Steps:
- Mix eggs, cream and warm honey until well combined. Soak slices of bread for 35-45 sec per side then lay on a baking sheet and rest for no less than 5 minute This step is crucial do not skip. While bread is resting preheat oven to 350 and place a pan on low to med low heat and place in 1 Tbsp of butter. The butter should melt and slightly bubble if it turns brown the pan is too hot. Place bread slices in pan and cook until the slices just start to turn golden brown aprox 3-5 minute The middle should be very soft. Place on baking sheet and bake for 5-7 min until middle is firm. While the slices are in the oven melt remaining butter and mix with cinnamon. Once the slices are done brush with the cinnamon butter and let sit for 1-2 min then serve. Can be topped with fruit, whipped cream, maple syrup or my favorite banana foster. Using the oven creates a beautiful creamy custard middle to your toast very delicious!

- Choose your bread. If you like very thick french toast (you should try it at least once!), find a local bakery and get yourself a loaf of challah or brioche bread (buy a day-old loaf if they have it.) I don't like using French bread or the regular loaves you find in the deli at the grocery store; the crusts turn out too chewy.
- You want a nice soft edge. If you can't get to a bakery, head to the grocery store and buy the thickest and softest white bread you can find. (3/4 inch or thicker.) Texas toast is great.

- Allow bread to go stale. Originally, French toast is made from stale bread—Hence the name “pain perdu” in French, which means “lost bread”. Leave fresh bread slices dry out for at least a day, if not more.
- Always let it sit the bread slices in the egg batter for a couple hours A couple of hours in the fridge is a must, sometimes even overnight for a frothy smooth mix.
- Use a crunchy topping. Use shredded coconut or bread crumbs to make a nice little crust on top of your french toast. Press it on one or both side of the bread, like a breading and cook into a chewy, crispy golden brown crust.
- Use Challah bread. Challah bread sliced thick is one major key. It makes the only true French Toast, perfectly crisp outside and soft inside.
- Cook it both on the stove and oven. Use a cast iron skillet, and a good dollop of butter. Toast soaked bread slices is over medium high heat until golden brown on both sides, then transfer on a baking sheet in the oven.
- Grate orange or lime zest on top. This adds a nice off-shot of the fruit’s flavor to your french toast. Everyone will comments on how amazing your french toast is, but that they can’t put their finger on it.
- Test unusual toppings. Jazz up you french toast with brie or mascarpone and some fruit such as carmelized pears, carmelized peaches, fresh strawberry, banana, raspberries etc… A big part of cooking is experimenting and having fun!
