TASTY & HEALTHY APPLESAUCE BREAD

This is really good, and you'll be amazed at how low in fat and sugar it is! The recipe started as one from Sunset's Light and Healthy cookbook (1990), but I've tweaked it over the years, and I think I could get away with even less sugar. It's moist enough you don't need to spread it with anything -- just slice and enjoy. If you substitute craisins (sweeted dried cranberries), it works nicely for a holiday brunch or snack. Hope you like it.

Tasty & Healthy Applesauce Bread image

Steps:

  • Preheat oven to 350°F Grease a loaf pan.
  • Mix beaten egg with applesauce, oil sugars and salt, and combine thoroughly.
  • Stir in flours, baking soda and baking powder; mix well.
  • Stir in raisins and walnut pieces.
  • Pour into well-greased loaf pan and bake at 350° for 55 minutes, or until a toothpick inserted in center of loaf comes out clean.
  • Let it rest in pan for 10 min., then turn out and allow to cool on rack.
  • Stores up to 4 days in air-tight container.

Steps:

  • Throw the apples, apple juice and lemon juice into a pan and bring it to the boil over medium-high heat. Lower the heat and simmer until the apples are soft, about 15 minutes. Stir through the sugar and mix until melted. Add the cinnamon and stir through.
  • Puree the mixture in a food processor, blender or food mill. If not using right away, leave to cool and then refrigerate.

  • Cream butter and sugar till light, beat in egg.
  • Stir in flour, soda, spices, and salt.
  • Beat in applesauce, then raisins and nuts.
  • Pour into greased 9 by 5 inch loaf pan.

  • Cool in pan 10 minutes, remove from pan, may sprinkle with powdered sugar.

  • Generously grease two 7x3x2-inch loaf pans.
  • In a small bowl, combine topping ingredients; set aside.
  • In a medium bowl, combine applesauce, sugar, vegetable oil, eggs, and milk; set aside.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x5-inch loaf pan.
  • Spread pecans in a single layer on a baking sheet.
  • Bake pecans in the preheated oven until golden, 5 to 7 minutes. Remove pecans from oven and reduce oven temperature to 350 degrees F (175 degrees C).
  • Mix flour, brown sugar, cinnamon, baking soda, baking powder, nutmeg, and salt together in a large bowl. Stir applesauce, water, vegetable oil, and vinegar together in a separate bowl.   • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select cycle; press Start. Let the dough mix for 3 to 5 minutes, until all ingredients are thoroughly combined. If necessary, use a rubber spatula to push the dough from the sides of the bread pan. After 3 to 5 minutes have passed on the clock display, press Stop. Smooth out the top of the loaf with the rubber spatula. Select Bake setting and press Start.
  • To test the bread for doneness, insert a toothpick into the center top. Remove the toothpick. If the bread is done, the toothpick will come out clean. If there is dough on the toothpick, reset the machine to Bake and continue an additional 10 to 15 minutes. Test again with toothpick to assure the bread is completely baked. Remove the pan from the machine but allow the bread to remain in the pan for 10 minutes before removing the bread and placing on a wire rack to cool.
