TANGY FRUIT SALAD

I got this recipe from dear friends many years ago, and it has been a mainstay at my house ever since. This salad is a sweet refreshing side dish or light dessert.-Darlene Alexander, Nekoosa, Wisconsin

Tangy Fruit Salad image

Steps:

  • Drain pineapple juice into a small bowl; set aside. In a large serving bowl, combine the pineapple, fruit cocktail, mandarin oranges, bananas, apples and strawberries if desired., Whisk the pudding mix and drink mix into the reserved pineapple juice. Fold into fruit mixture. Refrigerate before serving.

Nutrition Facts :

1 can (20 ounces) pineapple chunks
1 can (15 ounces) fruit cocktail, drained
1 can (11 ounces) mandarin oranges, drained
2 medium bananas, sliced
2 medium apples or pears, cut into chunks
1 cup sliced fresh strawberries, optional
1 package (3.4 ounces) instant vanilla pudding mix
1/4 cup orange breakfast drink mix

Tropical Fruit Salad with Ginger Syrup image

Steps:

  • Combine the sugar, 1/4 cup water, ginger and lime zest in a small saucepan. Bring to a boil and cook until the sugar is melted. Remove it from the heat and refrigerate until cold.
  • Strain the mixtures into a large bowl and toss in the strawberries, kiwis, mango, oranges, pineapple and papaya to coat. Cover and refrigerate again until cold, at least 1 hour.
  • Serve in small bowls and garnish with the chopped mint.

1/4 cup sugar
One 3-inch piece fresh ginger, peeled and chopped
Zest of 1 lime
1 pint strawberries, hulled and halved or quartered
2 kiwi, peeled, sliced and quartered
1 mango, cut into chunks
1 orange, segmented
1 small pineapple, cut into chunks
1 papaya, cut into chunks
Handful fresh mint, chopped

AUNT SHIRLEY'S "TROPIC-TANG" FRUIT SALAD

This is a unique Fruit Salad that is wonderful to have during the summer. (Although, I also find myself craving this during the winter months too!) I always have requests to bring this to family functions and never have any left over. As a result, I always double this recipe when preparing it for family gatherings.

Aunt Shirley's

Steps:

  • Mix together Pineapple Chunks (with juice), Tang, and Instant Vanilla Pudding until incorporated.
  • Drain juice from canned Tropical Fruit and add fruit to Pineapple mixture.
  • Cool mixture until ready to serve (juice will thicken.).
  • Slice bananas (just before serving) and mix ingredients together.
  • Serve from bowl or from individual champagne glasses with a sprig of mint for decoration.
  • NOTE: Best when kept cool or served immediately.

Steps:

  • Crumble package of ramen noodles.
  • Discard seasoning packet.
  • Saute noodles in butter until browned.
  • Mix all the salad ingredients together including the ramen noodles.
  • Chill.
  • Mix dressing ingredients and pour over salad.
  • Enjoy!
