BAKED ZUCCHINI STICKS & SWEET ONION DIP

Oh my gosh! Want to make a big hit at your next party or family gathering. Try these. Got this recipe from my daughter. What a great way to have Zucchini for a snack or side dish. I tried these today and they are great. I called my neighbor to come and enjoy them with me. She loved them. You can be sure I will make these again....

Baked Zucchini Sticks & Sweet Onion Dip image

Steps:

  • 1. Preheat oven to 425.
  • 2. Melt butter in a frying pan over medium heat and add sliced onions.
  • 3. Cook stirring occasionally until the onions are soften and caramelized.
  • 4. Remove onions from the heat and add vinegar.
  • 5. Place the onions and vinegar into a food processor.
  • 6. Add the honey and mustard, and process until smooth.
  • 7. Add mayonnaise and salt and pepper to taste, process to combine all together.
  • 8. Makes 1 1/2 cups of dip.
  • 9. Pour mixture into a bowl, cover and refrigerate until ready to serve.
  • 10. Cut your zucchini into 3 inch sticks and place them in a colander over a bowl and sprinkle on 1 tablespoon of salt.
  • 11. Let zucchini drain for an hour or longer; rince and pat dry with papper towels.
  • 12. Combine bread crumbs, parmesan cheese and seasoning of choice and set aside.
  • 13. Line a baking sheet with parchment paper or non-stick foil and spray it with olive oil.
  • 14. Dredge sticks a few at a time in the egg, then roll in brumb mixture.
  • 15. Place on prepared baking sheet.
  • 16. Place in pre-heated oven and bake for 12 minutes and turn over and bake for an addition 8 minutes or until brown and crisp.
  • 17. Remove from oven and serve immediately with the sweet onion dip.

dip:
1 Tbsp butter
1 medium onion, peeled and sliced
2 Tbsp apple cider vinegar
2 Tbsp honey
1 Tbsp prepared mustard
1 c mayonnaise
salt and pepper to taste
zucchini sticks:
3 medium zucchini, unpeeled, cut int 3 inch long sticks
1 Tbsp salt
1 c of your favorite bread crumbs
1/2 c parmesan cheese
1 Tbsp mixed italian herbs or pizza seasoning mix
1/2 c egg substitute, or 3 egg whites or 2 large eggs, lightly beaten

A surprisingly delightful dip for any occasion. Zucchini is spiced up with a bit of garlic and oregano to create a creamy and delicious dip. This has been a hit every time I've made it! Serve with vegetables, crackers, or bread.

The Best Zucchini Dip Ever image

Steps:

  • Place zucchini in a saucepan, and fill with enough water to cover. Bring to a boil, and cook until tender, about 5 minutes. Drain, and transfer to a food processor or blender. Process until smooth. Add the garlic, sugar, and oregano, and process until blended.
  • Transfer the pureed mixture to a serving bowl, and stir in the mayonnaise. Chill for at least 1 hour before serving.

  • Pulse tomatoes in a food processor several times or until coarsely chopped. You can also finely dice tomatoes by hand if you don't have a food processor.
  • Heat a large heavy bottomed pan over medium heat. Add finely chopped tomatoes, 2 pressed garlic cloves and 2 Tbsp chopped fresh basil. Simmer covered for 10 min, stirring occasionally and pressing on any larger tomato pieces to soften them. The mixture should look like a tomato sauce when done.
  • Cut off and discard ends of zucchini and shred zucchini on the large holes of a grater. I used the grater attachment on my food processor and it sure was quick! Add grated zucchini to the cooked tomatoes and stir to combine.
  • Increase heat to medium/high, cover with lid and cook for 20-23 minutes, stirring occasionally or until zucchini are fully softened.
