Steps:
- Preheat the oven to 425 degrees F.
- Place the puffed pastry rectangles onto a baking pan that's been sprayed with nonstick spray or lined with parchment paper. Add the sugar, salt and lemon juice to the apples. Stir to combine. Allow to sit for a few minutes.
- Arrange the apple slices on the pastry rectangles in a straight line, overlapping as you go. Bake until the pastry is puffed and golden brown, about 20 minutes.
- Remove from the pan immediately and place on a serving platter. Serve with caramel sauce and chopped pecans.

- Preheat the oven to 350 degrees F.
- In a small saucepan, heat the orange liqueur. Turn off the heat and add the cranberries, making sure all the cranberries are submerged in the liquid. Set aside.
- In a small bowl, mix together the cinnamon and the orange zest. Stir in the flour, baking powder, and salt. Set aside.
- In a large bowl, mix together the eggs, butter, sugar, and vanilla. Add the dry ingredients and stir to combine. Add the apples, walnuts, and drained cranberries. Spoon the mixture into a lightly greased 8 by 8 by 2-inch glass baking dish or 8-inch cake pan. Bake until a wooden skewer inserted in the center of the cake comes out clean, about 30 minutes.
- To serve, while still warm cut into squares or wedges and serve with ice cream.

- Preheat oven to 350°F with rack in middle.
- Butter pan and fit a round of parchment paper in bottom. Butter parchment, then flour pan.
- Spread 1/2 stick butter thickly on bottom of a 12-inch heavy skillet and sprinkle 1/2 cup sugar evenly over butter. Arrange apples, cut sides down, over sugar and sprinkle with 1/4 teaspoon salt. Cook over medium heat, turning apples occasionally, until sugar is caramelized and apples are tender and golden brown, 15 to 20 minutes.
- Arrange apples, cut sides down, in concentric circles in bottom of cake pan, then pour over any caramel from skillet.
- Whisk together flour, baking powder, baking soda, allspice, cinnamon, nutmeg, and remaining 1/2 teaspoon salt.
- Pulse walnuts with remaining cup sugar in a food processor until finely ground.
- Beat remaining 1 1/2 sticks butter in a bowl with an electric mixer until creamy, about 3 minutes. Add walnut sugar and beat until just combined. Add eggs 1 at a time, beating well after each addition, then beat in extracts. At low speed, mix in flour mixture until just combined (batter will be thick).
- Dollop batter over apples and spread evenly. Bake until torte just begins to pull away from side of pan and a wooden pick inserted in center comes out clean, 45 to 50 minutes. Cool torte in pan on a rack 30 minutes. Put rack over torte, then invert torte onto rack.
- Melt apple jelly in a small heavy saucepan over low heat, stirring. Brush apples generously with jelly, then cool torte completely, 1 to 1 1/2 hours.

- Roll puff pastry into a 14-by-16-inch rectangle on a lightly floured surface. Cut a 1-inch-wide strip from each side of dough. Brush edges with egg wash, and top with cut strips to form a crust. Prick middle of dough all over with a fork, and transfer to a parchment-lined baking sheet. Refrigerate for 30 minutes.
- Preheat oven to 400 degrees. Spread applesauce onto middle of dough using an offset spatula. Arrange apple wedges over applesauce in 3 tightly overlapping rows. Brush apples with melted butter. Brush crust with egg wash, and sprinkle entire surface with sanding sugar. (Unbaked tart can be frozen for up to 3 days.)
- Bake until edges start to puff, about 20 minutes. Reduce heat to 375 degrees, and bake, rotating halfway through, until pastry is dark golden brown and apples have caramelized, 25 to 30 minutes more. Transfer sheet to a wire rack, and let cool for 10 minutes.
- Warm apricot preserves and water in a medium saucepan over medium heat. Brush apples with warm apricot preserves. Dust with confectioners' sugar if desired, and cut into squares using a pizza wheel or a knife. Serve warm with whipped cream if desired.

- Preheat oven to 350 degrees F (175 degrees C). Butter and flour one 10 inch tube pan.
- Cream together the butter and sugar. Add eggs one at a time beating well after each addition. Set aside.

- In a small bowl, cream butter and sugar until light and fluffy. Beat in egg yolk. Gradually add flour just until blended (mixture will be crumbly). , Press onto the bottom and up the sides of an ungreased 9-in. tart pan with removable bottom. Place pan on baking sheet. - First make the date/nut crust -- best to do in 2 batches in your blender or food processor.
- Add 1 1/4 cups walnuts with 1 1/4 cups dates in blender or processor and pulse for 40 secons until coarse. Remove and add the remainder of nuts and dates and repeat process.
- Press in 9-inch tart pan. Put aside.
- Tart Directions:.
- Squeeze the juice of 1 lemon and add to the 2 Celsius water.
- Slice cored apples into fourths. Slice crosswide into 1/4 " slices.
- Put in lemon water and drain in a colander when all apples are sliced.
- Place apples in a large skillet and add the apple juice, honey, raisons, cinnamon, allspice, and cloves. Cook about 10 minutes over medium heat, stirring frequently.
- Remove apples with a slotted spoon to a bowl and cool completely.
- Reduce liquid to about half. Remove from heat and cool.
- Spread apples over crust. Brush syrup over the apples. Chill at least 2 hours.
- Enjoy!

- In a 325° oven, in a pie pan, bake almonds until golden, about 8 minutes, stirring occasionally. Let cool.
- In a food processor or bowl, mix flour and 1 T. sugar. Add 1/2 cup butter, cut into pieces (reserve remaining 1/4 cup butter for step #3). Whirl or rub with your fingers until mixture forms fine crumbs. Add 1 egg yolk; whirl or mix with a fork until dough holds together. Pat into a smooth ball, then firmly press dough over bottom and up sides of a 9-inch tart pan with removable rim.
- In food processor (same one, no need to wash), whirl almonds and 1 cup sugar until nuts are finely ground. Add remaining butter and the whole eggs; whirl until smooth.
- Peel and core apples; slice 1/8-inch thick. Overlap slices neatly in dough-lined pan. Pour nut mixture over fruit.
- Bake in a 325° oven until crust is browned and apples are tender when pierced, 50 to 60 minutes.
- In a 6 to 8-inch frying pan over medium heat, stir jam until melted; add liqueur. Spoon warm jam evenly over hot tart. Return to oven and bake until jam bubbles slightly, 3 to 5 minutes.
- Let tart cool on a rack at least 30 minutes; remove pan rim. Serve warm or cooled off.

Sprinkle the ice water on top and stir just until combined. If the dough is sticky, work in 1 more tablespoon of flour. Shape the dough into a ball and pat it out to a 6-inch disk. Wrap in wax paper and refrigerate for at least 1 hour or overnight.
- Preheat the oven to 400°. On a lightly floured surface, roll out the dough to a 13-inch circle. Transfer the dough to an 11-by-1-inch tart pan with a removable bottom. Trim the overhang flush with the rim and prick the bottom all over with a fork. Butter a large piece of foil, set it buttered side down on the dough and fill with rice or pie weights. Bake for about 20 minutes, or until the edges are golden. Remove the foil and weights and bake for about 5 minutes longer until the bottom is just cooked through. Let cool slightly. Lower the oven temperature to 375°.
- In a food processor, pulse the walnuts until finely ground but not pasty. In a medium bowl, beat the butter with 1/3 cup of the sugar. Beat in the egg, rum and flour until blended. Fold in the walnuts; the mixture may look curdled, but it won't affect the tart.
- Peel, halve and core the apples and cut them lengthwise into 1/8-inch slices. Transfer to a medium bowl and toss with the lemon juice, cinnamon and nutmeg.
