CAULIFLOWER PARMIGIANA WITH GRUYERE SAUCE

I took a favorite recipe from Allrecipes (cauliflower alla parmigiana) and tweaked it to create this recipe.

Cauliflower Parmigiana with Gruyere Sauce image

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease an 8x10-inch oval casserole dish.
  • Bring a large pot of salted water to a boil. Add cauliflower florets and boil for 3 minutes. Drain.
  • Cut the florets into slices and arrange in the baking dish. Scatter red bell pepper pieces on top.
  • Melt butter in a large saucepan. Add flour and whisk to create a paste. Pour in half-and-half, stirring to incorporate. Add 3/4 cup Gruyère cheese and truffle salt. Pour cheese sauce over the cauliflower. Sprinkle remaining cheese and panko on top.
  • Bake in the preheated oven until top is lightly browned, about 25 minutes.

Gruyere Cheese Sauce image

Steps:

  • Melt butter in small saucepan over medium-low heat.
  • Add flour; stir 2 minutes (do not brown).
  • Gradually whisk in 1 1/2 cups milk.
  • Increase heat to high; bring to boil, then reduce heat to medium and simmer until mixture is thickened, stirring constantly, about 4 minutes.
  • Remove from heat.
  • Add cheese, stir until melted.
  • Season with salt and pepper.
  • Do Ahead: This cheese sauce can be made 2 hours ahead.
  • Let stand at room temperature.
  • Rewarm before using, adding more milk if sauce is too thick.

Steps:

  • In the medium pot, bring the cream to a gentle simmer over medium heat. Whisk in the mustard. Stir in the Gruyère, Parmesan and garlic and cook until the cheeses are melted and combined and the sauce has a smooth consistency, 3 to 4 minutes. Season with salt and pepper. Serve warm.

Gruyère Fondue image

Steps:

  • In a medium bowl, combine cream, flour, and Worcestershire sauce, and set aside.
  • In a large heavy saucepan, sauté onion in butter with bouillon cubes over high heat, stirring until cubes are completely dissolved.
  • Reduce heat to medium. Add cream mixture, whisking constantly until thickened.
  • Gradually add cheeses, and stir until melted and smooth. Mixture will become very thick.
  • Add wine a little at a time and mix well. Wine tends to thin out mixture, so add as much as needed to reach desired consistency and flavor.
  • Transfer the fondue to a heated fondue pot and keep warm over low heat.
  • Accompaniments:
  • Lightly toasted French bread cubes
  • Fresh cooked shrimp
  • Steamed broccoli

Steps:

  • Melt butter in a medium saucepan over medium heat until foamy. Add flour and cook, stirring frequently, until mixture is pale golden and has a slightly nutty aroma, about 5 minutes. Stir in Dijon.
  • Whisking constantly, pour in 2 cups milk and whisk until smooth. Cook over medium-high, whisking often along the bottom of pan, until boiling, about 7 minutes.
  • Reduce heat to maintain a simmer. Add nutmeg and cook, stirring occasionally, until sauce thickens to the consistency of thin yogurt, about 10 minutes. Stir in Gruyere. Season with salt and pepper.

Gruyère and Parmesan Cheese Soufflé image

Steps:

  • Position rack in center of oven and preheat to 400°F. Generously butter one 10-cup soufflé dish or six 1 1/4-cup soufflé dishes; sprinkle with Parmesan cheese to coat. (If using 1 1/4-cup dishes, place all 6 on rimmed baking sheet.) Melt butter in heavy large saucepan over medium heat. Add flour, cayenne pepper and nutmeg. Cook without browning until mixture begins to bubble, whisking constantly, about 1 minute. Gradually whisk in milk, then wine. Cook until smooth, thick and beginning to boil, whisking constantly, about 2 minutes. Remove from heat. Mix yolks, salt and pepper in small bowl. Add yolk mixture all at once to sauce and whisk quickly to blend. Fold in 1 1/4 cups Gruyère cheese and 1/4 cup Parmesan cheese (cheeses do not need to melt). Using electric mixer, beat whites in large bowl until stiff but not dry. Fold 1/4 of whites into lukewarm soufflé base to lighten. Fold in remaining whites. Transfer soufflé mixture to prepared dish. Sprinkle with remaining 2 tablespoons Gruyère cheese.
  • Place soufflé in oven; reduce heat to 375°F. Bake soufflé until puffed, golden and gently set in center, about 40 minutes for large soufflé (or 25 minutes for small soufflés). Using oven mitts, transfer soufflé to platter and serve immediately.
