BUTTERSCOTCH PUDDING

Steps:

  • Heat the oven to 350 degrees F. In a large mixing bowl, lightly whisk the egg yolks until smooth. Set aside.
  • In a medium, heavy-based saucepan, heat the brown sugar, milk, and cream over medium-high heat, stirring to dissolve the sugar. Scald the mixture (do not boil it) and remove it from heat.
  • While the cream mixture is heating, dissolve the sugar and water over low heat in a large, heavy-based saucepan increase the heat to high and boil the sugar until it=s amber in color. If the sugar starts to sputter, use a pastry brush dipped in water to wash down the sides of the pan. As soon as the sugar turns dark amber (like a old penny), carefully and slowly pour the hot cream into it, stirring the mixture. (The caramel will bubble as you add the cream, so use a long wooden spoon or whisk to combine them.)
  • Gently and slowly whisk the cream mixture into the egg yolks. Stir in the salt and vanilla. Strain the pudding and cool it in an ice bath or refrigerate until cool.
  • Skim of any air bubbles from the pudding mixture and divide the cool pudding mixture among 6 (6-ounce) ramekins. Set the ramekins in a shallow roasting pan and fill the roasting pan with hot water until it reaches halfway up the sides of the ramekins. Cover the pan with foil.
  • Bake the pudding until just set. Begin checking after 1 hour. When gently shaken, they should no longer look liquid; instead, the custard will move as one mass.
  • Allow the pudding to cool to room temperature in the water. Refrigerate the pudding for several hours or overnight before serving. The pudding will keep its dark color if refrigerated uncovered. It will taste no different but will look lighter if you cover it, which you should do (after it has cooled completely) if you have any strong flavored-food in you refrigerator

Butternut, Bacon and Apple Hotdish image

Steps:

  • For the filling: Lay the bacon in a large oven-safe skillet (I like to use a cast-iron pan or braiser) and turn the heat to medium. Cook, flipping once, until crisp on both sides, about 7 minutes total. Remove from the heat and place on a paper towel-lined plate to drain and cool slightly.
  • Drain half the bacon grease from the skillet, leaving just enough to coat the skillet. Add the onions and turn the heat to medium-high. Saute until soft, about 10 minutes. Add the squash, thyme, some salt, a few turns of pepper and a few pinches of crushed red pepper and cook, stirring occasionally, 10 more minutes. Add the wine and broth. Roughly chop the bacon and add it to the skillet along with the apples. Bring the mixture to a light boil, then reduce the heat to low and simmer for 15 to 20 minutes, while you make the biscuits.
  • For the biscuits: Preheat the oven to 425 degrees F.
  • Whisk together the flour, baking powder and salt in a bowl. Add the butter and, using a food processor, pastry cutter or your hands, incorporate the butter until the mixture is the consistency of raw oatmeal. Mix in the cream until the mixture comes together to form a dough. Turn it out onto a floured work surface, pat it out to 3/4-inch thick and then cut out round biscuits, re-rolling scraps as needed.
  • Turn off the heat before dotting the top of the skillet with the biscuits. Brush the biscuits with the beaten egg and top with black pepper. Bake until the biscuits are golden brown, cooked through and flaky, about 25 minutes. Remove from oven and serve right from the skillet!

Steaming a pudding is SO easy - you just pop it on to gently steam, whilst you prepare the rest of the festive meal. You only have to remember to keep topping up the water from time to time. Serve warm with the hot butterscotch sauce and maybe a jug of single cream or brandy custard to help it along! Merry Christmas! N.B. 7-Cup Steamed Christmas Pudding With Butterscotch Sauce image

Steps:

  • For the pudding, empty the first six cups and the nuts, if using, into a mixing bowl with the spices, then stir in the milk and egg. Once well combined, tip into a buttered 1.5 litre pudding bowl.
  • Cover with a double layer of buttered foil, making a pleat in the centre to allow the pudding to rise.
  • Tie the foil securely with string, then place in a steamer or large pan containing enough gently simmering water to come halfway up the sides of the bowl. Steam, covered with a lid, for 2 to 2 1/2 hours.
  • Check the water level during cooking, topping up if necessary.
  • If you are preparing this pudding ahead, remove the foil, let it cool slightly, then wrap in cling film and then fresh foil. It can be stored in a fridge for up to one week ahead of time. Or, freeze it for up to one month. Defrost overnight.
  • If you are serving it immediately, unwrap and invert onto a deep plate.
  • For the sauce, put everything in a pan and bring slowly to the boil, stirring. Allow to bubble away for 2-3 minutes, still stirring, until the sugar has dissolved and the sauce is pale caramel in colour and slightly thickened.
  • Remove from the heat. Pour the sauce over the pudding and decorate with the whole mixed nuts.
  • Serve with a jug of fresh cream or brandy custard.

I found this recipe in 'Joan Bishop's New Zealand Crockpot and Slow Cooker Cookbook'. This dessert is more like a baked pudding than a steamed one. It has a rich butterscotch sauce and is a good family pudding or to serve guests, especially in winter. It's also very easy to prepare. Definitely comfort food best served with vanilla ice cream or fresh cream. The author says to sit the pudding basin on a trivet in the slow cooker. If you don't have one of these she suggests using a metal jam lid or a metal biscuit cutter.

  • Pre-heat cooker for 20 minutes on high.
  • Lightly grease a 6 cup capacity casserole dish or pudding basin.
  • Sift flour and sugar into a mixing bowl.
  • Combine melted butter and milk and add to the dry ingredients. Stir until the mixture is well blended. Spoon into the casserole dish.
  • Mix together the ingredients for the sauce and stir until the butter is melted. Pour gently over the pudding mixture.
  • Place the casserole dish on a trivet in the cooker. Do not cover the dish or put water around it.
  • Cover the cooker with lid and cook for 2 1/2 to 3 hours.
  • You may want to keep an eye on the pudding after the first hour and a half, especially if your cooker runs hot like mine. When I first made this pudding I overcooked it. While it still turned out fine, there wasn't as much sauce as I would have liked. If the pudding cooks faster than the recommended time, it still turns out okay if the cooker is turned on to the 'keep warm' setting until you're ready to serve.

Steps:

  • In a large saucepan, combine butter, both sugars, water, corn syrup, lemon juice and salt. Bring to a boil over medium heat, stirring occasionally until sugar is dissolved and butter is melted. Bring to a full rolling boil and cook, stirring occasionally, for 5 minutes (caramel will be about 240F). Immediately reduce to medium-low, until caramel develops a steady stream of lazy bubbles. Cook, stirring frequently, until mixture is color of dark peanut butter, smells ever-so-slightly burnt and registers 300F, 12-16 minutes more.
  • Remove from heat and carefully add 1/4 c cream (it will bubble and steam), swirling to incorporate. When bubbles subside, whisk vigorously, scraping into corners, until completely smooth, at least 30 seconds. Over medium heat, whisk in remaining cream until smooth. Whisk in 2 c milk until smooth, remembering to scrape into the corners of the pan to collect any remaining caramel.
  • In microwave, bring remaining 1/4 c milk to a simmer, 30-45 seconds. Whisk egg yolks and cornstarch together in a large heat-safe bowl until smooth. Gradually whisk in hot milk until smooth; set aside at room temperature.
  • Return saucepan to medium-high heat and bring back to a full rolling boil, whisking frequently. When bubbles begin to climb sides of pan, immediately dump entire pan into bowl with yolk mixture (do not add slowly). Whisk vigorously and thoroughly for 10-15 seconds. Add vanilla and rum and whisk to combine. Spray a disc of parchment paper cut to fit the bowl with non-stick spray and press onto surface of pudding. Refrigerate until cold and set, 3 hours or more. Whisk until smooth before serving.

Steps:

  • MAKE PUDDING:.
  • Bring brown sugar and 3 tablespoons water to a boil in a heavy saucepan over medium heat, stirring until sugar dissolves.
  • Boil 2 minutes, stirring constantly, and reduce heat, if necessary.
  • Add cream and 1 1/2 cups milk, return to a boil (don't worry if mixture curdles), and turn off heat.
  • Place cornstarch and salt in a food processor, and pulse to blend.
  • Turn mixture out onto waxed paper.
  • Place granulated sugar and egg yolks in food processor, and blend 1 minute.
  • Scrape down sides of bowl, add remaining 1/4 cup milk, and pulse just to mix.
  • Add cornstarch mixture, and pulse a few times to blend.
  • Pour hot mixture very slowly through food chute while processor is on; pulse.
  • Pour mixture back into saucepan.
  • Whisk constantly over medium heat, making sure to get into edges of pan, about 2 minutes or until pudding thickens and bubbles come to the surface and pop. (Pudding will thicken but should not boil, so reduce heat, if necessary.).
  • Return pudding to food processor; pulse.
  • Add butter, vanilla, and Scotch; pulse until well blended.
  • Pour into 6 (4-to-6-ounce) ramekins or serving dishes.
  • Press a piece of plastic wrap against surface of each pudding, and chill 4 hours or up to 2 days.
  • Serve cold, and garnish, with buttered pecans.
  • MAKE BUTTERED PECANS: (MAKE THESE FIRST).
  • Line a plate with a double layer of paper towels, and set aside.
  • Toss pecans in small skillet over medium heat.
  • Cook, stirring constantly, 1 minute or until lightly toasted.
  • Add butter, and continue to cook, stirring constantly, 2 minutes or until pecans have absorbed most of the butter.
  • Remove from heat, and stir in salt, if desired; turn out onto paper towels.
  • Cover with another double layer of paper towels, and pat to remove excess butter.
  • Let cool to room temperature.
  • Store nuts in airtight container at room temperature up to 3 days.

Steps:

  • PREHEAT oven to 180 C/ 350°F.
  • COMBINE brown sugar, golden syrup and boiling water in a put; bring to a boil for about 2- 3 minutes; set aside.
  • SIFT flour, sugar, baking powder and salt into a bowl.
  • ADD beaten egg, melted butter, vanilla extra and mashed banana.
