LA ROSA
This is a tequila cocktail I created for my Cinco de Mayo party a few years back. The key is a splash of Ramazatti amaro, an Italian bitter spirit with notes of orange and spice that work really well with tequila.

Steps:
- In the bottom of a shaker, muddle the strawberry in the simple syrup. Add the tequila, amaro, and lemon juice and shake with ice. Strain twice through a fine-mesh sieve into a martini glass and top with the sparkling rosé. Garnish with the lemon twist.

At our last big family get-together, we sampled something like this someone bought from the Liquor Store. Yum. I havn't tried this recipe yet; but I like home-made Bailey's, so I'm expecting to like this one too.

- Blend until mixed and smooth. Store in refrigerator until serving time.
- I think, like the homemade Bailey's recipes, likely keeping chilled a week will allow the flavors to blend. All measurements are a starting point. If it needs more or less of something then adjust as needed.

CHICKEN BREAST A LA ROSE RECIPE

- Preheat oven to 350. Sprinkle chicken with salt and pepper. Over medium high heat, in a large skillet, heat 1 tablespoon olive oil and add the 1 tablespoon of butter, add chicken to HOT skillet and brown on both sides. (Do not move the chicken after it's placed in the pan). Transfer to heated platter. Melt the rest of the oil and butter in the same skillet. Add the onions and saute over medium heat until transparent but not colored. Add the garlic and saute for 1 minute. Add the flour and stir well. Add the mustard, wine and thyme and simmer for 5 minutes. Add the stock and simmer for another 10 minutes or until thickened slightly. Stir in honey. Return chicken to the pan and bring to a simmer. Cover and braise in the oven for 15 to 20 minutes. Calories: Chicken = 46 calories per ounce Sauce and Onions = 85 calories per 1/4 cup

- In a large skillet, heat olive oil over medium-low heat and add basil, thyme, oregano, parsley and dried red pepper flakes; stir together.
- Add onion, bell pepper and garlic and cook until onions are transparent; add tomato sauce and bring to a boil, stirring well. Add chicken bouillon and sugar; stir.
- While the sauce is cooking, bring a large pot of lightly salted water to a boil. Add pasta and cook according to the package instructions (fresh tortellini take less time than dried). Drain and set aside.
- Reduce heat, add cream and wine; bring close to a boil, stirring constantly. Add pasta and serve.

- Bring a large pot of salted water to a boil. Pat the chicken breast dry with a paper towel, and season both sides with salt and pepper. In a large skillet, heat the olive oil over medium high heat.
- Add the chicken breasts to the pan, allowing them to sear on one side for 6-7 minutes. Flip the chicken and sear on the other side for another 6-7 minutes. Remove the chicken breast from the pan and set aside on a cutting board to rest.
- Now, add the penne pasta to the boiling water and cook according to package instructions just until al dente. Drain. Meanwhile, to the pan drippings, add the garlic and cook for 1-2 minutes, taking care not to burn the garlic. Deglaze the pan with the rose and bring the liquid to a boil. Turn the heat down to a simmer, and allow the wine to simmer for 2-3 minutes.
- Add the crushed tomatoes and sugar, and bring to a simmer. Reduce the heat to low. When the tomatoes have stopped bubbling, stir in the heavy cream.
