FULL MONTY BREAKFAST
This is the best way to cook a "Full English." Serve it with the HP or tomato ketchup along with a nice cup of tea.

Steps:
- Line up tomatoes in a large roasting tray, scored sides up, with the mushrooms, the black pudding and the sausages. Let everything overlap so that the flavours really get in there. Drizzle with olive oil and sprinkle with some salt and pepper, then place under a preheated medium grill.
- Prepare the scrambled eggs by whisking with the milk. Melt some butter in a non-stick pan and pour in the eggs. Keep the heat low and gently stir to scramble. Remove the tray from under the grill and drape the bacon across the tomatoes and black pudding. Place back under the grill. When the eggs are just about done, season them and serve on some thick slices of toasted bread with a bit of everything else on your plate too!
SWEET CHERRY TOMATO AND SAUSAGE BAKE
There are so many things I love about this dish: it's all cooked in 1 pan; we're using more robust herbs like thyme, rosemary and bay with the tomatoes, which work really well; the half-roasted, half-stewed fresh tomatoes turn into a lovely rich and chunky sauce which is miles better than anything you can get if using canned tomatoes; and we're roasting the sausages, which I think is far better than frying or broiling them. Try to buy the best fresh coarsely ground sausages you can. PS Any leftovers can be chopped up and made into a wonderful chunky pasta dish, using penne or rigatoni, the next day.

Steps:
- Preheat the oven to 375 degrees F. Get yourself an appropriately sized roasting pan, large enough to take the tomatoes in 1 snug-fitting layer. Put in all your tomatoes, the herb sprigs, oregano, garlic and sausages. Drizzle well with extra-virgin olive oil and balsamic vinegar and season with salt and pepper. Toss together, then make sure the sausages are on top and pop the pan into the oven for half an hour. After this time, give it a shake and turn the sausages over. Put back into the oven for 15 to 30 minutes, depending on how golden and sticky you like your sausages.
- Once cooked, you'll have an intense, tomatoey sauce. If it's a little too thin, lift out the sausages and place the pan on the stove to cook it down to the consistency you like - I tend to make mine quite thick - then put the sausages back in. Check the seasoning and serve either with a good-quality loaf of bread warmed through in a low oven for 10 minutes (great for mopping up the sauce!) or with mashed potato, rice or polenta, a green salad and a nice glass of wine.

QUICK SAUSAGE MEATBALLS WITH A TOMATO AND BASIL SAUCE, SPAGHETTI AND SWEET RAW PEAS
This is a fantastic recipe that completely celebrates everything I love about peas. Even though they only make an appearance right at the end, it's a star performance. I like to serve a pile of unshelled peas in the middle of the table so that everyone gets to shell some over their own plate. It's also an incredibly fast recipe - you can be sitting down to eat within a minute of the pasta being done. The key to getting it right, though, is to buy really good-quality sausages

Steps:
- Heat a large saucepan and add a few glugs of olive oil. Snip the sausages apart, then squeeze and pinch the meat out of the skins so that you get little meatball shapes - don't make them too big or they will take too long to cook. Try to get at least 3 balls out of each sausage. Don't worry about rolling them into perfect balls and making them look all fancy - rough and rustic is good! Put them into your pan. Keep frying and turning the meatballs until they're golden brown and cooked through.
- Meanwhile, put the spaghetti into a large pan of salted boiling water and cook according to the package instructions until al dente.
- To make your tomato sauce, heat a separate pan and pour in some olive oil. Add the garlic and the chopped basil stalks and move them around the pan for a couple of minutes. Put some small basil leaves aside for later, and sprinkle the rest into the pan. Add the tomatoes and season carefully with salt and pepper, to taste. Bring to a simmer, break up your tomatoes a bit more with a spoon and add a swig of balsamic vinegar - it's lovely for adding sweetness to the sauce.
- Add the herbs to the pan of sausage meatballs, tossing everything in all the lovely flavors. Cook for around 30 seconds. When your spaghetti is cooked, drain it and divide the pasta and meatballs between 4 bowls. Spoon over the tomato sauce. Sprinkle over the reserved basil leaves and serve with a handful of fresh peas per person in the middle of the table, so that everyone can have a go at shelling their own, and a little Parmesan for grating or shaving over the top.

MIDNIGHT PAN-COOKED BREAKFAST
Me and this dish go back a long way. To the pre-shaving days of being an underaged drinker down at the Wagon and Horses in Saffron Walden with a fake ID and all my village mates; Only once in a while, of course. But seriously, without trying to sound like a lagered up geezer, I think everyone's experienced the need for food around midnight, whether the binge was small or large, otherwise why would kebob shops be so popular in England?

Steps:
- First of all get the biggest pan available, preferably non-stick, and preheat it on the highest heat while you gather your ingredients. Obviously you wouldn't be organized at this point so it's a matter of using what you've got, but ideally I like to have mushrooms, bacon, tomatoes, sausages and eggs. By the time you have got these together, the pan will be hot so slice your sausages in half lengthways and pat them out flat so they cook quickly. Place into the pan at one side. On the other side, put tablespoon or so of oil and place a pile of mushrooms over it which can be sliced or whole. Shake the pan about a bit to coat the mushrooms and season with some salt and pepper. Push to one side and then lay some slices of bacon and halved tomatoes in the pan. Cook for a couple of minutes until the bacon is crisp and golden. Shake the pan a little and turn the bacon over. Now is the time to put a round of toast in the toaster.
- At this stage you should respect the rustic and authentic look and shuffle everything about so that it's all mixed together and add 2 or 3 eggs at different ends of the pan. The whites of the eggs will dribble in and around the sausage, bacon, tomatoes and mushrooms. You could turn the heat down a little at this point. Cook for another 1 or 2 minutes until the yolks are slightly soft or to your liking. In a non-stick pan I've always found the removal of this dish to the plate extremely easy as it resembles a frisbee and will slide onto your plate with no trouble at all. Doesn't that sound appetizing? But honestly, it really is a gem.
- Anyway, I always used to have 3 or 4 friends back to my house for munchies or to stay the night and this dish was devised so we didn't have too much trouble making it or much washing up to do. In actual fact, I only had to wipe the non-stick pan clean. It also makes its way from the pan to the plate quite quickly, as patience isn't a virtue at that time of night with my mates!.
- Finely chop all the ingredients that can be chopped. Put this mixture into a bowl and add the mustard and vinegar. Slowly stir in the olive oil until you achieve the consistency you are looking for and balance the flavors with salt and freshly ground black pepper, and if necessary more red wine vinegar. Yield: 8 servings;

- Salsa Verde is best made by hand by chopping very finely. It keeps well for a day but then starts to deteriorate. It's great with grilled, roasted or boiled meat, fish and vegetables. .
SAUSAGE LINGUINE
The philosophy that a little can go a long way is so important, just as this dish proves. Being able to buy small amounts of ingredients as you need them, like one sausage, is a great reason to shop at markets. Go on, do it!

Steps:
- Cook the pasta in a pan of boiling salted water according to the packet instructions, then drain, reserving a mugful of starchy cooking water.
- Meanwhile, trim the broccolini (halving any thick stalks lengthways to make them more delicate to eat). Place a large frying pan on a medium heat with 1 tablespoon of olive oil. Squeeze the sausage meat out of the skin into the pan, breaking it up with a wooden spoon. Once lightly golden, peel, roughly chop and add the garlic, followed by the anchovies, chilli flakes, broccolini and wine. Leave to bubble away while the pasta cooks.
- Toss the drained pasta into the sausage pan, then finely grate over the pecorino and drizzle with extra-virgin olive oil. Toss again, loosening with a little reserved cooking water, if needed, to create a light, creamy sauce. Taste and season to perfection, then serve right away.
