BAKED APPLE & CRANBERRIES WITH DUMPLINGS
Sweet apples and tart cranberries are always a yummy combo. This dessert isn't overly sweet but it is enough to satisfy your sweet tooth thanks to the honey and cinnamon. The dumplings are a biscuit type and go great with the apples. Delicious with whipped cream, but vanilla ice cream would be fab too. A perfect fall dessert!

Steps:
- 1. Grease bottom of casserole dish; add chopped apples and spread cranberries.
- 2. Add walnuts.
- 3. Sprinkle with cinnamon/sugar.
- 4. Drizzle honey over all.
- 5. Bake in 350 degree preheated oven about 25 minutes.
- 6. Then top with Bisquick mixture/dumplings, about four small dumplings.
- 7. Continue baking uncovered for 20 minutes. Serve hot with whipped cream on top.

- In a small bowl, combine the sugar, bread crumbs, cinnamon and nutmeg. On a lightly floured surface, roll pastry into two 12-in. squares. Cut each sheet into nine 4-in. squares., Brush squares with egg. Place 1 teaspoon sugar mixture in the center of a square; top with 2 tablespoons chopped apple and 1 teaspoon sugar mixture. Gently bring up corners of pastry to center; pinch edges to seal. Repeat with remaining pastry, crumb mixture and apples. Place on greased baking sheets., In a small bowl, combine the streusel ingredients. Brush remaining egg over dumplings; press streusel over tops., Bake at 400° for 14-18 minutes or until golden brown. Place pans on wire racks. Combine icing ingredients; drizzle over dumplings.

OLD-FASHIONED APPLE DUMPLINGS
These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

- Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
- On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
- With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
- In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
- Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

BAKED APPLE WITH CRANBERRIES
I had this for breakfast this morning. My internet was off and I couldn't look up baked apples so I made this one up. I enjoyed it so I thought I would post it. I used brown sugar substitute, but you can used regular brown sugar. I kept it low in both sweet and butter but you can add more if you want. I baked it in a toaster oven at 350°F for 30 minutes. If you use sweetened cranberries, I would cut back on the sugar. Substitute margarine for butter and this is a vegetarian recipe.

- Peel each apple about a fourth of the way down; remove core and seeds.
- In a small bowl, combine cranberries, sugar, cinnamon, nutmeg and walnuts.
- Spoon cranberry mixture into center of each apple.
- Place in a 4-quart or larger crock pot.
- Cover and cook on low 4 to 5 hours or until apples are tender.
- Serve warm or at room temperature.
- Top with whipped or sour cream, or vanilla ice cream, if desired.
