STEAK WITH BEER SAUCE AND SWEET POTATOES

Steak with Beer Sauce and Sweet Potatoes image

Steps:

  • Preheat the oven to 450 degrees F. Toss the sweet potatoes, red onion, 1 tablespoon olive oil, 1/4 teaspoon salt and a few grinds of pepper on a rimmed baking sheet; arrange the onion cut-side down. Roast, flipping halfway through, until the sweet potatoes are tender and the onion is browned and crisp, 25 to 30 minutes.
  • Meanwhile, season the steaks with salt and pepper. Heat a large skillet over medium-high heat and add the remaining 2 tablespoons olive oil. Add the steaks and cook until browned, 3 to 4 minutes per side for medium rare. Transfer to a plate and tent with foil; let rest.
  • Remove the skillet from the heat and add the beer, scraping up any browned bits from the bottom of the pan. Stir in the mustard. Return the skillet to medium-low heat and simmer until the liquid is slightly syrupy, 1 to 2 minutes. Add the vinegar, honey and any collected juices from the steaks; season with 1/4 teaspoon salt. Remove from the heat and stir in the butter until melted.
  • Peel and slice the roasted onion. Top the steaks with the pan sauce. Serve with the roasted vegetables. Sprinkle with the parsley.

  • Combine the ingredients and pour over steaks.
  • Marinate for at least, 2 hours or overnight in refrigerator, turning steaks occasionally.
  • Remove the steaks from the marinade and reserve marinade.
  • BBQ your meat over a medium heat for desired time, basting occasionally with the reserved marinade until cooked to your liking. Serve immdeiately.

Steps:

  • In a wide, shallow glass baking dish, scatter half of the orange slices, half of the onion slices and half of the garlic pieces on the bottom of the dish. Sprinkle the steak all over with salt and pepper and put in the dish on top of the orange and onion slices. Scatter the remaining orange, onion and garlic over the steak and pour in the beer and soy sauce. Cover with plastic wrap and marinate for 1 hour at room temperature or up to overnight in the refrigerator.
  • Prepare a barbeque on medium-high heat or preheat a broiler. Remove the meat from the marinade and discard the marinade. Grill the steak to desired doneness, about 4 minutes per side for medium-rare. Serve as desired.

  • Cook the bacon in a large nonstick skillet over medium-high heat, stirring occasionally, until crisp, about 6 minutes. Add 1 tablespoon olive oil, then add the onion and cook until softened, about 3 minutes. Add the thyme sprigs, 1/2 teaspoon salt and a few grinds of pepper and cook until the onion is lightly browned, about 5 more minutes. Add the beer, reduce the heat to medium and simmer until reduced by three-quarters, about 15 minutes. Increase the heat to high, pour in the beef broth and simmer until thickened, about 2 more minutes; season with salt and pepper. Discard the thyme.

  • In a large heavy-bottomed stockpot, heat the peanut oil to 350 degrees. In a large bowl mix the sifted flour with salt and pepper. In another large bowl mix the eggs, beer, and buttermilk. Slice the steak into thin 1-inch pieces and then place them in the flour first, then the beer mixture and then back into the flour. Shake off any excess flour and then drop into the hot oil for 2 minutes. Remove from oil and allow to cool for about 30 seconds before attempting to eat. Serve with jalapeno remoulade.

  • Whisk first 7 ingredients in medium bowl, then whisk in beer. Pour marinade into large resealable plastic bag. Add steaks, seal bag, and chill 1 day, turning bag occasionally.

BEER MARINADE FOR STEAK

I found this on the internet and liked the look of this recipe but I made a few changes to suit my cooking style. It seems Boomette and I tried this around the same time. We at the Lorie-House had this on ribeyes and we agree with Boomette's family that the flavor is lightly sweet but does not make the beefy flavor too sweet. If you know ribeyes, they tend to have a looser texture than say, NY Strip. I did notice a little hint of beer in the looser parts of the steak more than the firmer parts. I think if you like teriyaki, you will enjoy this, and if you like beer, choose a ribeye and if you like beer less, keep with a firmer cut like strip steak. We enjoyed here at home, liked it a LOT but not sure if it qualifies as TDF. We would give this a 4 if we were reviewing this as someone else's recipe on Zaar (really 4.5 but I would round down).   • The night before, mix beer, Worcestershire, and Tabasco in large freezer-weight zipper-lock bag. Put steaks in bag, seal, and chill in refrigerator or cooler overnight.
  • The next morning, mix remaining ingredients in small bowl. Remove steaks from marinade and discard marinade. Pat steaks dry with paper towels, then scatter spice mix over steaks, patting it in with your fingers. Slip into clean zipper-lock bags, seal, and chill in cooler.
  • WHEN YOU GET THERE:
  • Remove steaks from cooler aboute 20 minutes before grilling. Heat grill to high and let rack get good and hot. Braised Round Steak With Beer image

Steps:

  • Cut round steak into serving size pieces.
  • Brown cut up round steak and then add add all other ingredients.
  • Simmer about 1 1/2 hours or until meat is tender. I sometimes add cut up potatoes in the last 45 minutes. You will have delicious gravy. If you want the gravy thicker use potato buds to thicken. It works great.

  • Preheat grill for high heat.
  • Use a fork to poke holes all over the surface of the steaks, and place steaks in a large baking dish. In a bowl, mix together beer, teriyaki sauce, and brown sugar.
