CREAMY ARTICHOKE AND HEIRLOOM TOMATO TART

Steps:
- Preheat the oven to 375 degrees F. Line a half-sheet pan with parchment paper and set aside.
- Using a half-sheet pan as a guide, roll the Flaky Pastry Dough out to a bit larger than the sheet pan (13 by 18 inches). Trim the dough with a sharp knife and transfer to the prepared sheet pan (it should fit snugly). Refrigerate for 20 minutes to chill.
- Dock the dough with a fork and bake until risen and golden brown on top, about 35 minutes. Set aside.
- In a skillet, combine the olive oil, onions and garlic; saute over medium heat until the onions have softened, about 15 minutes. Add the maple syrup and paprika and stir to combine.
- In the bowl of a food processor, combine the cream cheese, artichoke hearts, Parmigiano-Reggiano, mayonnaise, the onion mixture and salt and pepper to taste. Pulse until mostly smooth, with a few small artichoke pieces remaining.
- Gently spread the artichoke mixture over the pastry, leaving a 1/2-inch border. Top with the sliced tomatoes. Bake until the edges of the filling are beginning to brown, about 15 minutes.
- Top with the fresh herbs. Serve warm and immediately.
- Add the flour and salt to a large bowl and stir to combine. Add the butter and toss to combine. With your fingers, begin to "smush" the butter into flat pieces. Continue smushing until all the butter is flattened but none of the pieces are larger than a quarter. The flour will look like coarse cornmeal.
- Add the water, quickly folding it in with a wooden spoon to distribute the moisture. (Do not stir vigorously--the dough should appear shaggy.) Use your hands to break up any large clumps of moisture. Then use your knuckles or a palm to smear the dough up the sides of the bowl (a technique known as fraisage). This distributes the butter over a larger surface to achieve larger flakes and compact the dough. Once you've gone around the bowl one time, fold the dough over itself a few times to pick up any dry bits from the bottom. Gently press the dough into a disk. (Note: The dough should remain very cool to the touch throughout the process. If it approaches room temperature, refrigerate it for 5 to 10 minutes to chill.)
- Transfer the dough to a lightly floured work surface and roll out to a 10-by-12-inch rectangle. Perform a letter fold by folding one of the short ends towards the middle and the other short end over the first, like folding a business letter.
- Turn the dough 90 degrees, so the long side faces you, and perform a second letter fold. Turn the dough 90 degrees again; perform a third letter fold.
- If the dough still feels cool, it can be used immediately. Otherwise, wrap it in plastic wrap and chill for at least 20 minutes. The dough can be refrigerated for up to 1 week or frozen for up to 1 month.
ARTICHOKE AND FETA TARTS
This recipe gives you yet another excuse to keep a package of puff pastry in the freezer. If you prefer, swap out the marinated artichoke hearts for drained canned or thawed frozen artichoke hearts.

- Preheat oven to 425°F. Blend cream and 2 ounces feta in a food processor until smooth; season with salt and pepper.
- If using 14-ounce package of puff pastry, cut in half and roll out each half on a lightly floured surface into a 16x10" rectangle. (If using 17.3-ounce package, use 1 sheet of pastry for each tart.) Transfer each piece of pastry to a parchment-lined baking sheet. Using a paring knife, lightly score pastry (do not cut all the way through), leaving a 1" border.
- Spread feta mixture over pastry, dividing evenly and staying within border. Arrange artichoke hearts over feta mixture and crumble remaining 2 ounces feta over; drizzle with oil. Brush pastry border with egg.
- Bake tart until pastry is puffed and beginning to brown, 10-15 minutes. Reduce oven temperature to 375°F and continue to bake until pastry is deep golden brown and cooked through, 20-25 minutes longer. Serve warm or at room temperature.
- Do Ahead
- Tart can be made 2 hours ahead. Let stand at room temperature.
- Variations:
- The feta and puff pastry in this tart pair well with any number of toppings. In place of the artichokes, try:
- Red Pepper + Olive: Scatter feta cream with jarred roasted red peppers, black olives, and chopped fresh rosemary, then bake. Finish with a drizzle of olive oil.
- Asparagus + Egg: Top cheese with asparagus that's been halved lengthwise. Once out of the oven, slide on a few fried eggs.
- Smoked Salmon + Scallion: Bake tart with feta only. When slightly cooled, add smoked salmon and sliced scallions.
EASY BAKED ARTICHOKE RECIPE BY TASTY

- Remove the stem of the artichoke. Cut about 1 inch (2 cm) off the top of the artichoke. Take a pair of kitchen scissors and snip off the thorns on the tip of the artichoke petals.
- Take half a lemon and rub lemon juice over the cut portion of the artichoke to prevent it from browning. Drizzle with olive oil and season with salt and pepper.
- Spread open the petals and rub minced garlic all over. Add the parsley and Parmesan; make sure to get it in between the petals. Top with more pepper if desired.
- Wrap the artichoke in aluminum foil. Bake at 425°F (220°C) for 1 hour and 20 minutes.
- When done, serve with extra parsley, lemon wedge and your favorite dipping sauce.

When my grandmother passed away I found this handwritten recipe tucked away among her belongings. I am posting it here for safekeeping. I am not sure what kind of cheese she used. I guess feel free to use your favorite! Serving size is a guess.

- Remove artichoke hearts from jars, reserving liquid.
- Chop up artichoke hearts and place in large saucepan. Add reserved liquid, chopped onion and garlic. Sautee until tender.

This simple but substantive vegetarian dish came to The Times from Carol Lamont in 2015 when the Well blog invited readers to share their favorite meatless Thanksgiving recipes. Yes, artichokes are not in season in the fall, but frozen work beautifully here.

- Preheat oven to 325 degrees Fahrenheit. Thaw frozen artichokes and cook, if necessary, according to package directions. Chop into fine pieces.
- Using a hand mixer, beat eggs at high speed until frothy. Add the artichokes, garlic, onion, parsley, bread crumbs, Parmesan, olive oil, Italian seasoning, pepper and salt. Mix well.
- Pour into a lightly oiled 9 x 13 glass baking dish and cook for 45-50 minutes, until golden brown and set in the center. Allow to cool and cut into 1 ½-inch squares.

ARTICHOKE PESTO TORTA

- Blend the artichokes, parsley, nuts, lemon peel, lemon juice, garlic, 1 teaspoon salt, and 1/2 teaspoon pepper in a food processor, scraping the sides of the bowl occasionally, until the artichokes are very finely chopped. With the machine running, gradually pour in 1/4 cup oil. Continue blending until the pesto is creamy. Season the pesto, to taste, with more salt and pepper.
- Using an electric mixer, beat the cream cheese and remaining 2 tablespoons oil in a large bowl until light and fluffy.
- Spray a 2 to 3 cup bowl with nonstick spray. Line the bowl with plastic wrap, extending the plastic over the sides. Spread enough cream cheese mixture evenly over the bottom of the prepared bowl to form a 1/2-inch layer. Top with enough pesto to form a 1/2-inch layer. Repeat layering the remaining cream cheese mixture and pesto. Cover and refrigerate at least 4 hours and up to 2 days.
- Invert the torta onto a platter and remove the plastic. Garnish with parsley sprigs. Serve with bread, crackers, and vegetables.
EASTER ARTICHOKE PIES (TORTE DI CARCIOFO PER PASQUA)
This pie is traditionally made with 33 layers of dough, one for each of the years that Christ lived. But some make this with twelve - for each of the apostles (and a whole lot easier!)

- Mix together flour, olive oil, egg, salt, and 3/4 cup cold water in a large bowl until dough just holds together (it should be fairly dry).
- Divide dough into 2 balls, using two-thirds of dough for bottom crusts and one-third for top crusts.
- Roll out dough for bottom crusts on a floured surface until very thin and almost transparent.
- Cut out eight 6 and 1/2-inch circles.
- Wrap bottom crusts in plastic and set aside.
- Roll out dough for top crusts on floured surface and cut out eight 5-inch circles.
- Wrap top crusts in plastic and set aside.
- Prepare the Filling:.
- Heat 2 tbsp olive oil in a pan over medium heat.
- Add onions and cook until slightly golden, about 6?8 minutes.
- Remove from heat and allow to cool.
- Mix together ricotta cheese, parsley, Parmigiano-Reggiano cheese, and sauteed onions in a large bowl.
- Season to taste with salt and pepper.
- Preheat oven to 375?F.
- Assemble pies:.
- Place bottom crusts on a lightly oiled and floured baking sheet.
- Spoon 1 and 1/2 tbsp filling on each bottom crust and spread evenly, leaving 1 and 1/2-inch of crust exposed around edge.
- Divide artichokes between pies, arranging on top of filling, then spoon another 1 and 1/2 tbsp filling on top of each and add top crusts.
- To form pies, fold edges of bottom crusts over edges of top crusts.
- Pinch to seal, and then fold over again to create a slightly thicker edge.
- Brush tops with a little olive oil.
- Slit top of each pie 4 times in a crisscross pattern to allow steam to vent during baking.
- Bake until slightly golden, about 25-30 minutes. Serves 8.

ARTICHOKE AND SPINACH TORTA RECIPE

- 1. Heat the oven to 375-degrees F. In a nonstick medium frying pan, heat 1 Tbs olive oil over medium heat. Add the shallots and cook about 1 minute. Add the artichokes, lemon juice, water and 1/2 tsp salt. Cover and cook until the artichokes are tender, 5 to 6 minutes. Uncover and cook, stirring occasionally, until all the liquid has evaporated. Let cool. 2. In a large pot of boiling salted water, cook the spinach for 2 minutes. Drain, refresh with cold water, squeeze out as much water as possible, and finely chop. 3. In a large bowl, whisk together the eggs and the half-and-half. Season with 1 tsp salt and a few grinds of pepper. Add the cheese, spinach, basil, prosciutto and the artichoke mixture and stir well. 4. Choose a baking dish or roasting pan large enough to hold an 8-inch nonstick frying pan. Add hot water to the dish to cover about one-quarter of the frying pan's depth to create a water bath. 5. Heat the remaining 1 Tbs oil in the 8-inch pan over medium-high heat until a drop of the egg mixture sputters when added. Add the egg mixture and cook for 4 to 5 minutes. With a spatula, lift the torta away from the edges of the pan to gauge its progress; when you see that the torta has browned nicely all around, remove the pan from the heat and immediately put it in the water bath to stop the browning. Put the pan and water bath into the oven and bake until the torta is firm in the center, about 40 to 45 minutes. 6. Remove the frying pan from the water bath and invert the torta on a cutting board. Let cool for at least 20 minutes before cutting into 1-inch chunks and serve.
