ZUCCHINI FRITTERS, LOW CARB

This is an excellent side dish for summer meals. It's also an excellent way to use zucchini from the garden.

Zucchini Fritters, Low Carb image

Steps:

  • Shred or grate zucchini . Using fine sieve, press shredded zucchini against sieve to remove as much moisture as possible. Alternately, squeeze handfuls of shredded zucchini to remove as much moisture as possible.
  • In a glass mixing bowl, soften cream cheese for about 15 seconds in the microwave oven. Add the Parmesan cheese & stir. Add one egg, stir vigorously to combine & then add the second egg and stir again.
  • To the egg mixture add the zucchini, scallions, garlic, salt, pepper, basil & cayenne. Stir until well combined. The mixture will be a bit "loose" because of the egg, but will come together when cooked.
  • Heat a well seasoned cast iron skillet over medium heat. Add the olive oil & butter. Using an ice cream scoop, portion the fritter mixture into the skillet. My pan is large enough for four small fritters at a time. Cover the skillet with a lid and allow to cook for a few minutes, until the bottom is golden brown.
  • Gently flip & cover with lid again for a couple of minutes until cooked through. Serve with sour cream.

Steps:

  • Mash chickpeas with a fork in a large bowl. Set aside.
  • Grate zucchini. Place in a clean dish towel or cloth.
  • Grate carrots. Place in a clean dish towel or cloth with zucchini.
  • Squeeze out as much moisture as possible.
  • Add veggies, panko, egg, basil, garlic powder, salt, and pepper to the bowl with the mashed chickpeas.
  • Stir until completely combined.
  • Heat olive oil in a large skillet on medium heat.
  • Scoop 2 tablespoons of mixture into your hand press to compress it into a patty.
  • Cook for about 1-2 minutes, until the underside is golden brown then flip and repeat.
  • Serve with a dollop of plain greek yogurt and diced green onion.

I heard about these faux noodles in a low-carb book, might have been Fran McCullough's Low Carb Recipes. I've seen the recipe in other sites but it wasn't posted here yet. This is so FUN once you get the process down. It took me about 4 times to feel quick at it, but I was making nice noodles after one practice zucchini. Thinly shaved zucchini strips with olive oil, salt & pepper - how perfect!

Steps:

  • Get out your best vegetable peeler (it must be SHARP).
  • "Peel" strips off the zucchini, going around the length of the veggie in an equal manner so that you make strips of equal length and thickness - you'll get the hang of it after one zucchini so have an extra available for practice.
  • After you have peeled a bowl full of strips, add olive oil and salt and pepper to taste. Don't add too much olive oil. Let the bowl sit out for 1 hour to "temper" the noodles, tossing once or twice (I like to toss with my hands, the zucchini strips feel silky and wonderful!)
  • Place in fridge after one hour until ready to use (will keep for one day).
  • I serve this with meatballs and sauce, plain, or with grated cheese. Some people actually boil these noodles briefly (blanche) but I prefer them raw.

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Cut zucchini into 3-inch lengths, then cut each piece into 9 fries. Place zucchini fries into a colander and sprinkle with salt. Let the zucchini pieces drain for at least 1 hour to remove excess liquid.
  • Beat eggs in a shallow bowl. Mix almonds, Parmesan cheese, and Italian seasoning in a second shallow bowl. Rinse salt off zucchini and pat dry with paper towels.
  • Dip each zucchini piece into beaten egg and roll in the almond coating. Place coated fries on prepared baking sheet.
