BANANA CORNBREAD
Having vegan friends in college forced me to find some recipes that are friendly to their choice if I wanted to entertain. This recipe is delicious whether or not you are vegan. I've made it with almond, rice, soy, and regular milk and they are all very similar to identical in flavor and consistency.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Combine flour, cornmeal, milk, bananas, sugar, vegetable oil, baking powder, and salt together in a bowl until batter is smooth; pour into the prepared baking dish.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes.

STRAWBERRY BANANA BREAD WITH NUTS
I had some bananas that were overly ripe and some strawberries that were also on the ripe side. Since I was making banana-nut bread, I decided to add the strawberries to the batter. Perfect combination.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with nonstick spray. Line a baking sheet with parchment paper.
- Sift flour, baking soda, cinnamon, and salt together into a bowl.
- Cream sugar and butter together in a large bowl. Mix in sour cream, eggs, and vanilla. Add mashed bananas and mix until combined. Gradually mix in dry ingredients. Fold in strawberries and nuts. Pour into the prepared pan and set on the lined baking sheet.
- Bake in the preheated oven until golden brown and a toothpick inserted in the center comes out clean, 65 to 80 minutes.

- Preheat oven to 350°. Beat butter and sugar until blended. Add eggs, 1 at a time, beating well after each addition. Stir in banana and sour cream. Whisk together flour, cinnamon, baking soda and salt. Add to butter mixture, stirring just until moistened. Fold in 1/2 cup walnuts., Transfer to a greased 9x5-in. loaf pan. Bake at 350 degrees for 35 to 40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Cool completely. Yield: two loaves. Enjoy! Doesn't get much easier than this!!
- 2. I buy very ripe bananas on sale at the store and freeze them. I always have nuts in the freezer and buy the cornbread mixes when they are on sale and freeze them. You then have all the ingredients on hand and this is so easy to put together!
