- In a large bowl, combine sugar, eggs and oil. Stir in flour and cinnamon (batter will be thick). Stir in apples and nuts. Spread into greased 13x9-in. baking pan. Sprinkle with chips. , Bake at 350° for 35-40 minutes or until golden and a toothpick inserted in the center comes out clean. Cool before cutting.

- In a large bowl, combine flour and salt; cut in butter until mixture resembles coarse crumbs. In a measuring cup, combine egg yolk and enough milk to measure 1/3 cup. Gradually add to the flour mixture, tossing with a fork until dough forms a ball. , Preheat oven to 350°. Divide dough in half. Roll one portion into a thin 15x10-in. rectangle. Transfer to the bottom of an ungreased 15x10x1-in. baking pan. Sprinkle with cornflakes. , In a large bowl, combine apples, 1 cup sugar, 1-1/2 teaspoons cinnamon and nutmeg; toss to coat. - Preheat oven to 350 degrees F (175 degrees C).
- Whisk 2 cups flour and salt together in a bowl. Cut shortening into flour mixture using a pastry blender or a fork until crumbly.
- Whisk water, eggs, and lemon juice together in a separate bowl; stir into flour mixture until dough forms a ball. Split dough into halves; roll each half into about a 9x13-inch rectangle. Press 1 rectangle into the bottom of a 9x13-inch baking dish.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch pan. Sift together flour, baking powder, salt, and 1/4 teaspoon of cinnamon; set aside.
- In a large bowl, mix together melted butter, brown sugar, and 1/2 cup of white sugar with a wooden spoon until smooth. Stir in the egg and vanilla. Blend in the flour mixture until just combined, then stir in the apples and walnuts. Spread the mixture evenly into the prepared pan. In a cup or small bowl, stir together the remaining cinnamon and sugar; sprinkle over the top of the bars.
- Bake for 25 to 30 minutes in preheated oven; finished bars should spring back when lightly touched. Cool in the pan, and cut into squares.

CUSTARDY APPLE SQUARES
Steps:
- Center a rack in the oven and preheat the oven to 400 degrees F. Butter an 8-inch square baking pan.
- Slice the apples from top to bottom using a mandoline, Benriner or a sharp knife, turning the fruit as you reach the core. The slices should be about 1/16 inch thick-elegantly thin, but not so thin that they're transparent and fragile. Discard the cores.
- Whisk the flour and baking powder together in a small bowl.
- Working in a large bowl with a whisk, beat the eggs, sugar and salt together for about 2 minutes, until the sugar just about dissolves and, more important, the eggs are pale. Whisk in the vanilla, followed by the milk and melted butter. Turn the flour into the bowl and stir with the whisk until the batter is smooth. Add the apples to the bowl, switch to a flexible spatula and gently fold the apples into the batter, turning everything around until each thin slice is coated in batter. Scrape the batter into the pan and smooth the top as evenly as you can-it will be bumpy; that's its nature.
- Bake for 40 to 50 minutes, or until golden brown, uniformly puffed- make sure the middle of the cake has risen-and a knife inserted into the center comes out clean. Transfer the cake to a rack and allow to cool for at least 15 minutes.
- Using a long chefs knife, cut the cake into 8 squares in the pan (being careful not to damage the pan), or unmold the cake onto a rack, flip it onto a plate and cut into squares. Either way, give the squares a dusting of confectioners' sugar before serving, if you'd like.
APPLE PIE BARS
Steps:
- Preheat the oven to 375 degrees.
- For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 x 13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides. Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
- Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon, and mix on low speed to combine. Set aside.
- Reduce the oven to 350 degrees.
- For the filling, combine the Granny Smith and Golden Delicious apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon, and nutmeg and mix well. Melt the butter in a large (10-inch-diameter) pot, add the apples, and simmer over medium to medium-low heat, stirring often, for 12 to 15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a 1/2-inch border.
- Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be covered). Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.
COUNTRY APPLE SQUARES
I found this recipe in a newspaper a number of years ago, and I have been making it ever since. The apples go so well with the crumb and cream cheese layers. When fall comes around, this dessert is a real hit! Hint: Many reviewers have suggested doubling the amount of cream cheese!

- Add walnuts.
- Measure 2 cups crumb mixture and set aside.

Dough: 5 cups all purpose flour 1 tsp. salt 2 cups shortening 4 eggs, separated 1 cup milk 2 cups crushed cornflakes Filling: 6 Granny Smith apples 1 cup sugar 1 1/2 tsp cinnamon Icing 1 1/4 cups confectioners sugar 1/2 tsp vanilla 3 tablespoons water Directions 1. Preheat the oven to 350°F. 2. Combine the flour and salt in a large bowl and cut in the shortening. In a small bowl, beat the egg yolks and milk. Reserve the egg whites for later. Add the egg mixture to the flour mixure. Mix the dough until combined, form into a ball, and cut in half. Refrigerate for an hour or so. 3. In the meantime, crush your cornflakes into very fine pieces. Roll out the dough and place it on a 15 x10 sheet pan. Sprinkle all of the corn flake crumbs over the dough evenly. 4. Peel and slice the apples. Toss them with the sugar and cinnamon. Place the apples in a flat layer on top of cornflake crumbs. 5. Roll out the remaining dough, place on top of the apples layer, cut some slits to let the steam escape and seal the edges (tuck the top crust under the bottom if you need to). Beat the egg whites until foamy and brush all over the top of the crust. 6. Bake at 350 for 1 hour, until the crust is golden. Cool slightly. 7. Combine the icing ingredients in a small bowl. Drizzle the icing evenly over the crust. Cool completely before cutting into squares.

- Preheat oven to 400°F.
- Cream the butter and sugar together.
- Mix the flour and baking powder together. Add to butter mixture.
- Beat together eggs and almond extract. Mix into dough.
- In a greased and floured 9x13 pan, press down one half of the dough with your fingers. It will be sticky, so you might want to oil them first.
- Mix the apples with the allspice (or you can substitute cinnamon).
- Spread the apples over the dough in the pan.
- Drop the other half of the dough over the apples and press dough down slightly. It doesn't matter if all the apples aren't covered.
- Bake for about 35 minutes, or until lightly browned. Let cool.

- For filling, combine sugar, cornstarch and water in a saucepan. Mix until well blended. Add apples; heat to boiling, stirring constantly. Reduce heat and simmer 5 minutes, stirring occasionally. - Heat oven to 190C/170C fan/gas 5. Grease an 18cm square tin and line with baking parchment.
- Tip the apples into a pan with 2 tbsp water. Bring to the boil and simmer on a low heat for 5 mins until tender and slightly pulpy. Add the dates and 50g of the sugar, and cook for a further 5 mins. Take off the heat and break the apples down with the back of a spoon until smooth and well mixed with the dates. Set aside.
- Gently melt the butter in a saucepan. Mix the flour, bicarb, oats and remaining sugar in a bowl. Pour in the melted butter and stir well until oats are coated.
- Press half the mixture firmly into the tin, spread the apple mix on top and smooth over. Cover with the remaining oat mixture and press down. Bake for 30-35 mins until golden and firm. Cool in the tin before cutting into squares.
