ALFRED'S SCALLOP-BUTTER SAUCE

Alfred Portale, chef and part-owner of the Gotham Bar and Grill in New York City, created this sauce to accompany his Diver Scallops with Vegetable Ragout and Osetra Caviar.

Alfred's Scallop-Butter Sauce image

Steps:

  • Combine scallop scraps, water, and white wine in a small nonreactive saucepan. Set the pan over medium-high heat, and bring to a boil. Cook until the liquid has reduced by half, about 7 minutes.
  • Add cream; boil until liquid has reduced by half, about 10 minutes. Remove pan from heat, and whisk in the butter, piece by piece. Season with salt and pepper. Serve warm.

Muscle flaps from 12 diver-harvested sea scallops, or 1 large sea scallop, coarsely chopped

Seared Diver Scallops with Caper-Honey Sauce image

Steps:

  • In a blender, combine the vinegar, capers, honey and about half of the dill and tarragon and blend until smooth. While blending, slowly add the olive oil to emulsify. Season with salt and pepper. Reserve at room temperature for finishing.
  • Score the scallops by making 1/8-inch-deep crosshatches across the top side of each (like a checkerboard). Season with freshly cracked black pepper. Dry the scallops thoroughly on paper towels.
  • In a medium saute pan, heat the canola oil over medium-high heat until it just begins to show ripples. Place the scallops scored-side down into the oil for 2 to 3 minutes. Add the butter to the pan and flip the scallops over; cook for 1 more minute for medium rare. Season with salt.
  • Place the scallops on a serving plate and spoon some of the caper-honey sauce over the top. Top with the remaining tarragon and dill.

Steps:

  • Thaw scallops, if frozen.
  • Cut any large scallops in half; set aside.
  • For sauce, in a small bowl stir together half and half, light cream, or milk; parsley; cornstarch; and pepper.
  • Set aside.
  • Pour cooking oil into a wok or large skillet. (Add more oil as necessary during cooking).
  • Preheat over medium-high heat.
  • Stir-fry garlic in hot oil for 15 seconds.
  • Add scallops to the hot wok.
  • Stir-fry about 2 minutes or till scallops turn opaque.
  • Push scallops from the center of the wok.
  • Stir sauce.
  • Add sauce to center of wok.
  • Cook and stir till thickened and bubbly.
  • Cook and stir 2 minutes more.
  • Add cooked fettuccine, tomato, and 1/2 cup Parmesan cheese.
  • Stir all ingredients together to coat with sauce.
  • Cook and stir for 1 to 2 minutes more or till heated through.
  • Serve immediately.
  • Sprinkle with additional Parmesan cheese and garnish with parsley sprigs, if desired.

Seared Scallops with Leeks and Caviar Sauce image

Steps:

  • Melt 2 tablespoons butter in heavy large skillet over medium-low heat. Add leeks and sauté until tender but not brown, about 20 minutes. Add Champagne and boil until liquid is reduced to 1/2 cup, about 4 minutes. Transfer leek mixture to strainer set over bowl. Press on leeks to extract as much liquid as possible. Transfer leeks to small bowl. Season to taste with salt and pepper. Return liquid to same skillet. Add cream and boil until reduced to 3/4 cup, about 4 minutes. Transfer sauce to bowl; cool 1 hour.
  • Melt 1 tablespoon butter in large nonstick skillet over medium heat. Season scallops with salt and pepper. Working in batches, add scallops to skillet and sauté until just cooked through and golden brown, about 3 minutes per side for each batch. Transfer to plate.
  • Spoon leeks in 5 small mounds around rim of each plate, spacing equally. Top each mound with 1 scallop. Stir caviar and tarragon into sauce. Spoon sauce into center of each plate.

Poached Scallops with Caviar Sauce image

Steps:

  • Bring the clam juice and heavy cream to a simmer in a small saucepan. Add the butter and whisk to incorporate. Set aside.
  • Bring the court-bouillion to a simmer in a pan large enough to accommodate the scallops. Season the scallops on both sides with salt and pepper. Add the scallops to the simmering court-bouillon and poach gently until they are cooked just to rare, about 1 1/2 minutes for large scallops, 2 to 2 1/2 minutes for jumbo scallops.
  • To serve, place a bed of rock salt on each plate and rest a scallop shell on it (if you do not have scallop shells, serve the scallops in shallow bowls). Place 3 large scallops or 1 jumbo in each shell.
  • Meanwhile, gently reheat the sauce. Remove from the heat, add the caviar, and stir until the caviar is just heated through, about 45 seconds. Squeeze the juice of the lemon into the sauce, add the chives, and season with pepper. Spoon the sauce over the scallops, making sure the caviar is evenly distributed. Serve immediately.

Steps:

  • Heat 4 1/2 teaspoons oil in a large nonstick saute pan over medium-high heat until hot but not smoking. Add leek; cook until soft, 1 to 2 minutes. Stir in cabbage, and add stock. Cook, stirring occasionally, until cabbage is slightly soft, about 5 minutes. Stir in 1/2 teaspoon salt, and season with pepper. Set aside.
  • Sprinkle scallops with 1/4 teaspoon salt, and season with pepper. Heat remaining 4 1/2 teaspoons oil in a large nonstick saute pan over medium-high heat until hot but not smoking. Add scallops; cook, turning once, until dark golden, about 4 minutes per side.
  • Divide cabbage mixture among four plates, and top each serving with 3 scallops. Garnish with lemon.

Elio's Bay Scallop Salad image

Steps:

  • Fill a medium bowl with ice and water. Add onions, and soak until ready to fry. Drain well, and pat dry. Heat 2 inches oil in a medium saucepan to 400 degrees. Add onion, and fry until golden brown and crisp, about 1 minute. Transfer to paper towels to drain. Sprinkle with salt; set aside.
  • Place flour in a shallow dish. Heat canola oil in a large nonstick saute pan over high heat. Dredge scallops in flour, shaking off any excess. Add scallops to pan, and cook until just golden, about 30 seconds per side. Pour out excess oil. Add wine, butter, stock, salt, and pepper. Cook for 30 seconds, and remove scallops to a platter; keep warm. Simmer sauce until reduced slightly, about 30 seconds.
  • Place greens in a medium bowl. Drizzle with olive oil and vinegar. Season with salt and pepper. Toss to combine.
  • Divide greens between two plates. Drizzle reduced sauce around the perimeter of each plate. Arrange scallops around greens. Top with fried onions.

Alfred's Diver Scallops with Vegetable Ragout and Osetra Caviar image

Steps:

  • Bring a stockpot of water to a boil over high heat; add salt. Add the potatoes, and cook until tender, 15 to 20 minutes. Drain potatoes. Cut potatoes into 1/3-inch-thick rounds, and transfer to a bowl. Set aside.
  • Bring a stockpot of lightly salted water to a boil over high heat; prepare an ice-water bath. Trim bottoms from brussels sprouts. Peel away the inner leaves, one by one. Add carrot to boiling water, and cook until tender, about 4 minutes. Using a slotted spoon, transfer carrot to bowl with the potatoes.
  • Add the leaves of the brussels sprouts to the boiling water, and cook until just tender, about 3 minutes. Using a slotted spoon, transfer leaves to the ice-water bath to stop the cooking process. Drain in a colander, and add leaves to bowl with carrots and potatoes.
  • In a medium saucepan, bring 1 cup water to a boil. Add cream, and return to a boil. Boil 2 minutes, reduce heat to low, and whisk in butter, piece by piece.
  • Add the reserved potatoes, carrots, and brussels sprouts. Season with salt and pepper. Cook until the vegetables are heated through, and keep the vegetable ragout warm.
  • In a 12-inch nonstick saute pan, heat oil over high heat until very hot but not smoking. Season scallops with salt and pepper. Cook scallops until golden brown on bottoms, about 3 minutes. Using kitchen tongs, turn scallops; reduce heat to medium. Cook scallops until other sides have browned, but are still rare inside, about 2 minutes.
  • Reserving 1 cup vegetable ragout, divide equal amounts of the remaining ragout among four warm dinner plates. Arrange 3 scallops on top, then top each with 1/4 cup reserved ragout. Spoon the scallop-butter sauce around the plates, and sprinkle with chives. Garnish each dish with equal amounts of caviar, and serve immediately.
