AMISH BAKED OATMEAL
I got this recipe from a bed and breakfast in Amish country of Pennsylvania. My family is Pennsylvania Dutch, so we were out there almost every summer. It's a great, filling breakfast. Serve with fresh or canned peaches and a splash of milk or half-and-half.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.
- Mix oats, brown sugar, milk, oil, eggs, baking powder, salt, and cinnamon together in a bowl using an electric mixer. Pour into the prepared pan.
- Bake in the preheated oven until set, 25 to 30 minutes, making sure not to let brown.

BAKED PEACH OATMEAL
This is my favorite breakfast during peach season! It's sweet and comforting, and so easy because it can be made the night before and just popped in the oven in the morning. This recipe is from the Churchtown Inn in Churchtown, PA, although I modified it slightly. If you use soy milk and a dairy-free margarine, it's dairy-free!

Steps:
- Whisk together soy milk, vanilla, and eggs until well combined.
- Add quick oats, brown sugar, baking powder, cinnamon, and salt; mix well.
- Stir in margarine and peaches.
- Pour into 8x8-inch baking dish; set at least 3 hours or overnight in refrigerator.
- Place cold dish in cold oven; set oven to 350 degrees and bake for 25 to 30 minutes, or until oatmeal is puffed and golden brown and a toothpick comes out clean.
- Let cool 10 minutes before serving.
- Serve in individual bowls with enough vanilla soy milk to moisten but not to make it mushy!

- Preheat the oven to 350 degrees F. Grease a 9-by-12-inch baking pan with butter.
- Combine the oats and sugar in a medium bowl, then pour in the milk.
- Add the vanilla seeds, cinnamon, nutmeg, salt and baking powder.
- Next comes the melted butter and the egg.
- Then just stir it all together into a big delicious oaty mess of wonder.
- Plop the mixture into the prepared pan and spread it out.
- Bake for 30 minutes, until set.
- Cut into squares while still warm. Serve with cream, brown sugar and berries.

- Preheat oven to 350°. In a large bowl, combine the oats, brown sugar, baking powder and salt. Whisk the egg whites, egg, milk, oil and vanilla; add to dry ingredients and stir until blended. Let stand for 5 minutes. Stir in peaches and blueberries., Transfer to an 11x7-in. baking dish coated with cooking spray. Sprinkle with walnuts. Bake, uncovered, until top is lightly browned and a thermometer reads 160°, 35-40 minutes. Serve with additional milk if desired.

MOIST BAKED OATMEAL
This recipe is adapted from Gourmet Magazine Dec 2007 Issue. The recipe calls for dried raisins but I use whatever I have on hand which is a bunch of different dried fruits. The texture is somewhere between bread pudding and cake. I omitted the sugar from this recipe, you might want to add between 2 Tb and 1/4 cup to the oat mixture.

- Set oven to 350°F Spray with non-stick an 8-in square baking dish.
- Mix oats, dried fruits, baking powder, 1 1/2 tsp cinnamon, and salt.
- In a separate bowl, mix applesauce, yogurt, eggs, milk, oil and vanilla. Stir into oat mixture and pour in baking dish.
- Smooth surface and sprinkle with cinnamon on top.
- Bake for 40 minutes or until toothpick comes out clean.
- Cool in pan for 20 to 30 minutes, cut into 6 squares and cool completely. Park in the fridge.
- When ready to serve them, put a piece on a plate, drizzle with a couple of tablespoons of milk, heat in the microwave for 1 minute. Add fresh fruits on top and enjoy.

- Preheat oven to 375 degrees. Butter an 8-inch square baking dish.
- Combine the oats, half the nuts, sugar, baking powder, cinnamon, and salt in a bowl. In another bowl, whisk the milk, egg, half the butter, and the vanilla.
- Arrange bananas in a single layer on the bottom of the coated baking dish. Sprinkle with two-thirds of the berries, then cover with the oat mixture. Slowly drizzle milk mixture over the oats. Gently tap dish on a work surface to distribute liquid. Scatter remaining berries and nuts across the top.
- Bake for 35 to 40 minutes, until the top is nicely golden and the oat mixture has set. Let cool slightly. Drizzle with remaining melted butter and maple syrup.

- Preheat the oven to 375°F/190°C with a rack in the top third of the oven. Generously butter the inside of an 8-inch/20cm square baking dish.
- In a bowl, mix together the oats, half the walnuts, the sugar, if using, the baking powder, cinnamon, and salt.
- In another bowl, whisk together the maple syrup, if using, the milk, egg, half of the butter, and the vanilla.
- Arrange the bananas in a single layer in the bottom of the prepared baking dish. Sprinkle two-thirds of the berries over the top. Cover the fruit with the oat mixture. Slowly drizzle the milk mixture over the oats. Gently give the baking dish a couple thwacks on the countertop to make sure the milk moves through the oats. Scatter the remaining berries and remaining walnuts across the top.
- Bake for 35 to 45 minutes, until the top is nicely golden and the oat mixture has set. Remove from the oven and let cool for a few minutes. Drizzle the remaining melted butter on the top and serve. Sprinkle with a bit more sugar or drizzle with maple syrup if you want it a bit sweeter.
