TOMATO PIE
This classic Tennessee pie might have a cheesy top, but the juicy tomato center keeps it surprisingly fresh. Don't let its simplicity fool you: this pie will be a smash hit in your house, just as it is all over the South.

- Arrange the tomato and onion slices in a single layer on a paper towel-lined baking sheet and sprinkle with salt. Let sit for 1 to 2 hours.
- Preheat the oven to 350 degrees F.
- Fit the pie crust into a 9-inch pie plate and crimp the edges. Prick the bottom and sides with a fork. Line the crust with aluminum foil and fill with pie weights or dried beans. Bake until the edges of the crust are just golden, 20 to 25 minutes. Remove the foil and weights and continue to bake until the bottom of the crust is dry and brown, another 15 to 20 minutes. Cool completely.
- Mix together the Cheddar, mozzarella and mayonnaise in a medium bowl. Season with 1/2 teaspoon salt and a few cracks of black pepper.
- Transfer the tomatoes and onions to a dry paper towel and pat dry. Liberally season the tomatoes with cracked black pepper. Arrange a third of the tomatoes in a single layer in the pie crust, overlapping slightly. Sprinkle a third of the basil over the tomatoes and top with a third of the onions. Repeat twice with the remaining tomatoes, basil and onions. Spread the mayonnaise mixture over the top of the onions.
- Bake until the topping is golden brown and bubbling, 30 to 35 minutes. Let cool completely. Garnish with basil leaves. Serve at room temperature.
SOUTHERN TOMATO PIE
Tomato slices are juicy and mix in well with the creamy/cheesy "custard" in this Southern-inspired tomato pie. The blind baking method helps keep the crust nice and crunchy on the bottom.

- Preheat oven to 400 degrees F (200 degrees C). Fit pie crust inside a 9-inch pie plate, pressing into the bottom and up the sides of the plate. Fold crust edges under; crimp as desired. Place a piece of parchment paper over crust in pie plate, leaving a 3-inch overhang. Fill with pie weights or dried beans.
- Bake in the preheated oven for 10 minutes. Carefully remove parchment paper and pie weights. Continue baking until crust is light golden brown, 5 to 8 minutes more. Transfer to a wire rack; cool to room temperature, about 30 minutes. Reduce oven temperature to 375 degrees F (190 degrees C).
- Meanwhile, slice tomatoes crosswise into 1/4-inch thick slices; arrange tomato slices in a single layer on paper towels. Sprinkle with 3/4 teaspoon of the salt; let stand for 20 minutes. Pat tomato slices dry with paper towels.
- Whisk together mayonnaise and cream cheese until combined and smooth. Fold in 1 1/4 cups Cheddar cheese, egg, flour, garlic, cayenne, black pepper, and remaining 1/2 teaspoon salt until combined.
- Spread half of the Cheddar mixture in the pie crust. Layer with 1/3 of the tomato slices in slightly overlapping circles. Repeat procedure with remaining Cheddar mixture and another third of tomato slices. Top with remaining tomato slices in slightly overlapping circles. Sprinkle with Parmesan and remaining 1/4 cup Cheddar cheese.
- Bake pie in the preheated oven until filling is set and lightly browned on top, 30 to 35 minutes, tenting crust with aluminum foil to prevent excess browning, if needed. Let stand for at least 30 minutes before serving. Garnish with thinly sliced basil before serving.

When I was finished, I realized I had a ton of green cherry tomatoes in addition to some big green tomatoes so I decided I was going to have to make fried green tomatoes casserole-style instead of the traditional fried slices....

- 1. Slice all of the tomatoes. Arrange 1/3 of the tomatoes in the bottom of a pie pan or 8x8 baking dish. Sprinkle with 1/3 of salt, 1/3 of sugar, and a little pepper. Top with 1/3 cup of seasoned breadcrumbs and 1/2 cup cheese.
- 2. Add second layer of tomatoes and sprinkle with 1/3 of salt, 1/3 of sugar, and a little pepper. Top with panko breadcrumbs and 1/2 cup cheese.
- 3. Repeat the layers one more time- tomatoes, 1/3 of salt, 1/3 of sugar, and a little pepper, seasoned breadcrumbs and omit the cheese on the last layer at this point.
- 4. Dot the butter on the top of the last breadcrumb layer. Bake at 400F for 60 minutes. Add the remaining cheese and bake for about 5-10 more minutes, until the cheese is melted and starting to brown.

- Season tomato slices with salt and pepper.
- Set up a breading station in 3 shallow dishes: pour flour into the first dish; stir together buttermilk and eggs in the second dish; and mix breadcrumbs, cornmeal, garlic powder, and paprika together in the third dish.
- Dredge tomato slices in flour, shaking off the excess. Dip tomatoes into the egg mixture, and then into the bread crumb mixture, making sure to coat both sides.
- Preheat the air fryer to 400 degrees F (200 degrees C). Brush the fryer basket with olive oil. Place breaded tomato slices in the fryer basket, making sure they do not touch each other; cook in batches if necessary. Brush the tops of tomatoes with olive oil.

This past summer I found myself asking how I was going to preserve the abundance of grape tomatoes I had from my garden. Sun drying was the only thing I could come up with but problem was, there wasn't any sun. Air fryer to the rescue! I have a small air fryer so I wrote this up for 5 ounces (12 grape tomatoes) so that it would be easy to do in small batches. Store in an airtight container in the freezer for re-hydrating or pack in oil and store in the refrigerator for salads, soups, sauces, etc.

- Preheat an air fryer to 240 degrees F (115 degrees C).
- Place tomatoes in a small bowl. Add olive oil and salt. Stir until evenly combined. Transfer tomato halves to the air fryer basket, skin-side down.

- In a medium sized saucepan melt the butter over medium high heat. Add in the apples, cinnamon and brown sugar and sauté until tender. In a small bowl mix the cornstarch and water and add it to the sauce pan. Continue to cook until it starts to thicken. Remove from heat.
- Roll out the pie crusts and cut 4 inch circles using a small round bowl. Place a tablespoon of apple filling to one half of the circle leaving a 1/2 inch edge. Wet the edges of the circle and fold and seal the edges with a fork. Cut three slits into the top of the pies. This tool is amazing too!
- In a small bowl whisk the egg and water and brush the top of the hand pies. Place the hand pies into the basket of your air fryer. Cook at 350 degrees for 8-10 minutes or until golden brown.
- While the hand pies are cooking in a small bowl add the powdered sugar and milk. Once you remove the hand pies from the air fryer brush with the glaze and sprinkle with sugar.
