  • Cortland. The slightly sweet, slightly tart all-purpose Cortland apple variety is ideal for baking whole because it maintains its portly shape. Chopped or sliced, this apple is fine to fill a pie or strudel as well as stirred into pancakes or muffins.
  • Cordera. This ruby-color apple was developed at Cornell University—home of the oldest apple breeding program in the United States—and debuted in fall 2020.
  • Cosmic Crisp. With a balance of sweet and tart flavors and an unbelievably juicy bite, this firm apple is the offspring of Honeycrisp and Enterprise varieties.
  • Envy. Originally imported from New Zealand, the Envy apple type is cross between Braeburn and Royal Gala apples. It's now grown on the west coast in Washington.
  • Firecracker. These red-blushed apples have a rustic, partially russeted, reddish-brown appearance, with a full aroma and a sweet-tart flavor. A Firecracker's skin contains more flavor than others, while the russets—tiny cork cells on the skin—give it a slightly nutty flavor.
  • Golden Delicious. This huge, sweet golden apple is delicious raw and great when cooked or baked. The fruit's rich flavor and tender flesh is amazing in stir-fries, casseroles, cobblers, soups, stews, and sauces.
  • Granny Smith. This bright green fruit is on the tart, tangy end of the barometer. The Granny is firm when bitten into but won't hold up to prolonged heat—yet its high acid content makes it the apple of many a pie-baker's eye.
  • Jazz. Jazz apples are extra juicy with a sweet-tart flavor reminiscent of pears. They do well in pies and other baked recipes.
  • Lucy Varieties. Developed by growers in central Washington, Lucy apples are a striking new family of red-flesh apples that blend several popular varieties (of course, Honeycrisp is one!).
  • Newton Pippin. Another all-purpose fruit, the green-gold Newton Pippin is a good keeping apple. Its highly perfumed flesh is crisp and juicy and holds up well in the frying pan or oven.

  • Gala. 1930s. Story: Available year-round, this well-known type of apple is a cross between Kidd’s Orange Red and Golden Delicious. It’s the ultimate lunch box staple, with a pear-like quality, but can also be cooked down into a compote.
  • Lady. 1628. Story: One of the oldest varieties, Ladies are tiny and were first grown in the garden of Louis X11 during the French Renaissance. The fruit is traditionally used as decorations for Christmas wreaths or as garnish in a fruit basket.
  • Baldwin. 1740s. Story: The Baldwin was among the most popular American apples until 1934, when a freeze wiped out most of its trees. This particular type of apple has been making a comeback in recent years and is delicious baked into a crisp.
  • Gravenstein. 1790s. Story: In the U.S., this type of apple is grown almost exclusively in Sonoma County, CA, where it’s celebrated with an annual festival.
  • Esopus Spitzenburg. Early 1800s. Story: Said to be a favorite of Thomas Jefferson, this heirloom variety of apple was discovered in Esopus, NY, and is still grown at Monticello today.
  • McIntosh. 1820s. Story: McIntosh is parent to beloved varieties including Empire, Cortland, and Macoun. This type of apple is particularly popular in New England and often used in apple cider.
  • Cox’s Orange Pippin. 1825. Story: Cox’s Orange Pippin was England’s favorite for more than a century, but it has recently lost ground to more modern varieties like Gala.
  • York. 1830. Story: This type of apple has a distinctively lopsided shape. The red apple was discovered on a farm near York, PA. But it soon won fans in Virginia and further south, where it remains popular.
  • Northern Spy. 1840s. Story: New York and Connecticut both claim this apple variety as their own, but no one knows where it got its name. When eaten fresh, it serves up a particularly high level of vitamin C.
  • Granny Smith. 1860s. Story: Maria Ann Smith—or “Granny,” as she was called—discovered the seedling for this apple growing in her Australian compost pile.
