Steps:

• Prick bottoms and sides of thawed crusts with a fork and bake per package directions for cream pies. Cool completely on wire rack before making the pies. In a large mixing bowl, vigorously whisk together the pudding mixes and milk for 1-2 minutes to thicken. Whisk in the mashed banana. Using a rubber spatula, gently fold in ONE tub of the Cool Whip. Divide the filling and spoon into the cooled pie crusts. Place in the freezer for an hour or so to set. Toast the coconut in a small skillet over medium heat. Immediately spread it out onto a plate and refrigerate until needed. When pies are firm, spread half the remaining tub of Cool Whip over top of each pie. Sprinkle each with toasted coconut. • Mix 1 cup sugar, butter & 2 eggs. Add bananas, salt, the soda dissolved in sour cream, vanilla & 2 cups flour. Mix well and add nuts. Divide 1/2 of this mixture into 2 greased & floured loaf pans. Combine cream cheese mixture ingredients and spread over mixture in pans. Spread remaining banana bread batter on top. Note: I like to sprinkle a few extra nuts on top or sprinkle top with 1 tablespoon sugar mixed with 1/2 tablespoon cinnamon before baking. Makes a nice crunchy top. But that's totally optional. Bake at 350 degrees fahrenheit for 1 hour. Test for doneness. Cool and slice. Makes a lovely presentation.
