LUMPIA ROLLS

This is a recipe that my mom brought back from a military stint in Japan. She has made it for family reunions, and it is always the first thing to go! These can also be prepared ahead and frozen, then deep fried just before you plan to serve!

Steps:

  • Brown beef and pork in a large frying pan with a small amount of oil over medium heat. Drain, place in a large mixing bowl, and set aside. In the same pan, cook the carrots with a splash of soy sauce until tender. Add the bean sprouts, snap peas, mushrooms, and green onions, and a dash each of soy sauce, salt, garlic powder, and black pepper. Cook and stir for 5 minutes, or until vegetables are tender but still firm. Add to beef and pork, and toss to combine.
  • Work with 5, or so, spring roll wrappers at one time, leaving the others covered with a damp cloth to prevent them from drying out. Lay the wrappers so that one corner is facing you. Place a small amount of filling mixture on the corner closest to you, and fold over. Fold the two outside corners inward, then continue rolling up as you would a burrito, leaving the top corner exposed. Brush a small amount of egg white on the top corner, finish rolling, and seal. Repeat with remaining filling and wrappers.
  • Heat vegetable oil in deep-fryer or deep skillet to 375 degrees F (190 degrees C). Fry rolls for about 5 minutes, or until golden brown, then drain on paper towels.

vegetable oil
1 ½ cups carrots, finely chopped
soy sauce to taste
3 cups bean sprouts
1 cup sugar snap peas, chopped
1 cup fresh mushrooms, finely chopped
1 cup green onions, finely chopped
salt to taste
garlic powder to taste
black pepper to taste
1 (14 ounce) package Lumpia Wrappers
1 egg white, beaten
canola oil for frying

BEAN SPROUT LUMPIA

This recipe is enjoyed by many of the south pacific islands including Hawaii. I originally got this from a lady from the Philippines, her DH was going to graduate school with my DH. My children love this, they call them "egg rolls". Sometimes I add carrots, or some other sauces. added on 11/17- the serving size is for 2 lumpias each. One package of eggroll wrappers(20) should be about right for the amount of ingredients listed.

Steps:

  • Combine all ingredients except egg roll wrappers and cook until warmed through in a saucepan.
  • Wrap 1-2 T of mixture in each egg roll wrapper, sealing edges with water.
  • I put oil about 1" deep in fry pan.
  • Fry in oil in frying pan until egg rolls are golden and crispy.
  • I fry first half until brown then turn over and brown other side.

  • Heat the oil in medium using a wok or large frying pan. When the oil is already hot, saute the garlic and onions until aromatic, about 1 minute.
  • Add the carrots, green beans and cabbage and stir-fry for about 3 minutes. Add the bean sprouts and jicama and pour in the soy sauce and oyster sauce. Season with a little pepper. Mix everything and cook for another 1-2 minutes until all the vegetables are tender but still retain some crunch. Adjust seasoning, if needed, by adding more salt, soy sauce, etc. to taste.
  • Remove from the heat and place in a strainer or colander to drain all the liquid remaining. Allow to cool completely.
  • To make the spring rolls, place about 2 tablespoon of the filling in one of the corners of the wrapper. Roll the corner with the filling (spreading it a little) towards the middle. Fold the sides inward to seal, then continue to roll until you have about an 2 inches left of the wrapper. Using your finger, brush the edges with a little water then seal completely. Make sure it is tightly secured. Place the finished roll on a platter with the sealed side downwards. Repeat until all the filling is gone. For this recipe, I doubled the wrapping as this Lumpia is bigger than the Lumpiang Shanghai (meaty spring rolls).

  • Saute garlic and onion over medium heat until translucent. Add the prawns and cook until it turns pink.
  • Add the green beans and carrots and cook for 3-4 minutes then add the mung bean sprouts and season with fish sauce and pepper then cook for another minute.
  • On a clean surface, lay a spring roll wrapper diagonally. Scoop about 2 spoonfuls of the vegetable mix and place it the corner of the wrapper nearest you. Spread the filling sideways (about 3 inches long), leaving some space at both ends. Roll the wrapper from the end nearest you over the filling then fold in the left and right sides of the wrapper towards the center, then keep on rolling towards the other end as neatly and tightly as possible. Moisten the other side of the wrapper with cornstarch mixture to keep it from opening while frying. Repeat with remaining wrappers.
