  • Sprinkle chicken breasts with salt and pepper. In a large nonstick skillet, heat oil over medium-high heat. Add chicken; cook until a thermometer reads 165°, 8-10 minutes. Remove., Meanwhile, stir together next 5 ingredients until blended. Pour into skillet; add pears and dried cherries. Bring to a boil over medium-high heat; reduce heat and simmer, covered, until pears are tender, about 5 minutes. Return chicken to skillet; simmer, uncovered, until heated through, 3-5 minutes. If desired, sprinkle with additional minced rosemary.

Steps:

  • Preheat oven 400 degrees.
  • Arrange the chicken bone side down in a 9-by-13 inch glass or ceramic baking dish.
  • pour the vinegar over them and sprinkle evenly with the oil, oregano, salt and pepper.
  • Bake the chicken 20 minutes and baste with the vinegar juices.
  • Bake 20 minutes more (depending the size of breast) or until juices run clear.
  • Serve chicken with juices spooned over them.

  • Rinse the chicken and pat dry. Sprinkle with salt and pepper. Dredge the chicken in a mixture of flour, salt, and pepper; shake off any excess flour. Steps:

  • Remove the tips from the wings by cutting between the joints. Transfer the wings to a large resealable plastic bag.
  • Combine the honey, brown sugar, vinegar, ginger, garlic and lemon zest and juice in a large bowl. Season with salt and pepper. Pour half the marinade into the bag with the chicken. Squeeze out most of the air and seal the bag. Shake gently to distribute the marinade. Refrigerate for at least 4 hours.
  • Preheat the oven to 350 degrees F (180 degrees C).
  • Heat a large skillet over medium heat. Working in batches if necessary, sear the chicken wings, flipping once, until golden brown, about 3 minutes. Steps:

  • Make the chicken: Preheat a grill to medium high and oil the grates. Whisk the garlic, balsamic vinegar, olive oil, honey, oregano, 1/2 teaspoon kosher salt and the red pepper flakes in a shallow bowl.
  • Place the chicken between 2 sheets of plastic wrap and pound with a heavy skillet or the flat side of a meat mallet until an even 1/2-inch thickness. Marinate the chicken in the vinegar mixture while you make the peperonata.
  • Make the peperonata: Toss the bell peppers, red onion and grape tomatoes with olive oil and salt. Grill the peppers and onion over medium-high heat, turning, until charred, about 6 minutes. Grill the tomatoes in a grill basket, 3 to 4 minutes. Balsamic Chicken With Pears image

Steps:

  • Pat chicken dry with paper towels.
  • One at a time, place the chicken breast between two sheets of plastic wrap.
  • Using a meat mallet, carefully pound the chicken breasts to a uniform thickness of approximately 1/2-inch.
  • Season on both sides with salt and pepper.
  • In a large frying pan over medium-high heat, add the olive oil.
  • When the oil is hot, add the chicken and saute, turning once, for 3 to 4 minutes on each side, until golden brown.
  • Remove from heat and transfer to a platter, cover, and keep warm.
  • To the same pan, add the shallot and saute over medium-high heat for 2 minutes or until soft; decrease heat to medium and add the pears.
  • Continue sauteing, stirring occasionally for 3 to 4 minutes, until the pears are soft and golden brown.
  • To prepare the sauce, combine chicken broth, balsamic vinegar, sugar, and cornstarch in a small bowl.
  • Pour over the pear mixture; add the cherries. Increase heat to high and simmer, stirring frequently for 6 to 8 minutes or until the sauce thicksn slightly.
  • Return the chicken and any juices to the pan. Bring the mixture back to a simmer; decrease heat to medium.
  • Cook for 10 minutes or until a meat thermometer registers an internal temperature of 165 degrees F (juices will run clear when cut with the tip of a knife).
  • Taste and adjust the seasoning if necessary. Remove chicken from heat.
  • Place the chicken on individual serving plates or on a large platter.
  • Using a slotted spoon, mound the fruit over the top.
  • Spoon the sauce over the fruit and around the chicken.
  • Serve immediately.

  • Combine 1/3 bottle of balsamic vinaigrette dressing with the chicken tenders in a bowl. Toss together sliced mushrooms with 1/3 bottle of dressing in a separate bowl. Reserve the remaining 1/3 bottle. Allow the chicken tenders and mushrooms to marinate for at least 30 minutes.
  • Preheat the oven's broiler, and set the oven rack about 6 inches from the heat source.
