5 Minute Spice Cake In Microwave Recipes
5-MINUTE MICROWAVE NUTELLA® CAKE
As a poor starving college student, this recipe is one of my favorites. It is quick, cheap, and 1-portion size. I actually make about 6 servings of the dry ingredients ahead of time, then add the liquid later. The dry is about 11 tablespoons. A whipping cream or ice cream topping completes this heavenly dessert. Can substitute peanut butter for hazelnut spread, but cut the portion to 1 1/2 tablespoon. You can increase cocoa powder and hazelnut spread to 3 tablespoons each and substitute almond extract for vanilla if desired.

- Stir self-rising flour, sugar, egg, vegetable oil, milk, cocoa powder, chocolate-hazelnut spread, salt, and vanilla extract together in a large mug until batter is smooth.
- Cook in microwave oven on full power until the cake has risen in the mug and is set in the center, 1 1/2 to 2 1/2 minutes.

Easy fast cake that can be made in the microwave in approximately 12 minutes. My favorite combinations are: chocolate cake mix with cherry pie filling or yellow cake mix with apple pie filling ( I add a bit of cinnamon for flavor to this one.)

Steps:
- Mix the box of cake mix, eggs, pie filling and applesauce till moist. Use a microwave safe bundt pan or substitute a microwave safe bowl that has a microwave safe cup or cone placed in the middle of it (to mimic a bundt pan). Pour mixture into the bowl around the cup.
- Bake on high for 6 minutes 30 seconds, turn and bake for another 6 minutes 30 seconds on high. Remove from oven and cover bowl with a dish and let stand for 5 minutes (this finishes the cooking process).
- Turn cake over onto dish and remove cone (cup) for a delicious quick dessert. Good hot with vanilla ice cream or whipped topping.

Inspired by Recipe#361967, I experimented and made up this cake for the two of us. I did try it with twice as much baking soda and baking powder, reduced them both to 1/8 as the cake touched the microwave "ceiling" and started to curve down; tasted fine but sure looked bizaar. Think it needs these ingredients to get a cake texture. I doubt that this recipe can be reduced and work out. Thank you especially to debbwl and diner524 for trying to help me improve this recipe for two.

- Cool slightly.

- In a microwave-safe mug sprayed with nonstick spray, combine cake mix, club soda, egg substitute, sour cream, baking powder, and 1/8 tsp. cinnamon. Mix until uniform. Microwave for 1 minute and 45 seconds, or until set. Immediately run a knife along the edges to help separate the cake from the mug. Firmly place a plate over the mug, and flip so that the plate is on the bottom. Gently shake mug to release cake onto the plate. Let cool completely, about 15 minutes. In a small bowl, stir cream cheese with sweetener until smooth. Add Cool Whip, vanilla extract, and remaining 1/8 tsp. cinnamon. Stir until uniform. Spread cream cheese mixture onto cake, and devour!
