Steps:

  • Preheat oven to 375 degrees.
  • Rinse the fillets and pat dry; set aside.
  • In a shallow bowl, whisk together the honey, mustard, and lemon juice.
  • In a separate shallow bowl, combine the bread crumbs with the thyme and add a few shakes of salt and pepper.
  • Dip each fillet into the honey-mustard sauce and then dredge it in the bread crumb mixture to coat both sides evenly.
  • Place the fillets in a sprayed or lightly oiled baking pan and bake, uncovered, for 20-30 minutes , or until thoroughly hot and tender.

  • Preheat the oven to 425 degrees F.
  • Line a sheet pan with parchment paper. (You can also use an ovenproof baking dish.) Place the fish fillets skin side down on the sheet pan. Sprinkle generously with salt and pepper.
  • Combine the creme fraiche, 2 mustards, shallots, capers, 1 teaspoon salt, and 1/2 teaspoon pepper in a small bowl. Steps:

  • Preheat the oven to 375˚. Line a baking sheet with foil and lightly coat with cooking spray. Lay the salmon skin-side down on top. Set aside.
  • Combine the mayonnaise, mustard, honey, chives and a pinch each of salt and white pepper in a medium bowl and stir to thoroughly combine. Remove half of the sauce to a separate bowl and set aside for serving. Season the salmon with salt and white pepper and spoon the remaining sauce over the fish, spreading it evenly all over the top and sides of each fillet.
  • Roast just until the fish is opaque in the center, about 7 minutes. Switch to the broiler setting. Broil the fish until browning in spots, 6 to 8 minutes. (Keep your eye on it to avoid burning.) Garnish with chives and serve with the reserved sauce.

  • Preheat oven to 425°.
  • Using your fingers, coat a 13 x 9 inch baking sheet with olive oil.
  • To crush the corn flakes, pour them into a large resealable plastic bag.
  • Press down on the bag to push out most of the air, seal, and crush with a rolling pin.
  • Stop rolling when the flakes still have some texture and pour them into a wide bowl or onto a plate.
