- Set meat sauce aside.
- Cook pasta according to package directions; drain.
- Place pasta in a lightly greased 13x9 inch baking dish.
- Stir together sour cream, cream cheese, and green onions.
- Spread over pasta.
- Top with meat sauce.
- Bake at 350 degrees for 20-25 minutes or until thoroughly heated.
- Sprinkle with Cheddar cheese, and bake 5 more minutes.

- Heat a large saucepan over medium heat and add the oil. When hot, add the meat and cook, without stirring, until browned, 3 to 5 minutes. Break it up with a wooden spoon, then add the onion and garlic and cook, stirring, until starting to soften, about 2 minutes. Add the tomato paste and cook for 2 to 3 minutes. Add the wine and bring to a simmer. Add the crushed tomatoes and oregano and season with salt and pepper. Simmer until thickened and the flavors come together, about 1 hour.
- About 20 minutes before the sauce is done, bring a large pot of water to a boil and salt liberally. Drop in the pasta, give it a stir and cook until al dente according to the package instructions. Drain the pasta and add it to the sauce. Remove from the heat, toss in the cheese and serve.

- heat oven to 400.
- oil a 13x9 baking dish.
- heat oil in a pan over med- high heat.
- cook onion until it starts to soften.
- add beef and cook until it is no longer pink.
- drain off any excess fat.
- add tomato and salt and bring to a simmer.
- cook about 10 minutes, until most of the tomato liquid evaporates.
- remove from heat and stir in the pesto.
- while all this is going on, you should be cooking your pasta in boiling, salted water.
- drain pasta and toss with the sauce.
- put 1/2 of the pasta in baking dish.
- top with 1/2 the mozzarella and 2 tbsp of the parmesan.
- layer the remaining pasta on top, topping it with the remaining cheeses.
- bake until bubbling.

- Preheat oven to 375°F Cook pasta according to package directions. Drain well.
- Meanwhile, in a food processor or blender, combine undrained tomatoes, tomato paste, wine or tomato juice, dried oregano, pepper and crushed red pepper. Cover and blend or process until smooth. Set aside.
- In a large skillet, cook ground beef and onion until meat is brown. Drain off fat. Stir tomato mixture into meat mixture in skillet. Bring to boiling; reduce heat. Cover and simmer for 10 minutes. Stir in cooked pasta, and olives.
- Divide the pasta mixture among six 10 to 12 ounce individual casseroles. Bake, covered, for 15 minutes. (Or spoon all of the pasta mixture into a 2-quart casserole. Bake, covered to 30 minutes). Sprinkle with mozzarella cheese. Bake, uncovered, about 5 minutes more or until cheese is melted.

- In a medium frying pan, heat the oil and butter over low heat. Add the onion, carrot, celery, garlic, parsley and basil and cook until very soft, about 20 minutes.
- Raise the heat to moderate, add the ground beef, fennel seed, salt and pepper and cook, stirring, until the meat is no longer pink, about 5 minutes.
- Add the wine and cook until almost evaporated, about 5 minutes.
- Add the tomatoes with their juice and simmer, covered, for 30 minutes.
- Stir in the parmesan.
- Heat the oven to 350F.
- In a large pot of boiling, salted water, cook the rigatoni until almost done, about 12 minutes. Drain.
- Lightly oil a 3 quart oval baking dish. Toss the pasta with the meat sauce and put half of it in the baking dish. Top with half the mozzarella. Repeat with remaining pasta and mozzarella.
- Bake until the pasta is piping hot, about 20 minutes.
