Steps:

This is one of my most requested food wishes, my all-purpose basic tomato sauce. Whenever I make a meat sauce, this is my base. You can only stir this with a wooden spoon, otherwise it's bad luck.

Steps:
- Place olive oil, onion, celery, and a pinch of salt into a large heavy saucepan or Dutch oven over medium-low heat. Cook until onions are very soft, about 15 minutes, stirring occasionally. Mix garlic into onion mixture and cook just until fragrant, about 1 more minute.
- Pour tomatoes and their juice into a large mixing bowl and use your hands to crush the tomatoes until they look pureed.
- Mix sugar, 1 teaspoon salt, anchovy paste, white wine vinegar, Italian herbs, and red pepper flakes into vegetable mixture. Raise heat to medium and cook just until liquid has evaporated. Stir in tomato paste and bring to a simmer. Pour in San Marzano tomatoes and parsley. Bring sauce to a simmer, turn heat to low, and simmer for 1 1/2 hours, adding a little water as the sauce cooks down. Stir occasionally.

PASTA WITH MEATBALLS IN BALSAMIC TOMATO SAUCE

- Heat oil in heavy large saucepan over medium-high heat. Add onion and garlic; sauté until soft and golden, about 5 minutes. Stir in tomatoes and wine. Simmer 10 minutes. Add meatballs and basil. Reduce heat and simmer, uncovered, until meatballs are heated through and sauce is slightly reduced, about 15 minutes.
- Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain; return to pot. Add meatballs with sauce and 1/2 cup Parmesan cheese. Season with salt and pepper. Transfer to bowl; sprinkle with 1/2 cup Parmesan cheese.
PASTA WITH RAW TOMATO AND BALSAMIC SAUCE
I think I found this recipe at a local farmers market. I haven't tried it yet, but it looked really good to me because I love the components of the recipe. At least this way I won't have to hunt for one more little piece of paper next time I have good summer tomatoes. Since it's an uncooked sauce, the highest-quality ingredients you can get your hands on are a must. Cook and prep times are approximate.

- Cook pasta to al dente, according to package directions. Drain and return pasta to pot.
- In a large bowl, dissolve brown sugar in the balsamic vinegar. Add the chopped tomatoes, olive oil, garlic, crushed red pepper, and salt.

- Prep the tomatoes, garlic, etc-- before boiling the pasta.
- Boil pasta while making the rest of the dish.

- Preheat the oven to 350°F.
- Cook the bacon until some of the fat is rendered and add the onions. Cook until the bacon is crispy and the onions are just caramelized. Add the garlic and cook for another 30 seconds to 1 minute.
- Remove the pan from the burner. Add the cans of tomatoes, the oregano, basil, parsley, balsamic vinegar, and sugar to the bacon, onions, and garlic. Mix to blend well. (Sauce can be prepared ahead of time and saved in the refrigerator).
- Put the chicken in a glass baking dish. Pour the sauce over the chicken.
- Bake for 30 minutes.
- Sprinkle the goat cheese over the chicken and bake for another 30 minutes.
- Serve over pasta with the sauce.
