Almond gelatin - just like the way they serve it at Chinese dim sum!

Steps:
- Combine gelatin with boiling water, stirring until dissolved. Stir in sugar, milk, and almond extract. Pour into a 9 inch square pan and refrigerate overnight. Cut into cubes and serve with fruit cocktail.

Steps:
- In a small heavy saucepan, heat milk to 175°; stir in confectioners' sugar until dissolved. Whisk a small amount of hot mixture into egg yolks. Return all to the pan, whisking constantly. Add lemon zest., Remove from the heat. Stir in extract. Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes. Stir in the peaches, cream and almonds. Press waxed paper onto surface of custard. Refrigerate for several hours or overnight., Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. Refrigerate remaining mixture until ready to freeze. When ice cream is frozen, transfer to a freezer container; freeze for 2-4 hours before serving.

TOFFEE ALMOND COOKIES
From the cookbook Don't Panic Dinner's in the Freezer....these can be made ahead and put in the freezer. Recipe makes 8 dozen...some for now and some for later!

Steps:
- Preheat oven to 350.
- Blend sugar, powdered sugar, butter and oil until well mixed.
- Add almond extract and eggs and mix well.
- Lightly spoon and blend in flours, soda, salt and cream of tartar at low speed.
- By hand, stir in almonds and toffee bits.
- Shape into balls and roll in sugar; Crisscross balls with fork dipped in sugar.
- Bake in preheated oven on ungreased cookie sheets for 10 minutes; Cool on cookies sheets 3-4 minutes, then remove.
- To freeze: Either flash freeze cookie dough balls and then thaw and bake on serving day or freeze already baked cookies in freezer bags.
