ITALIAN WEDDING SOUP
Ina Garten uses chicken meatballs and vegetables in her version of classic Italian Wedding Soup, from Barefoot Contessa on Food Network.

- Preheat the oven to 350 degrees F.
- For the meatballs, place the ground chicken, sausage, bread crumbs, garlic, parsley, Pecorino, Parmesan, milk, egg, 1 teaspoon salt, and 1/2 teaspoon pepper in a bowl and combine gently with a fork. With a teaspoon, drop 1 to 1 1/4-inch meatballs onto a sheet pan lined with parchment paper. (You should have about 40 meatballs. They don't have to be perfectly round.) Bake for 30 minutes, until cooked through and lightly browned. Set aside.
- In the meantime, for the soup, heat the olive oil over medium-low heat in a large heavy-bottomed soup pot. Add the onion, carrots, and celery and saute until softened, 5 to 6 minutes, stirring occasionally. Add the chicken stock and wine and bring to a boil. Add the pasta to the simmering broth and cook for 6 to 8 minutes, until the pasta is tender. Add the fresh dill and then the meatballs to the soup and simmer for 1 minute. Taste for salt and pepper. Stir in the fresh spinach and cook for 1 minute, until the spinach is just wilted. Ladle into soup bowls and sprinkle each serving with extra grated Parmesan.

- To make the meatballs: Stir the first 6 ingredients in a large bowl to blend. Stir in the cheese, beef and pork. Using 1 1/2 teaspoons for each, shape the meat mixture into 1-inch-diameter meatballs. Place on a baking sheet.
- To make the soup: Bring the broth to a boil in a large pot over medium-high heat. Add the meatballs and curly endive and simmer until the meatballs are cooked through and the curly endive is tender, about 8 minutes. Whisk the eggs and cheese in a medium bowl to blend. Stir the soup in a circular motion. Gradually drizzle the egg mixture into the moving broth, stirring gently with a fork to form thin stands of egg, about 1 minute. Season the soup to taste with salt and pepper.
- Ladle the soup into bowls and serve. Finish soup with parmesan cheese if desired.

EASY ITALIAN WEDDING SOUP
I used to make my own meatballs for this soup and buy regular spinach and tear off the leaves until I made it this way which is so good. My family requests this soup all the time in the winter, it is a comfort food to them.

- I like to cook the orzo separately and then add it to the soup at the end.
- Put the rest of the ingredients in a large stock pot and bring to a boil and then simmer for at least an hour.

- In a large bowl, combine the first 7 ingredients. Crumble beef and sausage over mixture and mix lightly but thoroughly. BAREFOOT CONTESSA BROWNIE PUDDING
This is so incredibly rich and decadent. From the Barefoot Contessa's cookbook "Back to Basics," I am posting it here so I don't lose it. The inside will appear VERY underbaked - it is supposed to be that way, so don't keep on baking it! The number of servings are as noted in the cookbook, though I think it could serve far more.

Steps:
- Preheat oven to 325 degrees.
- Melt butter and set aside to cool.
- Beat eggs and sugar together on medium speed until very light yellow and thick, about 5 minutes.
- Sift cocoa powder and flour together, and add to sugar and egg mixture on low speed just until mixed.
- Slowly pour in melted butter and mix again just until combined.
- Grease a 9x12x2 baking dish (I used an 8x11), and spread mixture into the pan.
- Place dish into a larger baking pan.
- Add enough very hot tap water to larger pan to come halfway up the side of the smaller pan.
- Bake for exactly 1 hour.
- A cake tester inserted 2 inches from the side will come out 3/4 clean.
- The center will appear very underbaked, IT SHOULD. The texture of this is between a brownie and pudding.
- Cool, serve slightly warm or room temperature, with vanilla ice cream if desired.

This is the original out of her Back to Basics Cookbook. There are other versions out there with the ingredients adjusted and redone but this one is the real deal. The difference is that the meatballs are made with ground chicken and chicken sausage not beef or pork. A welcome change from the normal wedding soup. Ina Garten aka the Barefoot Contessa makes this traditional soup in a different yet wonderfully flavorful way. The directions look to be many but they are spread out to make it easier to make. ITALIAN WEDDING SOUP (MINESTRA MARITATA)
"Minestra Maritata" translates to married soup. The ingredients blend or "marry" well together, hence the name Minestra Maritata. I'm sure that someone not knowledgeable with the Italian language translated it to "Italian Wedding Soup." It is not a soup Italians serve at weddings. In this recipe, the escarole is cooked separately to remove some of the bitterness and to keep the soup from turning green.

Steps:
- Place first 6 ingredients in a large pot. Bring to a boil., then immediately reduce to a simmer and cook until the chicken easily falls off the bones. Remove chicken from the broth and allow to cool. Reserve the broth. When the chicken has cooled enough to handle, remove all of the meat from the bones and chop meat into small pieces.
- While the soup is cooking, make the meatballs. Mix together the ground beef, bread crumbs, egg, 1/2 teaspoon salt, 1/4 teaspoon black pepper and chopped parsley. Form into small meatballs and place on a baking pan. Bake in a 350 degree oven until fully cooked, approximately 15 minutes.
- Strain the broth used to cook the chicken. Add the remaining onion, celery, and carrots. Bring to a boil, reduce to a simmer and cook until vegetables are tender.
- Cook the escarole in a separate small pot of boiling salted water until wilted, about 10 minutes. Drain, squeeze dry and add to the broth. Add the cooked chicken, meatballs and cooked, drained pasta. Season to taste with salt and pepper. Heat well and serve accompanied by Parmesan cheese.
