clean dish towel, fold the top and bottom flaps over the zucchini then twist both ends to form a little bundle, then twist and squeeze the bejesus out of that bundle until no more liquid comes out.
- Add the squeezed zucchini to a mixing bowl, along with the rest of the ingredients and mix delicately until all the ingredients are evenly combined.
- Heat a splash of coconut oil or avocado oil in a frying pan set over medium heat and, when oil is nice and hot, add a generous 1/4 cup of mixture for each fritter. Slightly flatten and help shape them delicately with a fork, if necessary.
- Cook 3 or 4 fritters at a time for 2-3 minutes on each side, until they form a nice golden brown crust. Add more oil as necessary.

- Spread grated zucchini out on a clean kitchen towel (preferably NOT a paper towel, as they are too fragile) with a pinch of salt sprinkled on top. Allow to sit for 5 minutes for liquid to be released.
