FRESH HOMEMADE SALSA

Another salsa recipe called for a fresh jalapeno (I think), but I had green chiles in a can on hand. This salsa tastes great, so I'm sticking with it!

Fresh Homemade Salsa image

Steps:

  • Combine tomatoes, red onion, yellow onion, green chilies, lime juice, cilantro, garlic, cumin, and salt in a food processor. Pulse processor until mixture is combined, yet remains chunky. Transfer to a bowl, cover with plastic wrap, and refrigerate at least 1 hour.

2 cups chopped tomatoes
¼ cup chopped red onion
¼ cup chopped yellow onion
2 tablespoons canned green chilies
2 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro
2 cloves garlic, peeled

¼ teaspoon salt

The key is to char the ingredients under the broiler for a roasty flavor, then blitz it in batches for a texture that's right in between smooth and chunky.

The Only Salsa You Need image

Steps:

  • Heat broiler. Place tomatoes cut side down on a foil-lined rimmed baking sheet. Fit onion, chiles, and garlic around tomatoes so everything is snug but not overlapping. Broil, turning onion and chiles once, until lightly charred, about 6 minutes for chiles and garlic and 15-18 minutes for tomatoes and onion.
  • Peel garlic and place in a food processor along with half of the tomatoes. Pulse until very smooth. Add remaining tomatoes and pulse until tomatoes are mostly broken up but mixture still has some texture. Transfer to a medium bowl. Finely chop onion and chiles and mix into purée; season with salt. Let cool. Stir in lime juice and cilantro. Season salsa with more salt if needed. Serve with chips.

1 medium white onion, sliced into 1/4"-thick rounds
3 serrano chiles
3 garlic cloves, unpeeled

FRESH SALSA

I hate store bought salsas, and find this is fresher and better tasting. I use jarred jalapenos if I can't find fresh, but have used other hot peppers too. You can adjust the spiciness/sweetness to your liking. This is best in the summer when tomatoes are at their peak, but I find even in winter it is delicious; a nice way to get some fresh veggies in when there isn't much to pick from. I also use it in my black bean soup.

  • To seed tomatoes, cut in half and squeeze out seeds. This will make the salsa less watery.
  • Mix ingredients.
