A Barbadian twist on a British favourite

Bajan Macaroni Pie image

Steps:

  • Make up the pasta, according to the pack instructions - drain well and divide between 2 medium dishes or 1 large one
  • Make a roux - melt the butter, add the green seasoning and hot pepper sauce, to taste. Add the flour and stir well. Gradually add the milk, stirring well between additions. When it has the consistency of really thick cream, stir in half of the cheese. Add enough milk to a double cream consistency. Check for seasoning and add salt and pepper to taste.
  • Mix the sauce with the pasta, don't make it too wet. It should come to the top of the pasta, that should be enough. Cover the surface with the rest of the cheese and put in a pre-heated oven 180c for approx 45 minutes

Steps:

  • Preheat oven to 350* Cook and drain noodles. Transfer to a large bowl and add all ingredients. Mix well and place in large Pyrex dish. Add old cheese, bread crumbs and Parmesan. Cook in 350* oven for 30 to 45 minutes or until top looks slightly brown.

Pie:
1 lb. rice penne or fusilli noodles
1 green pepper, chopped
1 Tbsp. paprika
1 tsp. white pepper
2 Tbsp. mayonnaise
2 Tbsp. ketchup
1 onion, chopped
1 Tbsp. mustard
fresh parsley, chopped
3 Tbsp. Bajan seasoning (see below)
2 pkgs. shredded cheese, TexMex/Southwestern and 3 Cheese
Caribbean hot sauce, to taste
Topping:
grated old white cheddar
bread crumbs
Parmesan cheese
Bajan Seasoning (Green Sauce):
white pepper
garlic
onion
clove
thyme
green onions
parsley
hot pepper
paprika
Process and let sit. Can be purchased at Mugena - 911A Richmond Road as "green sauce".
