SLOW SIMMER BEEF STEW
This is the best beef stew I've ever tasted. My husband ate 4 bowls the first time I made it and my 9-month-old ate two bowls mashed up! I like to brown my beef for stew, and I hate to dirty both a pot and the slow cooker, so I prefer to cook the stew exclusively on the stove.

Steps:
- Combine beef stew meat and flour in a resealable plastic bag; seal bag and shake to coat beef.
- Melt butter with olive oil in a large pot over high heat; add beef and season with seasoned salt. Cook and stir beef until seared on all sides 5 to 7 minutes. Stir onion into the beef; cook and stir until the onion is browned, about 5 minutes more.
- Pour enough of the beef broth into the pot to cover the bottom; bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Add remainder of the beef broth; bring to a simmer before adding carrots, potatoes, celery, balsamic vinegar, Worcestershire sauce, parsley, basil, paprika, and garlic powder.
- Bring liquid to a boil, reduce heat to low, and cook stew at a simmer until the meat and vegetables are very tender, 3 to 4 hours.

SAVORY VEGETABLE BEEF STEW
This is by far the best vegetable beef stew that I have ever made. My grandmother gave me the recipe. My husband, who is a very picky eater, loves this recipe more than anything else I make.

SOUTHERN STYLE BEEF STEW
This is how my mother in law makes beef stew and she is from Alabama. As southern as you can get. Do not use generic tomatoes, they make this bland. I use arm shoulder roast and cut it up cause some beef stew meat is too tough. You can also make this with turtle meat and call it turtle stew, that's what we do! You can adjust the ingredients according to your own taste. We love to eat this with buttered bread.

- Season beef with 2 teaspoons of salt and 1/2 teaspoon of pepper. Place in a large bowl along with 3 garlic cloves that have been crushed and the bay leaves. Pour enough wine into the bowl to just cover the beef. cover the bowl with plastic wrap and place in the refrigerator for 6 hours or overnight to marinate.*If not using red wine, then skip this step and move on to the next. When it is time to add the beef stock, you will need to add an additional 1/2 cup.
- In a 6 quart Dutch oven or 6 quart pot with a lid, heat 2 tablespoons of olive oil over medium heat. With a slotted spoon or tongs remove the beef from the marinade. Discard the garlic and bay leaves but reserve the marinade. In batches, brown the beef for 5 to 7 minutes on both sides. Remove beef and set aside. Continue the process until all of the beef has been browned, making sure not to crowd the beef.
- If needed, add a bit more oil and saute the onions, celery, carrots, rutabaga, and mushrooms for 10 minutes or until the vegetables have softened slightly. Add the tablespoon of minced garlic and saute for 2 more minutes.
- Add the browned beef back into the pot before pouring in 2 cups of beef stock along with the reserved marinade. If you prefer a stew with more liquid, add 1 more cup of stock.
