QUICK SKILLET KIELBASA PORK AND BEANS

- Preheat the broiler to high with a rack set 2-inches from the heat source.
- Heat the oil in a large skillet over medium-high heat. Add half of the kielbasa rounds, cut-side down, and cook until browned, about 2 minutes. Flip and cook for 1 minute more. Transfer to a paper-towel-lined plate. Cook the remaining rounds until both sides are browned. Add to the plate. Reduce the heat to medium, add the onion, and cook, stirring, until soft and slightly browned, about 5 minutes.
- Add the tomato paste, brown sugar, vinegar, and chipotle to the onion. Pour half a can of beans (including the bean liquid) into the skillet and mash with a fork until creamy. Then add the rest of the beans (including the bean liquid), the cooked kielbasa, 1/2 cup water, 1 teaspoon salt, and a few grinds of pepper. Simmer until thick and creamy, about 20 minutes.
- Toss the hot dog bun cubes with the melted butter on a baking sheet and sprinkle with salt and pepper. Broil until toasted and browned, flipping occasionally, about 2 minutes.
- Divide the kielbasa and beans among 4 bowls. Top evenly with the hot dog bun croutons and pickle relish.

EASY KIELBASA SKILLET DINNER
The house always smells awesome while this very tasty, filling meal is cooking. It makes kielbasa worth stocking up on when it goes on sale and uses basic/cheap ingredients overall. Vary the vegetables depending on what you have on hand. For example add/replace broccoli with a can of corn and/or peas, etc. If you like a little heat, sprinkle a little hot sauce on top after it's cooked. This should make about 4 servings, but it almost always turns out to be split into 2 large servings between the me and the boyfriend. We like to crisp up/brown the kielbasa slightly before adding the vegetables.

- Cook macaroni according to package directions. Meanwhile, in a large skillet, brown sausage in oil over medium heat; drain. Add the onions, zucchini, carrots and garlic; cook and stir until crisp-tender, 5-6 minutes. , Stir in spaghetti sauce and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Drain macaroni., In a small bowl, combine egg and ricotta cheese. In each of 2 greased 13x9-in. baking dishes, layer a fourth of each of the following: macaroni, meat sauce, ricotta mixture, cheddar and mozzarella. Repeat layers. BARBECUE KIELBASA AND BEANS
This is definitely one for those nights when you don't have much time to prepare dinner. It needs to bake for one hour but it's so fast to put together, that you could get it ready in the morning, and refrigerate until you get home, then just pop it in the oven. Very delicious and amazingly easy, what more could you ask for? From Heirloom Recipes, submitted my M.R. She suggests 2 pounds of kielbasa for 6 servings. I cut it down to one pound for us, but followed the rest of the recipe to have a fair amount of beans for a side dish. She also says you can make this in a slow cooker.

CHEESY GROUND BEEF, KIELBASA AND BEANS (STOVE TOP OR CROCK POT)
You can use any kind of dry smoked sausage for this. To make this in a crock pot, brown the first 6 ingredients in a skillet, place in the crock pot then add all remaining ingredients, cook covered on LOW setting for about 8 to 10 hours, stir in the cheese just before serving. This makes a lot, but it tastes even better served the next day! For this recipe the longer you cook it the better it will be so make this dish when you have a bit of time.

- Cook macaroni according to package directions, drain and set aside.

- In each of 2 greased 13x9x2 baking dishes, layer a fourth of the macaroni and meat sauce.

- Repeat the layers and top with the green onions.

- Bring a large pot of lightly salted water to a boil for pasta.
- Meanwhile, heat olive oil over medium-high heat in a deep skillet. Add onion and garlic to the hot oil and saute just until tender, about 5 minutes.
