7-LAYER SALAD
This salad has been a regular at our church potluck dinners and is always enjoyed by many. I asked for the recipe early on and have made it many times in the past 15 years.

Steps:
- Layer lettuce, cucumber, peas, Cheddar cheese, and egg, respectively, in a 9x13-inch casserole dish.
- Whisk creamy salad dressing, sugar, and vinegar together in a bowl until dressing is smooth; spread over the egg layer. Crumble bacon over dressing layer.

SEVEN LAYER SALAD
I usually make this bacon, lettuce, onion, pea, cheese and cauliflower layered salad in a large flat bowl. There's never too much because everybody loves it! You can vary the salad by substituting green onions for red, jack cheese for the Cheddar, etc.

Steps:
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside.
- In a large flat bowl, place the chopped lettuce and top with a layer of onion, peas, shredded cheese, cauliflower and bacon.
- Prepare the dressing by whisking together the mayonnaise, sugar and Parmesan cheese. Drizzle over salad and refrigerate until chilled.

- Place salad greens in large salad bowl. Layer radishes, onions, celery, bacon and peas on salad greens.
- Spread mayonnaise over peas, covering top completely and sealing to edge of bowl. Sprinkle with cheese.
- Cover and refrigerate at least 2 hours to blend flavors but no longer than 12 hours. Just before serving, toss if desired. Store covered in refrigerator.

SEVEN LAYER GREEN SALAD RECIPE
This tasty, fresh salad is easy-to-make and so much easier to serve than your traditional seven layer salad!

Steps:
- Chop or tear up lettuce and place in 9 x 13 dish
- Chop up celery and add on top of lettuce. Add a sprinkling of salt and pepper.
- Chop hard boiled eggs and add on top. Again, add a light amount of salt and pepper.
- Crush bacon and add on top of eggs.
- Add chopped tomatoes and green onions, then top with 2 cups cheese.
- Pour on 10 ounces partially frozen peas. (I just let the frozen peas set out while I'm preparing this dish. The peas will thaw enough by the time it's time to eat.)
- Stir together mayo and sour cream. Mix well. Spread on top of the frozen peas. Add salt and pepper to taste.
- Sprinkle remaining cheese on top. (I used cheddar, but Parmesan would be delicious too!)

YET ANOTHER 7-LAYER SALAD
There are probably as many versions of this as there are Moms in the world. This is Candy's Mother's recipe.

- In a 9x13-inch pan, start with a layer of lettuce, then hard boiled egg, celery, onion and bacon. Note: We buy the bacon already crumbled and use about 1 lb of that.
- Drain peas and layer on top of bacon.
- Spread Miracle Whip salad dressing over peas.
- Top with shredded cheese.
- Refrigerate at least 2 hours before serving.
- Note: Very forgiving recipe. We always add more bacon and sometimes substitute Ranch dressing for the Miracle Whip.

- Layer the rest of the ingredients in a bowl. Lay a layer of lettuce on the bottom of the bowl first, then a full layer across the bowl of each of the other ingredients. Put the layers in whatever order you want, but if you have a clear sided bowl, I like to alternate colors so it looks prettier.
- Spread the mayonnaise/sugar mixture over the top of the salad like cake icing. Sprinkle grated cheese evenly over it all (or as one of the middle layers). Seal the bowl with plastic wrap and refrigerate overnight (or for 8 to 12 hours before serving).
- This salad looks beautiful served in a glass bowl so you can see the layers. Add chopped fresh parsley or cilantro on top if you want, for a great look and extra taste. Mix it all together just before serving.
