BABY FOOD PLUM CAKE
Everyone was baking this cake in the 70s! Virginia Schimmel, my senior English teacher, my inspiration for becoming an English teacher, and later my mentor at Woodham High School in Pensacola, gave it to me. Not only is it delicious, but it's very special because of the person who shared it with me. Photo:...

Steps:
- 1. Sift together flour, sugar, cinnamon, and cloves.
- 2. Add oil, vanilla, eggs, and plums. Beat until thoroughly mixed.
- 3. Pour batter into a greased Bundt pan. Bake at 350 for 45 minutes.
- 4. Icing: Mix the sifted confectioners' sugar and lemon. Just make a little more if this isn't enough icing to give as much flavor as you'd like.
- 5. SANDY'S NOTE": I've had a hard time finding baby food plums lately. Apples and Blueberries will probably work just as well. Just anything with a purple color, but I don't know how well prunes will do.

PLUM BREAD
This is called a bread, but tastes more like a cake. I make this mostly during the holidays. The spices in this cake just lend themselves to eggnog and Christmas smells. The recipe will make 1 bundt cake, 4 small loaves, or 2 medium loaves.

BABY PLUM PUREE
Buying baby food is as simple as picking the cans and containers off the grocery store shelf, but making it at home can be just as quick and easy. If the puree is too thick, you can thin it with breast milk, formula, or boiled water.

Steps:
- Simmer plums, covered, in a large saucepan with 1/4 cup water until tender, about 10 minutes. Transfer plums to a blender. Working in small batches, blend until smooth. Add up to 1/3 cup boiled and cooled water if needed. Pass mixture through a fine sieve for the smoothest texture. Fill 1/4-cup plastic containers or ice-cube trays with puree. Use same method for peaches, apricots, and other stone fruits.

- Select & Buy Plums. A ripe plum will smell sweet at the stem and give slightly when you squeeze it; the color can vary and isn't a good indicator of ripeness.
- Wash the Plums. Before you wash the fruit, make sure to wash your hands with warm water and soap so that you don't transfer any germs to the food you're working with.
- Boil & Peel the Plums. Bring water to a boil in a medium saucepan and then add plums to the water for about 45 seconds. Remove plums from boiling water with a slotted spoon and plunge them into an ice bath immediately.
- Pit & Slice the Plums. Slice the plum in half, lengthwise, working your way around the pit. Twist and pull the plum halves apart. Use a spoon to pry out the pit, or stick the blade of a sharp knife into the pit and twist until the pit pops out.
- Puree or Mash the Plums. Puree the plum slices in a food processor or blender until smooth. Add water as needed to reach desired consistency. For a chunkier plum puree, which is ideal for babies 10 months or older, mash it with a potato masher instead of pureeing it.
- Serve Plum Puree. The sweet, mild-flavored plum puree is delicious plain. To introduce your baby to new textures and flavors, mix the puree with other fruits, meat or poultry, oatmeal, or full-fat yogurt.
- Freeze Leftover Plum Puree. Cool plum puree and refrigerate leftovers in BPA-free containers for up to 3 days. Freeze leftovers for up to 3 months.
