BELGIAN PLUM FLAN
This recipe has been posted for ZWT II & my source is www.recipes4us.co.uk/Desserts%20and%20Puddings/Belgian%20Plum%20Flan. This recipe wasn't very "Post Your Recipe" friendly as it expressed everything in both metric & US measurements, so I had to make a choice again (Time does not include cooling time)

Steps:
- Place water & caster sugar in a lrg saucepan. Bring to a boil, stirring. Then add plums & mix well.
- Reduce heat & cook for 5-10 min till plums are just tender, but still intact. Remove from heat & allow to cool.
- In a lrg mixing bowl, beat together the granulated sugar & egg yolks till pale & thick. Whisk in the flour till smooth.
- Gradually add boiling milk in a steady stream, whisking constantly.
- Transfer to a saucepan & slowly heat to near boiling point, stirring constantly. Cont to cook for a further 2 min, stirring all the time.
- Remove from the heat, beat in the butter & vanilla extract. Then stand the saucepan in cold water & cont to stir till cooled.
- Once cold, pour the creme into the pastry case. Then arrange the plums (cut sides down) in the filled case. The tops of the plums should stand above the crème. Set aside.
- In a small saucepan, melt jam w/the lemon juice over a low heat, mixing well.
- Brush the apricot mixture over the top of the plums to glaze them. Then refrigerate to get completely cold before serving.

Steps:
- Mix the flour, yeast, caster sugar and 1 tsp sea salt in a large bowl. Make a well in the centre and pour in the warm milk, beaten egg and melted butter. Mix well a soft dough forms. If it feels dry, add a bit of warm water, if it feels too sticky and wet, add 1 tbsp flour.
- Dust a work surface with flour and tip the mixture onto it. Knead the dough until it feels smooth and elastic. Shape into a ball and put in a large, lightly floured bowl. Cover and leave to rise in a warm place for 1 hr or until doubled in size. Or, leave to prove in the fridge overnight, removing 45 mins before continuing.
- Line a large baking tray with non-stick baking paper. Lightly dust a work surface and roll out the dough to 30 x 45cm. Evenly spread the lemon curd over the dough and sprinkle with the sultanas. Roll the dough up lengthways from the shortest side, like a Swiss roll, to form a log. Cut into 12 equal sized buns with a sharp knife, egg-washing the loose end of the pastry and pressing it down, so it doesn't unravel. Arrange, spread apart, on the prepared baking tray, cover, and leave to prove for 45 mins until doubled in size.
- Heat the oven to 200C/180C fan/gas 6. Brush the buns with a little egg wash. Bake for 10 mins, then reduce the temperature to 180C/160C fan/gas 4 and cook for a further 10 mins. Leave to cool.
- Meanwhile, sieve the icing sugar and mix with 3 tbsp water until a thick, white icing forms. Spread the icing on top of the buns with the back of a spoon, then put a cherry in the middle of each one.

THE ONE AND ONLY TRULY BELGIAN FRIES
There is no fancy skill involved in making these crispy fries, but there is a trick. The potatoes are fried twice. The first time cooks them through and makes them tender. The second time, which can be done hours later just before serving, turns them golden brown and deliciously crisp.

Steps:
- Pour enough oil into a deep fryer to reach at least halfway up the sides of the pan but not more than three-quarters of the way up. Heat the oil to 325°F.
- Cut the potatoes into sticks 1/2 inch wide and 2 1/2 to 3 inches long. Dry all the pieces thoroughly in a clean dish towel. This will keep th oil from splattering. Divide the potato sticks into batches of no more than 1 cup each. Do not fry more than one batch at a time.
- When the oil has reached the desired temperature, fry the potatoes for 4 to 5 minutes per batch. They should be lightly colored but not browned. If your fryer has a basket, simply lift it out the remove the fried potatoes. Otherwise, use a long-handled skimmer to lift out the potatoes. Be sure to bring the temperature of the oil back to 325°F in between batches. At this point the fries can rest for several hours at room temperature until you are almost ready to serve them.
- Heat the oil to 325°F. Fry the potatoes in 1-cup batches until they are nicely browned and crisp, 1 to 2 minutes. Drain on fresh paper towels or brown paper bags and place in a warmed serving bowl lined with more paper towels. Sprinkle with salt and serve. Never cover the potatoes to keep them hot as they will immediately turn soft and limp. If you are inclined to perfectionism, leave some potatoes to fry halfway through the meal so you can serve them crisp and piping hot.

- Carbonnade Flamande. Basically, your brain (and belly) will be blown away by this bountiful Belgian beef and beer stew. Carbonnade flamande is incredible, and if you’ve never had it, its rich, robust flavor and tender chunks of the roast will blow you away.
- Belgian Fries. If you’ve ever had Belgian fries, you’ve probably wondered how the chefs get them so insanely crispy. Their secret: They fry them twice.
- Moules Frites. Moules frites are like the Belgian version of fish ‘n chips; only the recipe calls for mussels instead of fish. The mussels have the perfect combination of umami flavor and a natural herby, earthy goodness.
- Chicken Waterzooi. This creamy, comforting soup is packed with veggies and thickened with butter, heavy cream, and cornstarch. It’s incredibly filling for such a simple dish, particularly if you pair it with a thick slice of dense, dark bread.
- Oliebollen. These may look like hush puppies covered in sugar, but they aren’t. They’re something much sweeter and, in my opinion, much more delicious!
- Boulets Liegeois. Boulets liegeois are thick, juicy, and tender meatballs. The savory apple and onion gravy makes them even better. Traditionally, you’ll serve these with crispy Belgian fries, but they’re so scrumptious, you can eat them by themselves and not feel like you’re missing anything.
- Curry Ketchup. Ketchup is a pretty commonplace condiment, but curry ketchup is a bit rarer. It has a unique flavor similar to ketchup, though not quite as sweet, and similar to curry powder, but with a little extra something.
- Belgian Endive and Apple Salad. You can whip up this crunchy, nutty, sweet, and tangy salad in 15 minutes with almost no trouble whatsoever. Not only is the salad tasty and full of great, contrasting textures, but it’s also lovely.
- Braised Rabbit with Prunes. Although rabbit isn’t hugely popular in the U.S., Belgian chefs frequently use it in their dishes. It tastes similar to chicken but has an earthier, more delicate flavor.
- Chicken and Mushroom Vol au Vent. These tasty, tiny morsels are one of my favorites from this list of recipes. The base is a neatly layered stack of puff pastry dough, and each layer is light, crispy, and perfect.
