SLOW SIMMERED BEEF WITH POTATOES

- Drizzle the beef with 4 to 5 tablespoons of the EVOO and season with a little salt. Place the beef in large Dutch oven with the stock and enough water to just cover. Add the onion, bay leaves and 2 cloves of the garlic. Bring to a low boil and simmer, partially covered, for 2 hours. Stir together the tomato paste and 1/4 cup of the cooking liquid, then add to the pot. Add the pepper and wine and cover. Cook on the stovetop at a gentle simmer until very tender and falling apart, 2 1/2 to 3 hours (alternatively, transfer to the oven and roast at 325 degrees F). Cool and store. Reheat over medium heat or in a moderate oven.
- To serve, while the beef is reheating, boil the potatoes until tender and drain. Add the remaining 2 to 3 tablespoons of oil to a pot over medium heat. Add the remaining clove garlic, stir for minute, then remove the garlic. Add the potatoes and crisp a bit. Season with salt, pepper and the rosemary.

- Place meat in large bowl. Add dressing mix; toss to coat. Place potatoes in large microwavable bowl. Add enough water to completely cover potatoes; cover with waxed paper. Microwave on HIGH 10 min. or until potatoes are tender.
- Meanwhile, cook onions in hot oil in large nonstick skillet on medium-high heat 5 min., stirring frequently. Add meat; cook 5 min. or until meat is done, stirring frequently.
- Drain potatoes. Add to meat in skillet along with peas, carrots and water; stir gently. Cover; simmer on medium-low heat 5 min. or until water is absorbed and mixture is heated through.

- Cook meat, in batches, in uncovered pressure cooker sprayed with cooking spray on medium-high heat 3 min. or until evenly browned, stirring occasionally. Return all meat to pressure cooker.
- Blend next 5 ingredients in blender until smooth. Add to meat; mix lightly. Cook, uncovered, 3 min., stirring frequently. Add tomato sauce, water and barbecue sauce; stir. Cook 2 min. Stir in potatoes.
- Cover pressure cooker; lock lid in place. Cook on medium-high heat 3 min. or until pressure vent locks in place and regulator begins to rock gently. Reduce heat gradually to maintain slow steady rocking motion; cook 45 min. Remove from heat. Let stand 10 min. or until pressure vent drops. Remove regulator, then lid; stir in parsley.

- Place mushrooms and onion in a 3-qt. slow cooker. Sprinkle beef with salt and pepper. In a large skillet, heat 1 teaspoon oil over medium-high heat; brown meat in batches, adding additional oil as needed. - In a large skillet, heat oil over high heat.
- Saute the onion until translucent.
- Add stew meat and cook on high heat until meat is browned on all sides (3-5 minutes). Pour 2 cups water, soy sauce, and worcestershire sauce into the skillet.
- Stir in garlic powder, salt and pepper.
- Bring to boil and reduce heat.
- Cover and simmer for 1 1/2 to 2 hours.
- Then combine the gravy mix with 1 cup of water, mix thoroughly and stir into the meat. Bring to boil, stirring frequently until it slightly thickens.
- Serve over egg noodles.

- Melt butter in a skillet over medium heat, add onion, garlic and mushrooms. Saute for about 10 minutes. Remove from pan, set aside.
- Add beef stock, Worcestershire sauce, ketchup and kitchen bouquet to skillet. Stir to combine, gravy will thicken as it heats. Cover and simmer for 30 minutes or so. (note: the longer you simmer the more tender your meat will be.) Add mushrooms back in. Simmer for 10 minutes or so more. If you prefer a thicker gravy, add a little cornstarch/water mixture to thicken even more.
