HOMINY CASSEROLE

The cumin and canned chilies add a Southwestern taste to this comforting dish. Canned chilies are packed with a little liquid. Unless otherwise noted, use the liquid along with the chilies in your recipes.

Steps:

  • 1. In a small skillet, heat oil. Saute onion and garlic until tender.
  • 2. Place in a bowl; add sour cream, half of the cheese, milk, chilies and cumin. Add hominy; mix well.
  • 3. Pour into a greased 2 quart baking dish. Bake, uncovered, at 350 degrees for 30 minutes or until heated through. Sprinkle with remaining cheese. Serve immediately.

1 Tbsp vegetable oil
1 medium onion, chopped
1 garlic clove, minced
1 c sour cream
3/4 c shredded cheddar cheese, divided
1/4 c milk
1 can(s) (4-ozs.) chopped green chilies
1/4 tsp ground cumin
3 can(s) (15-ozs.) each golden hominy, drained

Steps:

  • Preheat oven to 350°F. Combine all ingredients, except cheese, and spoon into a lightly greased 8-inch square casserole dish. Sprinkle cheese evenly over the top. Cover with foil and bake 20 minutes. Remove foil and bake an additional 10 minutes, until golden and bubbly.

1 (8-ounce) carton low-fat sour cream
1 1/2 cups sharp Cheddar cheese, grated
6 bacon, cooked and crumbled (optional)

Steps:

  • Preheat the oven to 375 degrees F. Butter an 8- or 9-inch square baking pan.
  • In a large skillet, fry the bacon over medium-high heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. In the bacon fat, cook the onion and pepper until just starting to brown, 6 to 8 minutes. Stir in the hominy, half-and-half and hot sauce. When the mixture is bubbling, turn off the heat and stir in the bacon and some of the Cheddar and Monterey Jack, reserving some of the cheese for later. Taste and adjust the seasoning with salt, pepper and more hot sauce if needed.
  • Pour the mixture into the prepared pan and top with the remaining cheese and the breadcrumbs. Bake until the top is golden brown and the casserole is bubbling, about 20 minutes. Let rest for 15 minutes before serving.

One 30-ounce can hominy, drained and rinsed
3/4 cup half-and-half
Hot sauce, to taste
1/2 cup grated Cheddar
1/2 cup grated Monterey Jack cheese

1/2 cup breadcrumbs

My grandmother used to make this recipe. She got it from a ladies cookbook in Lubbock, Texas. My mom made it, and now I make it. It is a family favorite!

  • Mix all ingredients except the cheese.
  • Pour into 8 or 9" baking dish.
  • Sprinkle grated cheddar cheese on top.
  • Bake at 350 degrees for 25 minutes or until cheese is thoroughly melted and sides of casserole are bubbling.

Steps:

  • 1. Cut cheese into small cubes or grate the cheese for quicker melting time.
  • 2. Mix together drained hominy, partially drained mild green chilies, sour cream. Stir well.
  • 3. Add cheese. Pour all into a microwave safe bowl and heat for 5 minutes. Pull out of microwave, stir and if needed, put back into microwave for a few more minutes. Stir one more time before serving. Let it set for just a minute. Sometimes it is a tiny bit soupy but it will come together as it cools down.
  • 4. Optional: If you want, you can add a bit of cumin before microwaving. Enjoy!
