MEXICAN GROUND BEEF CASSEROLE

I created this Mexican ground beef casserole when I wanted something different that I could make ahead if I wanted to. Double the recipe for company!

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • While the beef is cooking, make stuffing. Bring water and butter to a boil in a medium saucepan. Stir in stuffing mix; cover. Remove from heat. Let stand for 5 minutes. Fluff with a fork.
  • Stir diced tomatoes, chili powder, cumin, and hot sauce into the beef mixture. Simmer for 2 minutes. Add corn and Cheddar cheese. Simmer until cheese is melted completely, about 1 minute. Transfer mixture to a casserole dish. Spread cornbread stuffing evenly over the top.
  • Bake in the preheated oven until browned, 20 to 30 minutes.

BEEF MEXICAN CASSEROLE (UM GALA)

I grew up with my mother cooking this and loved it everytime. She got it from my aunt. And I'm not sure why it's called "Um Gala" but I think it's because someone after taking a bite, said, "Ummmm good or maybe ummm golly this is good!" This was one of my mom's favorites to take to pot lucks and she made it for me when I would visit from college. I made it last night and my 8 year old daughter loved it and my DH couldn't stop talking about it. (If you want more meat add more meat. And if 1/2 cup of Ro-Tel tomatoes makes it too spicy (like for kids) then substitute some of it with regular canned diced tomatoes. Or if you like it really spicy add more. Also, to save time, use bagged tortilla chips.)

Beef Mexican Casserole (Um Gala) image

Steps:

  • Saute hamburger meat, onion and green pepper. (It's better to start the onion and green pepper in a little oil before adding the meat).
  • Drain if there is excessive grease.
  • Mix the soups, garlic salt, tomatoes and Cheez Whiz and heat in a separate pan until cheese is melted and mixture is well mixed.
  • Cut the tortillas into fourths. (My mother would fry them in some oil first but this is not necessary - just tastes better).
  • Layer ingredients alternately in a greased casserole dish in this order: tortilla chips, meat mixture and soup mixture. End with the soup mixture last. You should have about 2 layers.
  • Bake at 325 degrees in pre-heated oven for 30 minutes.

  • 1. Preheat the oven to 350°F. Spray a 9 by 13-inch baking dish with cooking spray.
  • 2. In a large skillet, heat the oil over medium-high heat. Add the turkey and cook until browned, 5 to 7 minutes. Stir in the onions and zucchini and cook until tender, about 5 minutes. Stir in the taco seasoning, 2/3 cup water, and the corn. Simmer until thickened, about 2 minutes, then stir in the black beans.
  • 3. Spread 1/2 cup of the salsa in the bottom of the baking dish. Lay 4 tortillas over the salsa, and spoon half of the meat mixture on top. Cover with 3/4 cup of the salsa and 1 cup of the shredded cheese. Top with 4 more tortillas and the remaining 3/4 cup salsa. Scatter the remaining 1/2 cup shredded cheese over the top.

Brown rice usually takes about 45 minutes so I'm including that in the cooking time. *If you would like some heat or a chile flavor consider adding tabasco, jalapenos or diced mild green chilies. I just made this with salsa instead of tomatoes and added black pepper. I was very pleased with the results. A simple flavored hearty meal. I'm used to mexican dishes having cumin and it may work with this but I liked it being different and it may appeal to people who don't like cumin. I think black olives and bell pepper would be good in it too. Some people may also want to add layers of cheese but I was really surprised at how good it was without it. To cut down the fat more you could cook the onions with the ground beef and skip the butter.

  • Cook rice according to package directions, adding bouillon cube to cooking water.
  • When the rice is nearly done, saute onion in butter.
  • Crumble beef and add to onion with garlic, mustard, chili powder, salt and pepper. Cook until meat loses pinkness. Drain grease if needed.
  • Layer half the meat mixture in the bottom of a 2-quart casserole.
  • Spread cooked rice over meat.
  • Spoon tomatoes over rice.
  • Spoon beans with liquid over tomatoes.

Steps:

  • Preheat the oven to 375F.
  • Cook the ground beef in a large skillet until browned; drain off the excess fat.
  • Season the meat with the salt and pepper; set aside.
  • Mix together the cheese, sour cream, mayonnaise and onion; set this mixture aside.
  • Stir the biscuit mix and water together until a soft dough forms.
  • With floured fingers, pat the dough into the bottom of a greased 13 X 9 X 2-inch baking pan, pressing the dough about 1/2-inch up the sides of the pan.
