SAUSAGE AND SAGE APPLE-STUFFED APPLES

Steps:
- Preheat the oven to 350 degrees F.
- Heat a 12-inch skillet over medium-high heat. Add the oil, then the sausage. Saute the meat until browned but still a little pink, about 5 minutes. Add the shallot and continue to cook until the sausage is fully cooked, another 5 minutes. Off the heat, deglaze with the calvados and scrape up any bits on the bottom of the skillet. Add the raisins, pistachios and sage. Season with salt and pepper and set aside to cool in a bowl.
- Halve the apples from stem to bottom and core. Carefully hollow them out using a melon baller, reserving the apple "balls." Chop up the apple "balls" (you should have about 3/4 cup) and add to the sausage mixture. Stuff each hollowed-out apple half with some of the sausage mixture.
- Pour the vinegar into the bottom of a 9-by-13-inch baking dish and add the stuffed apples skin-side down. Bake until the apples are just soft, about 25 minutes. Top each apple with a slice of cheese and continue to bake until melted, another 5 minutes. Garnish with fresh thyme leaves.
APPLE AND SAUSAGE STUFFING

- Preheat the oven to 375 degrees F and butter a 3-quart baking dish. Melt 2 tablespoons butter in a large skillet over medium heat. Add the sausage and cook, breaking up the meat with a wooden spoon, until browned and cooked through, 6 to 8 minutes. Remove with a slotted spoon and transfer to a plate.
- Melt the remaining 6 tablespoons butter in the skillet, then add the onion, celery, apples, sage, thyme, 1 teaspoon salt and a few grinds of pepper. Cook, stirring, until the vegetables are tender, about 5 minutes. Add the cider. Bring to a boil, scraping up any browned bits, and cook until reduced by half, about 5 minutes. Add the broth and return to a boil, then remove from the heat.
- Whisk the eggs and parsley in a large bowl. Add the bread, sausage and vegetable-broth mixture and stir until combined. Transfer to the prepared baking dish; sprinkle with the walnuts and drizzle with the turkey drippings (or dot with butter).
- Cover the dish with foil and bake 30 minutes, then uncover and bake until golden, about 30 more minutes.

Steps:
- Shape sausage into 8- 1/4 inch patties.
- Cook celery, and onion in butter until tender, but not brown; remove from heat.
- Add water.
- Add stuffing mix, apple, parsley, chili sauce, mustard, and pepper; mix well.
- Place about 1/2 cup of the stuffing on 4 of the patties.
- Top with remaining patties.
- Press around the edges to seal.
- Place in a 13x9x2-inch baking pan.
- Bake in a 375 degree oven for 35 to 40 minutes or until done.

- Preheat the oven to 425˚F (220˚C). Grease a 9x13-inch (23x33-cm) baking dish.
- Melt the butter in a large skillet over medium heat. Add the sausage and cook until browned and no longer pink, about 5 minutes.
- Add the celery, onions, and garlic. Cook until softened and golden, about 5 minutes.
- Add the apples, sage, and thyme. Cook until slightly softened, about 3 minutes.
- In a medium bowl, beat together the eggs, chicken stock, salt, and pepper.
- In a large bowl, combine the bread and cooked sausage mixture.
- Pour the egg mixture over the bread and vegetable mixture, and stir to coat.

- Combined all ingredients.
- (I chopped the apples in the pie filling, a little smaller.) Bake in a 9x13 baking dish 40 minutes on 375° in a preheated oven, or until firm and golden brown.
- You may also use this recipe for Stuffing your Turkey, Chicken, or Pork chops.
- I use this recipe for my Boneless Stuffed Pork Tenderloin.

- Cook the sausage meat in a skillet and drain off the fat. Set aside.

- Heat oil in a small saute pan over medium heat, and cook onion until translucent and soft, about 3 minutes. Add apples and cook until soft, about 5 minutes. Let cool.
- Combine chicken with onion-apple mixture and remaining ingredients, mixing with your hands. Form into 1 1/2-inch-round patties, and chill until ready to use.
- Preheat oven to 350 degrees. Heat a little oil in a medium ovenproof saute pan, and brown patties over medium-low heat 2 minutes on each side; transfer pan to oven, and bake until cooked through, about 10 minutes.
APPLE-SAGE SAUSAGE PATTIES
Steps:
- Peel and coarsely shred apple; place apple in a colander over a plate. Let stand 15 minutes. Squeeze and blot dry with paper towels., In a large bowl, combine egg, parsley, sage, garlic, seasonings and apple. Add turkey; mix lightly but thoroughly. Shape into sixteen 2-in. patties. Place patties on waxed-paper-lined baking sheets. Refrigerate, covered, 8 hours or overnight., In a large nonstick skillet, heat 2 teaspoons oil over medium heat. In batches, cook patties 3-4 minutes on each side or until golden brown and a thermometer reads 165°, adding more oil as needed. Freeze option: Place uncooked patties on waxed-paper-lined baking sheets; wrap and freeze until firm. Remove from pans and transfer to a freezer container; return to freezer. To use, cook frozen patties as directed, increasing time to 4-5 minutes on each side.
