Steps:
- All ingredients should be at room temperature.
- Place ingredients into your bread machine as the instructions that came with it direct. Mine are the following:.
- Add liquid ingredients to the bread pan.
- Add all dry ingredients, except yeast, to the pan.
- Form a well in dry ingredients and carefully pour in the yeast.
- Bake on "Sweet" Bread setting and choose your crust color, if applicable.
- Press start!
- (Note: The directions don't indicate to add the walnuts at the "beep", where you'd normally add fruit or nuts. Of course, you may hold them out and add them at the beep if you prefer.).
CINNAMON APPLESAUCE YEAST BREAD (ABM)
Delicious and moist bread. Wonderful served warm and slathered with honey butter or great to use for making French toast. Bake time is according to bread machine.

- Check the dough after 5 minutes of kneading; if too wet, add more flour.
CINNAMON RAISIN AND APPLE BREAD (ABM / MACHINE)
This is the nicest spicy fruit loaf I ever made. It is wonderfully moist and really scrumptious! (I make a fruit loaf of one sort or another every other day, and change things a bit from time to time. This is my absolute favourite combination). A note regarding my ingredients - my dried raisins and peel are really quite dry so I increase the water to about 244g (about an extra 3/4 tsp). This means I deliberately make it with the dough looking like it's way too wet during kneading, but the very dry fruit soaks up the excess water. My loaves work out fine despite looking over-moist to start with. I've found through experience that for any bread that will have dried ingredients added late in the kneading process it can be necessary to adjust the water quantity subtly according to how dried the fruit/grains etc are. I use part margarine part butter to reduce fat content slightly. No reason really not to use all butter instead. Butter is nicer :) Makes a loaf of approx 1 1/2 lbs.

- Remove pan from bread machine and place on electronic scales and zero them.
- Pour in the water (240ml water weighs 240 grams) and weigh in the rest of the dough ingredients in order.
- Replace the pan in the bread machine and start machine on a raisin or equivalent 'speciality' setting. I prefer 'normal' crust for this.
- In small bowl weigh the raisins and dried mixed citrus peel. Add the spices and mix together.
- Into a second small bowl, peel about 1/3 of an average size eating apple (I usually have Braeburn apples handy but pretty much any apple is fine except the tasteless ones like Golden Delicious and Gala). Chop into small chunks somewhere between roughly 1/4 and 1/3 inch in size. Once in the bowl, sprinkle with another teaspoon of ground cinnamon and stir with spoon to cover the bits well (to take the moistness off the sides of apple bits so they mix in better).
- Add dried fruit & spice mix at 4 minutes before end of final kneading or at the beep if you trust your machine not to mash the fruit like mine always does. (My LG machine beeps nine minutes before end of final kneading which is far too soon - it can reduce dried fruit to the size of grains of sugar during that time!).
- If you trust your machine not to mash the apple then you could maybe add it a minute or so before kneading finishes. I don't trust mine in the slightest so here's what I do --
- Wash hands in very cold water and dry well just before the final kneading completes then --.
- -- when kneading has completed, quickly add the chopped apple and quickly mix it well by hand. (Shouldn't need to remove pan from bread machine to do this (unless it's in an awkward place! :).
- Slightly more stuff to do for this loaf than usual, but it's absolutely worth it!

CINNAMON-APPLE-PECAN BREAD
A delicious buttery loaf. This recipe is basically an apple-cinnamon version of classic banana bread, plus pecans.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5x3-inch loaf pan.
- Combine apples, 4 tablespoons butter, honey, 1 tablespoon cinnamon, and cinnamon stick in a saucepan over medium heat. Cover with a lid and cook, stirring frequently, about 10 minutes.
- While apples are simmering, sift flour, baking powder, and salt together in a bowl.
- Combine remaining 8 tablespoons butter, remaining 1 tablespoon cinnamon, and sugar in the bowl of a stand mixer. Beat together until light and fluffy. Add eggs one at a time; beat until fully incorporated. Add vanilla extract.
- Discard cinnamon stick and mash cooked apples. Add mashed apples and pecans to the batter. Use a rubber spatula to mix in flour mixture until just incorporated. Transfer batter to the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 1 hour. Cool on a wire rack.

This recipe is for the bread machine from the book The Bread Lover's Bread Machine Cookbook. I make it without the pecans. It calls for gluten which is found at most any health food store. This recipe makes a 2 pound loaf.

- Place the ingredients, except the apples and pecans, in the pan according to the order in the manufacturer's instructions.
- Set crust on medium and program for the Basic or Fruit and Nut cycle; press Start. (This recipe is not suitable for use with the Delay Timer.).
- When the machine beeps, or between Knead 1 and Knead 2, add the apples and pecans.
- When the baking cycle ends, immediately remove the bread from the pan and place it on a rack.

- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
- Beat eggs, sugar, vegetable oil, and vanilla extract in a mixing bowl; add apples.

BEARNAISE BREAD (BREAD MACHINE/ ABM)
This looks like an interesting kind of bread. I'm not interested in bearnaise sauce but I'd like to try this bread despite hating mustard. Omit the wheat gluten if using bread flour. Prep time is the dough cycle, mine's 90 minutes. Admittedly, the first thing I thought of upon seeing this recipe was "Don't get saucy with me, Bearnaise!" from History of the World Part I.

- Fit the bread pan with the kneading paddle.
- Add milk, butter, honey, eggs and cider vinegar to the bread pan.
- Add all remaining ingredients, except yeast, to medium-sized bowl and stir together. Add to bread pan.
- Add yeast to bread pan and place in the Cuisinart Convection Bread Maker.
- Press Menu and select Gluten Free.
- Select Medium crust (or to taste).
- Select dough size.
- Press start to mix, knead, rise, and bake.
- Tip: For best results, while dough is kneading, scrape the sides of the bread pan with a rubber spatula to fully incorporate ingredients.
- When cycle is completed, remove bread from machine and transfer to wire rack to cool. Bread is easier to slice when cool.

- Combine all ingredients except cinnamon sugar and melted butter in the order recommended by your bread machine manufacturer.
- Start dough cycle.
- When dough cycle is finished, remove dough from machine.
- Divide into 14 pieces and shape into donuts (or pat out and use cutters).
- Place on a baking sheet and let rise 30 minutes.
- Meanwhile, preheat oven to 350°F.
- Bake for 15-20 minutes or until browned. and done.
- Immediately brush each doughnut with butter and dip in cinnamon sugar.
- To make without a bread machine:.
- Heat the milk to 110-115 degrees.
- Pour on top of the brown sugar and yeast, and let it sit for 5-10min.
- Add oil, egg and apple.
- Stir flour, salt and spices together and stir into yeast mixture.
- Turn out onto a floured surface and knead until smooth and elastic, about 10 minutes.
- Cover the dough and let it rise in a warm place until doubled.
- Punch down the dough, and roll it out 1/2 inch thick.
- Cut into doughnut shapes.
- Transfer doughnuts to a baking sheet.
- Wait to cut out the "hole" until you have transferred the doughnut to the baking sheet.
- Bake as above.
