CHEF JOHN'S GRILLED GARLIC AND HERB SHRIMP
This grilled garlic and herb shrimp recipe is very easy, IF you can just walk out into the backyard, and pick a handful of your own fresh, green sprigs. However, these are so amazingly delicious, if you don't have a garden, then do splurge and buy a bunch of all the herbs. And get the extra large shrimp so they can grill longer and get maximum caramelization.

Steps:
- Place salt, lemon zest, and 3 cloves garlic in bowl of a mortar and pestle. Pound with the pestle until mixture begins to form a paste, about 2 minutes. Add chopped basil, parsley, oregano, and thyme and pound with pestle until mixture begin to come together, about 5 minutes.
- Drizzle about 1 tablespoon of the olive oil into herb mixture. Grind together until mixture begins to form a sauce for marinating, about 1 minute. Pour in the remaining 3 tablespoons olive oil. Stir mixture with a spoon until mixture is thoroughly combined, adding additional olive oil as needed. Mixture should be fairly thick but pourable.
- Place shrimp in a large bowl and mix in about 2/3 of the sauce, reserving 1/3 for serving. Stir until shrimp are evenly coated with the sauce, about 2 minutes. Transfer shrimp to a resealable plastic bag. Refrigerate 2 to 3 hours. Cover and refrigerate remaining sauce.
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Thread shrimp onto skewers (pierce each twice, once through large part of shrimp, once through small part). Place skewers on hot grill. Cook on each side until shrimp are bright pink and opaque and exterior is beginning to caramelize, 2 to 3 minutes per side. Transfer skewers to serving platter.
- Pour remaining sauce into mixing bowl. Whisk in 1 tablespoon olive oil, lemon juice, red pepper flakes, cayenne pepper, salt and black pepper. Spoon sauce over shrimp. Serve with lemon wedges.

MY MOST COVETED SECRET: HERB-GARLIC BUTTER HAMBURGERS ON A GRILL
This recipe is, quite honestly, my most coveted of all! Once you taste these wonderful grilled burgers, all other burgers will take a back seat to these for the rest of your life! I made these for my son about a year ago, and he insists on nothing else from the grill. Just wait and see...

Steps:
- Place all the herbs, garlic, pepper, and butter in a small mixing bowl and beat with a wooden spoon until slightly fluffy.
- (you can do the mixing with a or food processor) Place a 12" square piece of plastic wrap or parchment paper on your work surface and mound the flavored butter in the center.
- Roll herb butter into cylinder shape within plastic, twisting the ends to compress the butter.
- Chill the butter in the refrigerator or freeze until firm.
- Butter will keep for up to 5 days in the refrigerator or up to 3 months in the freezer.
- Burger Preparation: Make hamburger patties as usual, but for each one place your thumb in the middle and press an indentation almost through (but not quite) to the other side of the meat.
- Unwrap formed butter and cut crosswise into 1/4-1/2" discs. (You will be using approximately 4 tablespoons Herb-Garlic Butter per 1 1/2 pound of ground meat).
- Form hamburger patty fully around one butter disc, pressing gently to seal the disc into the dead center of the meat.
- (not too much pressing! It will make your burgers dense and tough) Place burgers on hot grill (preheated to high if using a gas grill).
- Grill burgers until cooked to doneness, (about 5 to 7 minutes per side for medium-done).
- Place burgers on a serving plate, add cheese, if desired, but do not serve for about 5 minutes, to allow flavors to fully meld.
- Brush buns with melted butter and toast on the grill for a few seconds.
- Serve with any toppings of your choice.
WHOLE ROASTED FISH WITH HERBS
Steps:
- Preheat the oven to 400 degrees F.
- Make 3 diagonal slices about 1/2-inch deep on each side of the fish. Salt and olive oil the fish generously.
- Season the inside of the fish with salt and olive oil. Place 4 lemon slices, the bay leaves, a bundle of the mixed herbs and 2 of the garlic cloves inside the body cavity.
- Line a sheet tray with aluminum foil and arrange the remaining assorted herbs, lemon slices and garlic in the center of the tray and lay the fish on top.
- Fold the aluminum foil up around the sides of the fish to create a sort of baking dish. Add the white wine and place in the preheated oven and roast until the fish is just cooked through, about 30 to 35 minutes.
- Remove from oven, present and collect your kudos then fillet to serve.

Steps:
- Kebobs: Put the salmon, halibut and tuna in a resealable plastic bag. In a medium bowl whisk together the olive oil, lemon zest, lemon juice, garlic, parsley, thyme, salt, and pepper. Pour the oil mixture over the fish and seal the bag. Refrigerate for 30 minutes. Thread each skewer with 2 pieces of salmon, 2 pieces of halibut and 2 pieces of tuna, alternating the fish on the skewers.
- Butter: In a small bowl, mix together the butter, garlic and parsley. Season with salt and pepper, to taste. Transfer the butter to the center of a 6-inch-square piece of plastic wrap. Fold the plastic over the butter and form it into a log, about 4-inches long and 1 1/2 inches in diameter. Refrigerate until firm, about for 1 hour. Slice the butter into 1/4 to 1/2-inch thick slices and transfer them to a plate.
- Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Season the fish with salt and pepper, to taste, and grill the skewers until opaque, about 3 to 4 minutes on each side. Arrange the skewers on a platter and serve the butter alongside.
HERB & GARLIC FISH
I love this recipe because it is so fast and easy. It tastes wonderful. I found this on an ad for Miracle Whip. This recipe works best with white fish. I tried this on salmon, it was not as good. Salmon was thicker and took much longer to cook. I had to wrap it in foil and bake to finish.

BBQ HERB & GARLIC FISH
This recipe is an oldie from Miracle Whip and it is very good! I used Newzealand Blue Hoki Fillets but you can use red or white fish. You may also try 1/4 cup lowfat yogurt with only a 1/4 cup Miricle whip. This is quick and easy.

- Spiced Salmon Kebabs. These simple salmon kebabs are made even easier when you thread the salmon onto two skewers. This helps keep the flaky fish in place as you turn the skewers on the grill.
- Grilled Red Mullet with Charred Onions and Pine Nuts. The real star of this dish is the agrodolce, the sweet-and-sour condiment made from capers, pine nuts, raisins, and red wine vinegar.
- Fish Tacos al Pastor. Inspired by the classic pork al pastor marinade, the most involved part of this grilled halibut recipe can be prepped ahead of time.
- Grilled Swordfish with Tomatoes and Oregano. This grilled swordfish recipe instructs you to grill the swordfish steaks first, and then marinate them in a dressing of red wine vinegar, oregano, and capers.
- Grilled Spiced Snapper With Mango and Red Onion Salad. Grilling a whole fish might feel daunting to some home cooks, but you can do it! This recipe walks you step-by-step through turning the fish on the grill grate (hint: using two spatulas is key).
- Grilled Flatfish With Pistachio-Herb Sauce. To grill flatfish, cut it into wide chunks but leave the skin and bones intact. The bones help keep the fish together on the grill, and the skin gets crispy while the fish inside stays perfectly tender.
- Crispy-Skinned Salmon with Whole Lemon–Sesame Sauce. Adding an entire lemon (yes, the whole thing—skin, pith, and flesh) gives brightness and texture to this sauce, far beyond what lemon juice alone would do.
- Grilled Halibut With Tomatoes and Hearts of Palm. Few things could be simpler—or more rewarding—than easy grilled fish recipes like this one. For meaty steaks of swordfish, albacore, and halibut, all you need is a kiss of high heat from a grill and a simple vinaigrette.
- Grilled Salmon Steaks with Cilantro-Garlic Yogurt Sauce. Pro tip: You'll want to drizzle this sauce over everything, so make a big batch to carry you through the week.
- Sweet and Salty Fish Collars. The collar, the part between the head and the body, can be one of the most delicious parts of a fish. Try this sweet and salty sauce with the collar of grilled cod, or another white fish like tilapia, sole, snapper, or even catfish.
