SIMPLE TURKEY CHILI
This is a very simple and hearty chili with plenty of flavor. It's even better the second day! I serve this with lowfat Cheddar cheese and lowfat sour cream. It's also delicious with crackers.

- Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and cook until tender.
- Pour water into the pot. Mix in tomatoes, kidney beans, and garlic. Season chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.

This is so easy and so tasty. Freezes great for meals later in the week. If you want it a little thinner add an extra can of tomato sauce. Also the green chiles are not hot but add a wonderful flavor, so don't be afraid of them.

- Cook and stir turkey in a large skillet until completely browned, 7 to 10 minutes; transfer to slow cooker.

THREE-BEAN TURKEY CHILI
This recipe from "Slow Cooker Recipes for All Occasions" is a good starting point for a great pot of chili. You may, as I did, substitute ground chicken for the turkey, and add whatever other seasonings you like - I myself added some garlic, cumin and oregano, which took this dish up an extra level.

Steps:
- Brown ground turkey and sausage. Drain grease.
- Add the rest of the ingredients EXCEPT the corn chips and cheese. Stir everything together then reduce heat and cover. Simmer over low heat for 2 hours, stirring occasionally.
- After two hours, taste and adjust seasonings. This recipe is not very spicy, if you would like spicier, add more cayenne, chili powder and hot pepper sauce. The longer this chili simmers, the better it tastes.
- Serve with corn chips and cheese.

Saute, stirring occasionally, until vegetables have softened and onion has turned translucent, about 10 minutes. Add the jalapeno and garlic and cook an additional 3 minutes,, stirring occasionally.

Brown on one side for about 1 minute (without breaking up the meat), then flip to the other side and brown an additional minute or two.
