EASY MANDARIN ALMOND SALAD

Of all the salads listed by the same name, none are as simple as the recipe I always use. (Remember, I'm a lazy cook!!)

Easy Mandarin Almond Salad image

Steps:

  • For dressing: mix oil, vinegar and sugar in a small bowl. Set aside.
  • Tear lettuce into serving bowl. Add mandarin slices and almonds.
  • Mix in dressing, adding only as much as desired.
  • Serve. Garnish with green onion if desired.
  • *Note: You can toast almonds in a frying pan until brown, stirring regularly -- especially when they start getting dark. I also usually add a generous sprinkling of sugar to candy the almonds. The almonds will be soft when you take them off the element, but once they cool, they'll become crispy. You'll also have fun cleaning the pan!

Mandarin Almond Salad image

Steps:

  • In a large bowl, combine the romaine lettuce, oranges and green onions.
  • Heat 2 tablespoons sugar with the almonds in saucepan over medium heat. Cook and stir while sugar starts to melt and coat almonds. Stir constantly until almonds are light brown. Turn onto a plate, and cool for 10 minutes.
  • Combine red wine vinegar, olive oil, one tablespoon sugar, red pepper flakes and black pepper in a jar with a tight fitting lid. Shake vigorously until sugar is dissolved.
  • Before serving, toss lettuce with salad dressing until coated. Transfer to a decorative serving bowl, and sprinkle with sugared almonds.

  • 1. In a Large bowl, add lettuce first, sprinkle green onions on top, slivered almonds, and drained mandarin oranges, cover with plastic wrap.
  • 2. Minutes before serving the salad, shake refrigerated salad dressing well (the color will be pinkish or light red) Pour over salad, toss evenly with tongs.. Serve! Enjoy!
  • 3. HINT: The colder the salad dressing and mandarin oranges, the better tasting the salad is! I usually make the salad dressing in the morning, then refrigerate it. I put the mandarin oranges in the can right in the refrigerator over night! People beg me for this simple recipe all the time and they ask me to bring this salad to potlucks constantly..
  • 4. HOPE YOU LIKE THIS RECIPE AS MUCH AS MY FAMILY & FRIENDS DO!

1/4 c almonds, slivered
1 pkg roamine lettuce
1/4 large iceburg lettuce, chopped
2 large green onios, thinly sliced
1 can(s) canned mandarin segments, drained (make sure they are sweetened, the unsweetened are too bitter!)
SWEET-SOUR DRESSING
1/4 c vegetable oil
2 Tbsp sugar
2 Tbsp vinegar
1/2 tsp salt
1 dash(es) pepper
1 dash(es) red pepper sauce (hot sauce)
SHAKE ALL SALAD DRESSING INGREDIENTS IN TIGHTLY COVERED CONTAINER; REFRIGERATE

  • In a small skillet, melt 3 tablespoons sugar over low heat. Add almonds; stir until coated. Cool; break into small pieces and set aside. Steps:

  • In a large bowl, combine the Romaine, drained oranges, and chopped onions.
  • Heat sugar and almonds in a pan over medium heat until sugar melts and coats almonds; stir and heat until almonds are slightly brown.

Steps:

  • In a medium skillet over medium-high heat, cook bacon until evenly browned. Drain, cool and crumble.
  • To make the dressing, thoroughly blend the vinegar, honey,dry mustard, celery salt, paprika, and olive oil.

Steps:

  • Shake first 6 dressing ingredients in a jar and refrigerate.
  • Stir almonds and sugar in a small pan over medium heat until sugar melts and starts to caramelize and almonds are very lightly toasted.
  • Scrape into metal bowl and cool to room temperature.
  • Break up and store covered at room temperature.
  • Just before serving, put chopped lettuces in a large bowl.
  • Add celery, oranges, onions and almonds.
  • Shake dressing well and pour over salad.
