TOMATO MOZZARELLA PAN BAGNAT

- For the vinaigrette, whisk the shallots, garlic, red wine vinegar, balsamic vinegar, mustard, 2 teaspoons salt, and 1 teaspoon pepper together in a small bowl. Slowly whisk in the olive oil, stir in the anchovies (if using), capers, and olives, and set aside.
- Core the tomatoes and slice them 1/3 inch thick. Place the bottom halves of the ciabattas, cut side up, on a sheet pan. Place a layer of tomato on each bread, spoon on 2/3 of the vinaigrette, add a layer of mozzarella, and sprinkle with the basil leaves. Spoon the remaining vinaigrette on the cut sides of the ciabatta tops and place them, cut side down, on the sandwiches. Place a second sheet pan on the sandwiches and put weights on top, such as cans of tomatoes. Allow the sandwiches to sit at room temperature for an hour for the flavors to blend.
- Heat an electric panini press and toast the sandwiches for 5 to 10 minutes, until the bread is toasted and the mozzarella starts to melt. Cut each sandwich in half and serve warm.
ROASTED SHRIMP COCKTAIL LOUIS

- Preheat the oven to 400 degrees F.
- Dry the shrimp well with paper towels. Place them on a sheet pan with 1 tablespoon olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper, toss well, and spread them out in one layer. Roast for 10 minutes, until firm and just cooked through. Set aside to cool.
- Meanwhile, in a medium bowl, whisk together the mayonnaise, chili sauce, lemon zest, lemon juice, horseradish, Sriracha, Worcestershire sauce, 1 teaspoon salt, and 1/2 teaspoon pepper. Stir in the scallions and capers. Arrange the shrimp on a platter with the sauce in the middle for dipping. Offer a separate bowl for the discarded shrimp tails.

- Preheat the oven to 350 degrees F.
- Place the chicken breasts on a sheet pan skin side up.
- Rub the chicken with olive oil and sprinkle with salt and pepper.
- Roast for 35 to 40 minutes, until cooked through.
- Cool slightly, discard the skin and bones, and slice the meat thickly.
- Set aside.
- Meanwhile, place the pancetta on another sheet pan in a single layer.
- Roast for 10 to 15 minutes, until crisp.
- Set aside to drain on paper towels.
- Place the garlic and parsley in the bowl of a food processor fitted with a steel blade and process until minced.
- Add the anchovy paste, mustard, lemon juice, and mayonnaise and process again to make a smooth dressing. (Refrigerate the Caesar dressing if not using it immediately.).
- Slice the ciabatta in half horizontally and separate the top from the bottom.
- Toast the bread in the oven, cut side up, for 5 to 7 minutes; cool slightly.
- Spread the cut sides of each piece with the Caesar dressing.
- Place half the arugula on the bottom piece of bread and then layer in order: the sun-dried tomatoes, shaved Parmesan, crispy pancetta, and sliced chicken.
- Sprinkle with salt and pepper and finish with another layer of arugula.
- Place the top slice of ciabatta on top and cut in thirds crosswise.
- Serve at room temperature.

CAESAR SALAD WITH PANCETTA
Steps:
- Preheat the oven to 400 degrees F.
- Cut the pancetta into 1/2-inch cubes and cook it in a skillet over medium-low heat for 10 to 15 minutes, until browned and crisp. Remove to paper towels and drain.
- Place the tomatoes on a baking sheet and coat with olive oil. Sprinkle with salt and pepper. Roast for 15 to 20 minutes, until soft.
- Wash the lettuce leaves carefully and spin-dry in a salad spinner. Stack the leaves on a cutting board and cut them crosswise into 1 1/2-inch slices. Place them in a large mixing bowl.
- For the dressing, place the egg yolks, mustard, garlic, anchovies, lemon juice, salt, and pepper into the bowl of a food processor fitted with a steel blade. Process until smooth. With the food processor running, slowly pour the olive oil through the feed tube (as though you were making mayonnaise), until thick. Add the grated Parmesan cheese and pulse 3 times.
- Toss the lettuce with enough dressing to moisten well. Add 1 cup grated Parmesan and toss. Divide the lettuce among 6 or 8 plates and sprinkle with the pancetta roasted tomatoes. Serve at room temperature.
- All these ingredients can be made in advance. Be sure they're room temperature when you assemble the salad.
- If you're nervous about raw egg yolks, substitue 2 tablespoons of real mayonnaise.
- Pancetta is Italian bacon. You can find it in your Italian grocery or a specialty food store. Insist that it's vut 1/2-inch thick.
ST. LOUIS' AMIGHETTI SANDWICH (COPYCAT)
Amighetti's is a well known Italian restaurant in St. Louis, where I grew up. They have a great deli sandwich that I still crave to this day (even out here in CA). It has a really delicious spread that makes it different from other sandwiches. The true key is their famous bread, but in a pinch, you can make this sandwich at home with your own bread.

- Combine mayonnaise, sour cream, mustard, green onion, horseradish and dill. Slice baquette in half horizontally. Spread the cut surfaces with mixture.
- On bottom half of baguette, arrange in order: ham, roast beef, salami, dill pickle slices, tomato slices, Swiss cheese and pepperoncini.
- Place top half of baguette on filling. Cut sandwiches into pieces.

- In a large bowl, whisk together the mayonnaise, mustard, vinegar, salt, pepper and dill.
- Combine with the shrimp.
- Add the red onion and celery and check the seasonings.
- Serve or cover and refrigerate for a few hours.
- Note: If using a food processor to mince the onion and celery, make sure you drain them in a colander before adding them to the salad.

The Barefoot Contessa is one of my favorite cooks.This morning's show she made these sandwiches and they looked so good I'm going to make them. The changes I will make is using Romaine lettuce instead of the arugula, I don't care for it. Also I would omit the pancetta,I think I'd prefer not to use pork.
