Steps:

  • Remove the ends of the zucchini and, if they are large, cut in half lengthwise. Slice the zucchini diagonally in 1/2-inch slices. Heat 2 tablespoons of olive oil in a large (12-inch) saute pan and add the onions. Cook for 10 minutes on medium-low heat, until they start to brown. Add half the zucchini, 1 teaspoon salt, and 1/4 teaspoon pepper to the pan and cook, tossing occasionally, for 10 to 15 minutes, until just cooked through. Sprinkle with Parmesan and cook for 30 seconds more. Remove to a serving platter and repeat with the rest of the zucchini. Serve immediately.
  • Note: If you cook too much zucchini in one pan, you end up steaming rather than sauteing it. I prefer to cook it in 2 batches.

8 medium zucchini
Good olive oil
2 large yellow onions cut in half and sliced 1/2 inch thick
Kosher salt
Freshly ground black pepper
1/2 cup freshly grated Parmesan cheese

  • Heat 2 tablespoons of olive oil in a large (12-inch) saute pan over medium heat. Add the pancetta and saute for 5 minutes, until it begins to brown. Add the leeks and saute for 5 minutes, until tender. Add the zucchini and thyme and saute for 5 to 6 minutes, stirring occasionally, until the zucchini is tender.
  • Meanwhile, in a large bowl, whisk together the eggs, half-and-half, 1 1/2 teaspoons salt and 1 teaspoon pepper. Stir in two-thirds of the Gruyere and the basil.
  • Pour the zucchini mixture in an even, well distributed layer into the prepared sheet pan. Pour the egg mixture over the top and sprinkle with the remaining Gruyere. Shake the pan to evenly distribute the egg mixture. Bake for 30 to 35 minutes until puffed and just set in the center. Allow to sit at room temperature for 5 minutes. Cut the frittata into 30 equal size squares, sprinkle with salt, garnish with the julienned basil and serve hot, warm or at room temperature.

12 extra-large eggs
3/4 cup half-and-half
Kosher salt and freshly ground black pepper

CREAM PASTA SAUCE WITH ZUCCHINI

This is AWESOME pasta sauce! Much different than alfredo-ish sauces, which I don't like. This one could be healthy, depending on which ingredients you use. I found the original version of this in a cookbook I received as a gift, but this is very different from that recipe.

Baked Pasta with Sausage and Zucchini image

Steps:

  • Preheat the oven to 350 degrees.
  • Bring a large pot of salted water to a boil.
  • Generously butter a 9x12-inch casserole pan and coat with half the bread crumbs.
  • Place the zucchini in a colander and sprinkle with the salt.
  • Cover with a plate (press down on the zucchini), weighted down with a heavy object.
  • The salt will draw the liquid from the zucchini; the plate will help squeeze it out.
  • Allow the zucchini to sit for about 20 minutes.
  • Place the onion, celery, carrot and pancetta or bacon in the bowl of a food processor and pulse until the mixture is chopped into tiny pieces.
  • In a large, deep sauté pan, heat 2 tablespoons of the oil over medium-high heat.
  • Add the vegetable-pancetta mixture and the garlic.
  • Sauté for 5 to 6 minutes.
  • Add the sausage, stirring to break it up further and cook for 4 to 6 minutes, until the sausage is cooked through.
  • Add the wine, scraping up any browned bits from the bottom of the pan and cook for 1 to 2 minutes.
  • Add the tomato sauce and broth.
  • Bring the sauce to a boil, reduce the heat, and simmer for 10 to 15 minutes.
  • You should have a thin rather than thick pasta sauce; you want it liquid, as the mixture will eventually bake.
  • Set the sauce aside, and cook the pasta in the boiling water according to the package directions.
  • Do not overcook; the pasta should hold its shape.
  • While the pasta is cooking, rinse the zucchini.
  • Wrap in a clean, dry kitchen towel and squeeze out all the moisture.
  • Heat 1 to 2 tablespoons of the remaining oil.
  • Add the zucchini, and over high heat, brown on all sides for 3 to 4 minutes.
  • Cook in two batches, adding more oil if necessary, if the zucchini pieces are too many for one pan.
  • They should be softened but not mushy.
  • Remove and set aside.
  • Drain the pasta, reserving 1/2 to 3/4 cup of the cooking water.
  • Remove 1 cup of the pasta sauce from its pan and warm the remainder.
  • Add the pasta and reserved pasta water to the sauce in the pan and toss well.
  • Add the zucchini and mozzarella and stir well.
  • Spoon the pasta mixture into the prepared casserole pan.
  • Pour the reserved sauce over the top and sprinkle with the remaining bread crumbs and the Romano.
  • Cover the casserole tightly with aluminum foil, and bake in the center of the oven for about 10 minutes, until warmed through.
  • Remove the foil, check that the mozzarella is melted and broil for 1 to 2 minutes to crisp the top before serving.

Steps:

  • 1. Bring a large pot of salted water to a boil for pasta. In a large skillet over medium heat, add the olive oil. When the oil is hot, add the pancetta and cook until the fat is rendered, about 4 minutes. Add the scallions and garlic and cook until the scallions are wilted, about 3 minutes.
  • 2. Add the linguine to the boiling water. Once the pasta is cooking, add the peas and zucchini to the skillet and season with salt and red pepper flakes. Toss until the zucchini begin to wilt, about 2 minutes. Ladle in 1 cup pasta water and simmer and reduce by half while the pasta cooks.
  • 3. When the pasta is al dente, remove it with a spider or small strainer and add directly to the sauce, along with the basil and parsley, reserving the pasta water. Toss to coat the pasta with the sauce, adding a splash of pasta water if the pasta seems dry. Remove the skillet from the heat, sprinkle with the grated Grana Padano, toss, and serve.

2 tablespoons extra-virgin olive oil
3 ounces pancetta, diced
1 cup chopped scallions
2 garlic cloves, thinly sliced
1 pound linguine
1 cup frozen peas
2 medium zucchini, peeled into ribbons (see headnote)
Kosher salt
Crushed red pepper flakes
1/2 cup fresh basil leaves, chopped
1/2 cup fresh Italian parsley leaves, chopped
1/2 cup freshly grated Grana Padano
