These are absolutely the most amazing chocolate chip cookies ever! They are crisp on the outside yet soft and chewy in the middle and delicious chocolate chips are spread throughout them making them even more of a scrumptious treat. Whenever I make them they disappear in seconds; children and adults alike can't get enough. These cookies are so moist and chewy they literally melt in your mouth! The best EVER!

Steps:
- Preheat the oven to 160°C (or 320°F).
- Melt butter in a saucepan over medium heat (or in the microwave)and set aside to cool slightly.
- Pour butter into a large bowl and stir in brown sugar and caster sugar until smooth and sugar is mostly dissolved.
- Lightly beat the egg with a whisk or fork and stir into the sugar mixture along with the vanilla extract.
- Sift flours and baking powder together into a small bowl and then gradually mix into sugar mixture until combined.
- Stir through chocolate chips.
- Drop rounded tablespoons of the cookie mixture onto lined baking trays.
- Bake for 12 minutes or until just lightly golden then remove from oven and allow to cool on trays for 3 minutes before transferring to a wire rack to cool completely.

- Mix the butter and sugar together using an electric whisk or hand whisk until very light and fluffy, then beat in the egg and vanilla. Fold in the flour, baking powder, chocolate and ¼ tsp salt as quickly as you can. Don't overwork the dough as this will toughen the cookies.
- For the best flavour, leave the mixture overnight: either cover the bowl and chill, or roll the mixture into balls and chill.
- Heat the oven to 180C/160C fan/gas 4 and line two baking sheets with parchment. Divide the mixture into balls, the craggier the balls, the rougher the cookies will look. If you want to give the dough more texture, tear the balls in half and squidge them lightly back together. - 1. Preheat oven to 350° 2. Using a large (preferably metal) fork, the kind you use for tossing/serving salad, thoroughly mix the eggs, butter, vanilla, and sugar in a large (see description) mixing bowl until it forms a paste with small chunks of butter (no more than 1/2 of an across) throughout. 3. Cup by cup, mix in the flour with the fork, not adding the next cup until the last one has been fully incorporated in to the wet mixture until you have done so three times. 4. Add the last 1/2 cup of flour and the tsp. of baking soda mix until one consistency. 5. Dump in the chocolate chips and hand mix them in until evenly distributed, touching the dough as little as possible (it is quite sticky, so you will end up wasting a lot down the sink otherwise) 6. Put liberal balls of the dough on a cookie sheet, 1-2 inches across. Do not roll them around, just get them into a generally spherical shape and plunk them on. They rise and spread a lot, so put them at least 2 inches apart from each other. I can usually get 6 or so on a standard cookie sheet. 7. Put the cookie sheet in the middle of the oven and give them 10 minutes. When the timer goes off, use a knife and stick it through one of the cookies. If there is wet dough on the knife, they need more time. Give them another 2 or 3 minutes, but do not be fooled by going through a chocolate chip. Look for clear dough. 8. When you have deemed the cookies done, take the sheet out of the oven and use a flipping spatula to take the cookies off the sheet, placing them on pretty much any clean surface to cool. Do not stack them until they have finished cooling or run the risk of having them glue together. 9. Repeat steps 6 through 8 until you are out of dough. IMMEDIATELY clean the mixing bowl with hot water and a sponge or scrubbing brush, as if you don't it will glue to the bowl and take the rest of your waking life to clean. Trust me, unfortunately I speak from experience.
