WASSAIL
Alton Brown's classic wassail cider from Food Network is the perfect warming drink for the holidays.

Steps:
- Preheat the oven to 350 degrees F.
- Put the apples into an 8 by 8-inch glass baking dish. Spoon the brown sugar into the center of each apple, dividing the sugar evenly among them. Pour the water into the bottom of the dish and bake until tender, about 45 minutes.
- Pour the ale and Madeira into a large slow cooker. Put the cloves, allspice, and cinnamon into a small muslin bag or cheesecloth, tied with kitchen twine, and add to the slow cooker along with the ginger and nutmeg. Set the slow cooker to medium heat and bring the mixture to at least 120 degrees F. Do not boil.
- Add the egg whites to a medium bowl and using a hand mixer, beat until stiff peaks form. Put the egg yolks into a separate bowl and beat until lightened in color and frothy, approximately 2 minutes. Add the egg whites to the yolks and using the hand mixer, beat, just until combined. Slowly add 4 to 6 ounces of the alcohol mixture from the slow cooker to the egg mixture, beating with the hand mixer on low speed. Return this mixture to the slow cooker and whisk to combine.
- Add the apples and the liquid from the baking dish to the wassail and stir to combine. Ladle into cups and serve.

- In a medium pot set over medium heat, add the apple cider, orange juice, lemon juice, ginger, nutmeg, cloves and cinnamon sticks. Bring to a simmer and cook for 20 minutes.
- Ladle the wassail into mugs spiked with brandy or cognac, and garnish with spices and apple slices or orange wheels.

Steps:
- Mix both juices, water and brown sugar into the bottom of a perculator.
- Place all the spices into the top.
- Perculate according to the directions of your pot.
- You could also tie the spices up in cheese cloth and simmer in a pot on the stove if you don't have a perculator.
- This could also be made in a crock pot.
CRANBERRY WASSAIL (NON-ALCOHOLIC)
A nice little Autumn-Winter beverage originally from Ocean Spray. It's certainly a different take on Wassail. This is from an older magazine clipping.

- Mix all ingredients, except for the garnishes. (If you are iffy on the sugar, add it last, a little at a time and taste as you go along).
- Heat the mix to boiling in a large saucepan, reduce the heat and allow it to simmer for 10 minutes.
- Strain the wassail to remove the spices.
- Serve very warm in a heat-proof punch bowl and garnish with the orange slices and cloves.

- Preheat the oven to 300 degrees F (150 degrees C).
- Stud oranges with whole cloves and place in a baking pan. Add water to cover bottom of the pan.
- Bake in the preheated oven until oranges have softened, about 30 minutes.
- Meanwhile, place apple cider and cinnamon sticks into a large saucepan; bring to a boil. Simmer, covered, for 5 minutes. Remove lid and add pineapple juice, honey, lemon juice, lemon zest, and ground nutmeg. Return to a simmer and cook for 5 more minutes.
- Pour into a punch bowl and float spiced oranges on top.

- Place water in a very large pot and bring to a boil.
- Steep tea bags in hot water for 4 minutes; remove tea bags.
- Add cider, orange juice, cranberry juice, and sugar to a boil, stirring to dissolve sugar.
- When it comes to a boil, reduce heat to a simmer.
- Stick the cloves into the orange and drop into the pot along with the cinnamon, and red-hot candies.
- Simmer the punch for 30 minutes, stirring occasionally.

HOLIDAY WASSAIL WITH ALCOHOL
This is the most amazing tasting Wassail. It's perfect for a holiday party or a cold winter night. It's like drinking hot apple pie that warms your tummy and lifts your spirits. Although it's a big undertaking to cook, you won't be disappointed, especially when everyone is complimenting you on making something that tastes so delicious. Make sure you serve it warm. Because this takes a while to put together, I usually make it the night before and pour the mixture into bottles/containers so I can transport it easily. I guessed at the number of servings but its always been enough for the parties I've been to where there have been 25 or more people.

Steps:
- In one saucepan, heat: 1 gallon unfiltered apple cider and 2 cups baked (peeled apples) cut into medium small pieces
- In another saucepan, boil for 5 minutes: water, sugar, nutmeg, ginger, mace, cloves, allspice berries and cinnamon sticks.
- In another saucepan, boil: cream sherry and brandy.
- In a small mixing bowl, mix until firm - stiff but not dry: 3 egg whites.
- In a large mixing bowl - mix until creamy: 3 egg yokes - light in color.
- Now fold egg whites into egg yokes and add spice mixture a little at a time, stirring constantly.
- Next add booze
- Next add cider mixture.
- Serve warm. I've served it in a punch bowl and in a large pot on the stove. Right before serving, I usually take out the allspice berries and cloves so people don't choke on them. If I find out that the wassail has cooled down, I re-heat it.
